Time 49m

Yield 8 serving(s)

Number Of Ingredients 15

2 teaspoons salt
1 1/2 teaspoons white pepper
1 teaspoon garlic powder
1 teaspoon dry mustard
1 teaspoon cayenne pepper, Ground
1/2 teaspoon black pepper
1/4 cup vegetable oil
1 cup onion, Chopped
1 cup green bell pepper, Chopped
1/2 cup pecan halves, dry roasted
1/2 cup raisins
4 tablespoons unsalted butter
1 1/2 cups rice, Uncooked, converted
3 cups beef stock or 3 cups chicken stock
2 cups apples, unpeeled, Chopped

Steps:

  • Combine the seasoning mix ingredients in a small bowl and set aside.
  • In a 2-quart saucepan, heat the oil over high heat until very hot, about 2 minutes.
  • Add the onions and bell peppers; saute about 2 minutes, stirring occasionally.
  • Add the pecans and continue cooking for about 3 minutes, stirring occasionally.
  • Add the raisins and butter (these are added together so the raisins will absorb as much butter as possible).
  • Stir until butter is melted, then cook until raisins are plump, about 4 minutes, stirring occasionally.
  • Add the rice and seasoning mix and cook until rice starts looking frizzly (a bit like ce Krispies) Chef Prudhomme recommended using converted rice.
  • This will require about 2 to 3 minutes, stirring almost constantly before the rice looks "frizzly".
  • Stir in the stock, scraping pan bottom well, then stir in the apples.
  • Cover pan and bring to boil; lower heat and simmer covered for 5 minutes.
  • Remove from heat and let sit, *COVERED*, until rice is tender and stock is absorbed, about 30 minutes. (We cook the rice this slow way to let the flavors build to their maximum.) Serve immediately, allowing about 3/4 cup per person.

APPLE-RAISIN COLE SLAW WITH SOUR CREAM DRESSING

Apple-Raisin Cole Slaw with Sour Cream Dressing image

I usually use vinaigrette dressings on my cole slaws, but I needed one that was more conventional and less pickle-y to take to an office pot-luck. This one has a more familiar creamy dressing and nice sweet and tangy flavors.

Categories     Fruit Salads

Number Of Ingredients 9

1/3 cup(s) mayonnaise or miracle whip
1/3 cup(s) sour cream
1 tablespoon(s) brown sugar
1 tablespoon(s) apple cider vinegar
1/2 - green cabbage
2 - apples
2 - carrots
1 cup(s) raisins
1 cup(s) chopped pecans

Steps:

  • Combine the mayonnaise, sour cream, brown sugar, and vinegar. Whip with a fork and set aside while you prepare the salad.
  • Shred or finely slice the cabbage.
  • I used 1 sweet-tart Jonagold and 1 sour Granny Smith apple, but you can use any variety you like. Core and chop (I did not peel them).
  • Peel and coarsely grate the carrots.
  • I used half golden and half black raisins. I think dried cranberries would be even better. You can use more than 1 cup if you like.
  • Toss cabbage and fruits in a large bowl. Dress and toss again to coat everything in mayonnaise-sour cream mixture. Allow to marinate in the refrigerator for a few hours.
  • Garnish with nuts just before serving. (The nuts will get soggy if you add them at the same time as everything else.)

Apple raisin dressing is a delicious, savory-sweet dressing that can be used to add flavor and texture to a variety of dishes. This dressing typically consists of a blend of chopped apples, raisins, and other ingredients such as onions, celery, and herbs. It can be served as a side dish or used as a topping for salads, sandwiches, or meats. In this article, we will explore the many ways in which apple raisin dressing can be used and provide some tips for making your own tasty version.

