Categories     dessert

Time 1h5m

Yield 30 to 40 servings

Number Of Ingredients 12

2 pounds sweet, tart apples, such as cameo and braeburn, chopped small
4 tablespoons honey
3 tablespoons unsalted butter
1 tablespoon lemon juice
1 teaspoon ground cinnamon
1/8 teaspoon salt
1 cup walnuts, toasted and roughly chopped small
All-purpose flour, for dusting
One 14-ounce package puff pastry, defrosted
3/4 cup granulated sugar
1 teaspoon lemon juice
3 egg whites, at room temperature

Steps:

  • For the apple puffs: Place the apples in a medium pot with 1/2 cup water, the honey, butter, lemon juice and cinnamon. Stir and cook over medium heat until the apples soften, 10 to 15 minutes. Remove from the heat and stir in the walnuts. Set aside.
  • Preheat the oven to 350 degrees F and place a rack close to the center of the oven.
  • On a lightly floured surface, roll the puff pastry to about 1/8-inch thick and cut the pastry into 3-by-3-inch squares. Press the squares into the wells of a mini muffin tin and poke the bottoms with a fork to dock. Place a heaping tablespoon of the apple mixture in the center. Repeat for the remaining pieces of pastry and apple filling.
  • Bake until the pastries are puffed and golden, 25 to 30 minutes. Transfer the apple puffs to a wire rack to cool while you make the meringue.
  • For the meringue: In the bowl of a standing mixer fitted with a whisk attachment, beat the sugar, lemon juice and egg whites on medium speed until the meringue is glossy, smooth and holds a stiff peak.
  • Dollop a tablespoon of the meringue on top of each puff and use a kitchen torch to brown the outside. Alternatively, place the puffs on a baking sheet and broil until the meringue is lightly browned, 2 to 3 minutes. Serve at room temperature.

Steps:

  • Over medium heat, in a large saucepan, combine the apples, raisins, coconut oil or butter, 2 tablespoons maple syrup and cinnamon then cook for about 10 minutes. Set aside. In a small bowl, mix the breadcrumbs, remaining maple syrup, pine nuts and walnuts. Set aside. Lay the puff pastry flat on the table or dough board sprinkled with flour. Sprinkle flour on the dough too so that they don't stick together. Using the round 3-inch cookie cutter, cut 7 circles. Sprinkle the nut & breadcrumb mixture at the center of each cut dough then spoon some of the apple mixture on top. Close the sacks by putting all the edges together then pinch them together. With the remaining dough where you cut out the circles, get a little piece and roll on the plate to make thin cylinders. You can wrap this on top of each sack. Place the apple puffs on a silicone baking mat or a baking pan lined with parchment paper. Brush the egg wash on the apple puffs. bake for 20 - 25 minutes or until the apple puffs become golden. Let them cool for at least 20 minutes before serving.

Apple puffs are a delightful and easy-to-make treat that can be enjoyed for breakfast, brunch, or as a dessert. The main ingredients in apple puffs are apples and puff pastry, which create a crispy shell and a tender and juicy apple filling. Adding cinnamon and sugar to the apple mix gives the recipe a comforting, cozy, and slightly sweet flavor that's perfect for a lazy afternoon or a chilly autumn day. Apple puffs are often served with powdered sugar or whipped cream on top, bringing a touch of decadence to an already irresistible dish.

Ingredients

Puff pastry
Puff pastry is the main ingredient in Apple puffs; it's a light, flaky pastry that puffs up and becomes crisp when baked. When purchasing puff pastry, it's best to buy from a store or bakery that specializes in pastries, giving you a baked good that's light and fresh.
Apples
The perfect apples for apple puffs are Granny Smith, Honeycrisp, or Pink Lady apples. These varieties of apples have a firm texture, making them ideal for baking. When purchasing apples for apple puffs, it's essential to select apples that are firm, plump, and round.
Lemon juice
Lemon juice adds a zesty flavor to the apple filling, balancing out the sweetness of the apple mix. When using lemon juice, it's best to use fresh juice rather than bottled juice.
Sugar
Sugar is used to sweeten the apple filling, bringing a touch of caramelization to the recipe.
Cinnamon
Cinnamon is another ingredient that adds to the rich and comforting flavor of the apple puffs. It's best to use ground cinnamon, as it distributes evenly throughout the recipe.
Butter
Butter is used to sauté the apple mixture, giving it a rich and buttery flavor.
Powdered sugar
Powdered sugar is optional and is used for dusting on top of the baked apple puffs. It makes the dessert or breakfast food look elegant and slightly sweet tasting.

