WHOLE-WHEAT CINNAMON-RAISIN BREAD

Whole-Wheat Cinnamon-Raisin Bread image

Provided by Ellie Krieger

Time 4h15m

Yield 2 loaves

Number Of Ingredients 12

2 cups bread flour, plus more for dusting
2 cups whole-wheat flour
1/4 cup nonfat dry milk
1 large egg
2 tablespoons canola oil, plus more for brushing
3 tablespoons honey
2 teaspoons salt
1 1/2 teaspoons instant dry yeast
Nonstick cooking spray
2/3 cup raisins
1 tablespoon plus 1 teaspoon ground cinnamon
1/3 cup packed dark brown sugar

Steps:

  • Make the dough.
  • Measure out 1 1/4 cups very warm water and check the temperature; it should be 120 degrees F to 130 degrees F. Combine both flours, the dry milk, egg, canola oil, honey, salt, yeast and warm water in the bowl of a stand mixer fitted with the dough hook. Mix 3 minutes on the lowest setting, then increase to the next highest setting and mix 5 more minutes. The dough should be soft and sticky.
  • Let it rise.
  • Transfer the dough to a large bowl coated with cooking spray. Cover tightly with plastic wrap and let rise at room temperature until the dough has nearly doubled in size, about 1 hour, 30 minutes.
  • Soak the raisins.
  • Dry raisins will rob moisture from the bread, so soak them first in boiling water until plump, about 30 minutes. Drain and pat dry.
  • Fold the dough.
  • Transfer the dough to a floured work surface. Picture it as a loose square. Lift up one side of the dough and fold about one-third of it across; press down on the dough with spread fingers to remove any air bubbles. Repeat with the remaining 3 sides of the dough.
  • Add the filling.
  • Mist two 9-by-5-inch loaf pans with cooking spray. Divide the dough in half; roll out each half into an 8-inch square. Brush each square with canola oil, then sprinkle with the cinnamon (it's high in antioxidants!), brown sugar and raisins.
  • Form the loaves.
  • Roll up each square of dough into a tight cylinder; place seam-side down in the prepared pans. Cover tightly with plastic wrap and let rise at room temperature until the dough fills the pans and springs back when touched, about 1 hour, 30 minutes.
  • Bake the bread.
  • Preheat the oven to 375 degrees F. Brush the loaves with canola oil and bake until golden brown, 25 to 30 minutes. Remove from the pans and transfer to a rack to cool completely.

EASY CINNAMON APPLE RAISIN BREAD

Easy Cinnamon Apple Raisin Bread image

This is an easy and delicious bread to prepare. Even better you only need one mixing bowl because you can throw all of the ingredients right in! Feel free to tweak the ingredients to your liking...add more cinnamon...add nuts, etc. I hope you enjoy it! Edited: I have also tried out the bread by using 1/2 whole wheat pastry flour and 1/2 regular flour, a tbl of wheat germ and less sugar to make it a tiny bit "healthier". It came out just as nice as the original.

We will start with the essential ingredients needed for bread baking, then move on to the tips for preparing and combining the ingredients, and explain some important techniques that will ensure that the bread comes out fluffy, moist, and full of flavor. Essential Ingredients for Bread Baking: Before we dive into the tips and tricks of making an apple raisin honey wheat bread, let us first explore the essential components that are needed to bake a perfect bread. These ingredients include: 1. Flour: The key ingredient in any bread recipe is the flour. For apple raisin honey wheat bread, you will need whole wheat flour, which is richer in fiber, vitamins, and minerals than white all-purpose flour. 2. Yeast: Yeast is the microorganism responsible for the fermentation process in bread, which makes it rise. You can use either active dry yeast, instant yeast, or fresh yeast, depending on your preference. 3. Liquid: The liquid used in bread baking can be water, milk, or any combination of both. For this recipe, you will need warm water to activate the yeast. 4. Sugar: Sugar plays an essential role in breadmaking. It provides a food source for the yeast, which helps it grow and produce carbon dioxide gas. For this recipe, you will use honey as a natural sweetener. 5. Salt: Salt is used in bread baking to enhance the flavor and help control the fermentation process. It also strengthens the gluten in the dough, which makes it more elastic. 6. Fats: Fats such as butter or oil are added to the dough to give it richness and a softer texture. 7. Mix-ins: Mix-ins are added to bread dough to improve the flavor and texture. For apple raisin honey wheat bread, you will need dried raisins and finely chopped apples. Tips for Preparing and Combining the Ingredients: Once you have gathered all the necessary ingredients for making apple raisin honey wheat bread, it's time to start combining them. To ensure a perfect result, you should follow the following tips: 1. Proof the Yeast: Before adding the yeast to the dough, you must activate it by proofing it. To proof the yeast, dissolve it in warm water along with one tablespoon of honey and let it sit for five to ten minutes until it becomes frothy. This indicates that the yeast is alive and ready to be added to the dough. 2. Mix the Dry Ingredients First: In a large mixing bowl, combine the whole wheat flour, salt, and cinnamon. Mix them together thoroughly with a whisk or a fork. This helps distribute the salt and the spices evenly throughout the dough. 3. Add the Liquid Ingredients: Once the yeast is proofed, add it to the dry ingredients, along with the warm water and honey. Mix everything together until a shaggy dough forms. 4. Knead the Dough: Turn the dough out onto a floured surface and knead it for 8-10 minutes until it becomes smooth, elastic, and non-sticky. You can do this by hand or using a stand mixer with a dough hook attachment. 5. Add the Mix-ins: Once the dough is kneaded, add the dried raisins and finely chopped apples, and knead them into the dough until they are well distributed. Important Techniques for Baking the Perfect Apple Raisin Honey Wheat Bread: Now that you have prepared the dough, it's time to bake it. Here are some important techniques that will ensure that your apple raisin honey wheat bread comes out fluffy, moist, and full of flavor: 1. First Rise: Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm, draft-free place for about 60-90 minutes until it doubles in size. This is the first rise, also known as proofing, which allows the yeast to ferment and the bread to rise. 2. Second Rise: After the dough has risen, punch it down to release the gas, knead it a few times, and shape it into a loaf. Place the shaped dough into a greased loaf pan, cover it with a damp cloth, and let it rise for another 30-45 minutes until it doubles in size again. This is the second rise, which helps create a light, airy texture in the bread. 3. Baking: Preheat the oven to 375°F and bake the bread for 35-40 minutes until the crust is golden brown and the internal temperature reaches 190°F. To ensure even baking, rotate the pan halfway through the baking process. 4. Cooling: Once the bread is baked, remove it from the oven and let it cool in the pan for 5-10 minutes before transferring it to a wire rack to cool completely. Cooling the bread allows it to set and distribute the moisture evenly throughout the loaf. Conclusion: In conclusion, baking apple raisin honey wheat bread is a fun and rewarding activity that requires some degree of skill and attention to detail. With the valuable tips shared in this article, you can be confident that you will make the perfect loaf of bread every time. Remember to use high-quality ingredients, follow the mixing and proofing instructions precisely, and apply the baking techniques correctly. With practice and patience, you will soon become a master baker, and your family and friends will be delighted with your delicious apple raisin honey wheat bread.