The Ingredients

The key ingredients in apple raisin dressing are, of course, apples and raisins. These are often combined with other vegetables such as celery, carrots, and onions, as well as herbs and spices like cinnamon, thyme, and sage. Depending on the recipe, the dressing can also include a variety of other flavorings like honey, vinegar, or mustard.
Apples
The type of apples used in the dressing can have a significant impact on its flavor and texture. Granny Smith apples are popular choices because of their tart flavor and firm texture, which makes them perfect for holding up in the dressing. Other varieties that can be used include Gala, Braeburn, and Honeycrisp.
Raisins
The raisins used in the dressing can be any type, including golden or regular. They add a sweet flavor and chewy texture to the dressing that balances out the tartness of the apples.
Vegetables
Celery and onions are the most commonly used vegetables in apple raisin dressing recipes. These provide a savory flavor and a crunchy texture that complements the sweetness of the apples and raisins. Some recipes also use carrots, which add a touch of sweetness and a beautiful color to the dressing.
Herbs and Spices
Herbs and spices are used to add depth and complexity to the flavor of the dressing. Common choices include thyme, sage, cinnamon, and nutmeg, but you can experiment with other herbs and spices to find the perfect combination.
Flavorings
Additional flavorings like honey, mustard, and vinegar can be added to the dressing to enhance its taste. These ingredients can be used to balance out the sweetness of the apples and raisins or to add a tangy note to the dressing.

Apple raisin dressing is a classic side dish that is perfect for holiday meals, and it's easy to see why. The combination of sweet apples, plump raisins, and savory seasonings is the perfect complement to almost any main course. Whether you're making a dressing for Thanksgiving turkey or simply want a side dish to serve with a rotisserie chicken, these tips will ensure your apple raisin dressing is a hit with your guests.

1. Choose the Right Apples

When making apple raisin dressing, it's important to choose the right type of apples. The ideal apple for this recipe should be firm enough to hold its shape during cooking but tender enough to break down slightly when mixed with the other ingredients. Some of the best varieties to use for apple raisin dressing include Honeycrisp, Braeburn, and Granny Smith. These apples have a good balance of sweet and tart flavors and hold up well during cooking.

2. Use High-Quality Raisins

The key to making delicious apple raisin dressing is to use high-quality raisins. Look for plump, juicy raisins that are free from any signs of damage or discoloration. Raisins that are too dry or have a musty smell will not add the desired sweetness to your dish. If you can't find good quality raisins in your local grocery store, try shopping online or at a specialty food store.

3. Experiment with Seasonings

The seasonings you use in your apple raisin dressing can make all the difference in the final flavor. Some classic seasonings to use include thyme, rosemary, sage, and parsley. However, don't be afraid to experiment with other spices and herbs to give your dish a unique twist. For example, try adding a pinch of cinnamon, nutmeg, or allspice for a slightly sweet and spicy flavor.

4. Use Fresh Bread

Fresh bread is a crucial component of apple raisin dressing. The bread acts as the base for the other ingredients and helps to hold everything together. If possible, use a high-quality bakery bread with a rustic texture and a slightly chewy crust. Bread that is too soft or spongy will result in a mushy dressing that lacks texture.

5. Precook Your Apples

To ensure that your apples are perfectly cooked and tender, it's best to precook them before adding them to your dressing. Simply peel and chop your apples into small pieces, then sauté them in a butter and sugar mixture until they are soft and slightly caramelized. This step will help to concentrate the flavors of the apples and create a more complex flavor profile in your dish.

6. Add a Little Sweetness

While the apples and raisins in your dressing will provide some natural sweetness, it's important to balance the flavors with a little sugar or honey. A tablespoon or two of sugar or honey can help to mellow out the sweetness and give your dish a more complex flavor profile. However, be careful not to add too much sweetness, as this can overwhelm the other flavors in the dish.

7. Keep Your Ingredients Balanced

When making apple raisin dressing, it's important to keep your ingredients balanced. Too much bread can make your dish dry and crumbly, while too many apples can make it too sweet. A good rule of thumb is to use equal parts bread, apples, and raisins. You can also add a few tablespoons of chicken or vegetable broth to help keep your dressing moist and flavorful.

8. Don't Overstuff the Bird

If you plan to stuff your turkey or chicken with apple raisin dressing, be careful not to overstuff it. Overstuffed birds can take longer to cook and may not reach the proper internal temperature, which can lead to foodborne illness. Instead, try baking your dressing in a separate dish alongside the bird. This will ensure that both the bird and the dressing cook evenly.

Conclusion

Making apple raisin dressing is an easy way to add flavor and texture to your holiday meals. By choosing the right apples, using high-quality raisins, experimenting with seasonings, using fresh bread, precooking your apples, adding a little sweetness, keeping your ingredients balanced, and not overstuffing the bird, you can create a delicious and memorable side dish that your family and friends will love.