How to Make Apple Puffs

Step 1: Preparing the apple filling
Peel and chop the apples into small pieces. In a frying pan or skillet, melt butter and sauté the apples until they are tender. Add sugar, cinnamon, and lemon juice and continue to cook for an additional minute. The mixture should be slightly caramelize which will add to the taste.
Step 2: Preparing the puff pastry
Roll out the puff pastry onto a floured surface or a silicone baking mat. Cut the puff pastry into eight equal squares using a pizza cutter or sharp knife. If you want larger Apple Puffs, you can make six instead of eight pieces.
Step 3: Assembling the apple puffs
Place a spoonful of apple mixture in the center of each square, leaving a margin of space around the edges of the pastry to make it easy to seal the edges. Fold the pastry over the apple filling, pressing the edges together to seal it. Use a fork to crimp the edges, and prick the top of each apple puff with the fork to allow moisture to escape. Brush the top of each apple puff with a beaten egg to give it a shiny glaze.
Step 4: Baking the apple puffs
Preheat the oven to 400 F. Bake the apple puffs for 15-20 minutes, or until the pastry is golden brown and puffy. Cool the apple puffs on the baking sheet or transfer them to a cooling rack. Dust the top of the puff with powdered sugar before serving to create a decorative touch.

Conclusion

In conclusion, apple puffs are a tasty and easy-to-make recipe that can be enjoyed for breakfast, brunch, or dessert. Using puff pastry and fresh apples, along with other ingredients like cinnamon and lemon juice, apple puffs can be a comforting and cozy dish for those cold autumn days or whenever you're in the mood for something sweet. So, try this recipe out and impress your friends and family with this delectable pastry.

Valuable Tips for Making Apple Puffs

1. Choose the Right Apples

Not all apples are created equal, and when it comes to making apple puffs, the variety of apple you choose can make a big difference in the taste and texture of the finished product. Generally speaking, you'll want to choose apples that are firm and slightly tart, as they will hold their shape better during baking and provide a nice contrast to the sweetness of the pastry. Some good options include Granny Smith, Honeycrisp, and Pink Lady apples.

2. Keep Your Dough Cool

Making pastry dough can be a finicky process, and one of the keys to success is keeping the dough as cool as possible throughout the process. This is especially important when making apple puffs, as the filling can make the dough warm up more quickly than usual. To keep your dough cool, you can chill it in the refrigerator between steps, use cold butter and water, and work as quickly as possible.

3. Use Egg Wash for a Crispy Finish

To give your apple puffs a nice, crispy finish, be sure to brush them with an egg wash before baking. This will help the pastry brown evenly and give it a nice shine. To make an egg wash, simply beat one egg with a tablespoon of water and brush it over the pastry before baking.

4. Don't Overfill the Puffs

When it comes to filling your apple puffs, less is definitely more. Overfilling the puffs can cause them to burst open during baking, which can be messy and can also make the filling leak out. To avoid this, use a small spoon to add just enough filling to each puff so that it's full, but not stuffed.

5. Add a Touch of Spice

To give your apple puffs a little extra flavor, consider adding some spices to the filling. Cinnamon, nutmeg, and allspice are all classic choices that work well with apples. You can also experiment with other spices, such as ginger or cardamom, to create your own unique flavor profile.

6. Chill the Filling Before Using

If your apple filling is warm or runny, it can make the pastry dough softer and more difficult to work with. To avoid this, be sure to chill your filling in the refrigerator for at least 30 minutes before using it to fill your puffs. This will help it set up and make it easier to handle.

7. Use a Sharp Knife to Cut the Apples

When slicing your apples for the filling, be sure to use a sharp knife. Dull knives can crush the apple slices, making them less appealing in the finished product. A sharp knife will make clean, precise cuts, which will help the apple slices hold their shape during baking.

8. Experiment with Different Shapes and Sizes

Apple puffs can be made in a variety of shapes and sizes, so don't be afraid to experiment with different options. You can make small, bite-sized puffs for a party, or larger puffs for a dessert that's impressive enough to share. You can also try shaping your puffs into different shapes, such as hearts, stars, or even animals, to make them extra special.

9. Serve Warm with Ice Cream or Whipped Cream

Apple puffs are best enjoyed warm, so be sure to serve them right out of the oven if possible. They pair well with ice cream, whipped cream, or even a drizzle of caramel sauce for an extra indulgent treat.

10. Store Leftovers Properly

If you have leftovers, be sure to store them properly to ensure they stay fresh as long as possible. Apple puffs are best stored in an airtight container in the refrigerator, where they will keep for up to three days. Reheat them in the oven for a few minutes to crisp up the pastry before serving.
In conclusion
Making apple puffs is a fun and delicious way to enjoy the flavors of fall. Whether you're a seasoned baker or a beginner, these tips will help you create apple puffs that are sure to impress. With a little practice and experimentation, you can customize your recipe and create a dessert that's uniquely your own.
