1-1/2 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 egg
1/2 cup fat-free milk
1/4 cup canola oil
1 cup chopped peeled tart apple
1/4 cup raisins
CRUMB TOPPING:
2 tablespoons all-purpose flour
2 tablespoons quick-cooking oats
2 tablespoons brown sugar
1 teaspoon ground cinnamon
1 tablespoon cold butter

Steps:

  • In a bowl, combine the flour, sugar, baking powder, cinnamon and salt. Combine the egg, milk and oil; stir into dry ingredients just until moistened. Fold in the apple and raisins. , Coat muffin cups with cooking spray or use paper liners; fill two-thirds full with batter. For topping, in a bowl, combine the flour, oats, brown sugar and cinnamon; cut in butter until crumbly. Sprinkle over batter. Bake at 375° for 15-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

1 cup raisins
1 chopped apple
1/2 cup oil

1 teaspoon nutmeg
2 teaspoons cinnamon

Steps:

  • Beat egg; stir in remaining ingredients, mixing just to moisten.

1 cup white whole wheat flour
2 1/2 cups wheat bran

Steps:

  • In food processor: dump the first five ingredients and blend until the ingredients are 'liquified'.
  • Add the salt and baking powder and pulse to mix.
  • Add the cinnamon, flour, wheat germ and raisins and pulse just until mixed.
  • Spray an ice cream scoop with non-stick spray and use that to form the muffins.
  • Bake 350 for about 23 minutes if you make 16 muffins, longer if you make 12 larger muffins.
  • These freeze well.

1/2 cup brown sugar
1/2 cup sunflower oil

1 cup self raising flour
1 teaspoon baking powder

1 dash cinnamon (can be increased if you like)

Steps:

  • Preheat oven 200°C and line muffin pan with paper cases or grease them.
  • Combine apples, sugar, oil, eggs, vanilla and orange peel, mix well.

  • Combine flours, baking powder, baking soda and spice.

Spoon into greased muffin tins up to the lip of the tin. Bake 15-30 minutes, depending on altitude (the higher the altitude, the longer you'll need to cook them). To keep the ultimate amount of moisture while storing, place the muffins into a ziplock bag immediately after removing them from the oven (while still piping hot). Note: If you don't have flax seed, add another egg and don't add the 3 tablespoons of water. Note: The brown sugar can be substituted with the same amount of maple syrup.

In a large bowl with an electric mixer beat together the egg and the brown sugar until the mixture is thick and pale, add the sour cream and the vanilla, and beat the mixture until it is combined well. Beat in the flour mixture, a little at a time, and beat the batter until it just combined. Stir in the apples, the raisins, and the walnuts and divide the batter among 16 paper-lined 1/2 cup muffin tins. Bake the muffins in the middle of a 350°F. oven for 20 to 25 minutes, or until a tester comes out clean, turn them onto a rack, and let them cool.

3/4 cup milk
1/3 cup granulated sugar
1/4 cup vegetable oil
1 cup all-purpose flour
1 cup quick-cooking oats
2 teaspoons baking powder
2 teaspoons cinnamon
1 teaspoon nutmeg
1/2 teaspoon salt
1/4 teaspoon allspice
2 tablespoons brown sugar or 2 tablespoons coarse raw sugar

Steps:

Steps:
