"I had a package of puff pastry in my freezer and mentioned to a friend that I'd like to make apple turnovers," notes Coleen Cavallaro of Oak Hill, New York. "She shared a recipe that I adapted for the puff pastry. These turnovers were a big hit on my first try!"

1/3 cup sugar
1 tablespoon all-purpose flour
1/2 teaspoon ground cinnamon
4 cups chopped peeled apples
1 package (17.3 ounces) frozen puff pastry, thawed
TOPPING:
3 tablespoons butter, melted
2 tablespoons sugar
1/4 teaspoon ground cinnamon
Vanilla ice cream, optional

Steps:

  • In a large bowl, combine the sugar, flour and cinnamon; add apples and toss to coat. On a lightly floured surface, roll out each pastry sheet into a 12-in. square. Cut each into four squares. , Spoon 1/2 cup apple mixture into the center of each square; fold diagonally in half and press edges to seal. Place on a parchment-lined baking sheet., In a small bowl, combine the butter, sugar and cinnamon; brush over pastry. Bake at 400° for 12-16 minutes or until golden brown. Serve warm with ice cream if desired.

2-1/2 cups all-purpose flour
1 teaspoon salt
1 cup cold butter, cubed
1 egg, separated
3 to 4 tablespoons 2% milk
1 cup crushed cornflakes
9 cups thinly sliced peeled tart apples (about 10 medium)
1 cup plus 2 tablespoons sugar, divided
2 teaspoons ground cinnamon, divided
1/2 teaspoon ground nutmeg
GLAZE:
1 cup confectioners' sugar
1/2 teaspoon vanilla extract
1 to 2 tablespoons 2% milk

Steps:

  • In a large bowl, combine flour and salt; cut in butter until mixture resembles coarse crumbs. In a measuring cup, combine egg yolk and enough milk to measure 1/3 cup. Gradually add to the flour mixture, tossing with a fork until dough forms a ball. , Preheat oven to 350°. Divide dough in half. Roll one portion into a thin 15x10-in. rectangle. Transfer to the bottom of an ungreased 15x10x1-in. baking pan. Sprinkle with cornflakes. , In a large bowl, combine apples, 1 cup sugar, 1-1/2 teaspoons cinnamon and nutmeg; toss to coat. Spoon over crust. , Roll remaining dough into a thin 15x10-in. rectangle; place over apple filling. Beat egg white; brush over pastry. Combine remaining sugar and cinnamon; sprinkle over the top. Bake 45-50 minutes or until golden brown. , For glaze, combine confectioners' sugar, vanilla and enough milk to achieve a drizzling consistency. Drizzle over warm pastry. 1 cup sifted all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
¼ teaspoon ground cinnamon
¼ cup butter or margarine, melted
½ cup packed brown sugar
½ cup white sugar
1 egg
1 teaspoon vanilla extract
½ cup chopped apple
½ cup finely chopped walnuts
2 tablespoons white sugar
2 teaspoons ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch pan. Sift together flour, baking powder, salt, and 1/4 teaspoon of cinnamon; set aside.
  • In a large bowl, mix together melted butter, brown sugar, and 1/2 cup of white sugar with a wooden spoon until smooth. Stir in the egg and vanilla. Blend in the flour mixture until just combined, then stir in the apples and walnuts. Spread the mixture evenly into the prepared pan. In a cup or small bowl, stir together the remaining cinnamon and sugar; sprinkle over the top of the bars.
  • Bake for 25 to 30 minutes in preheated oven; finished bars should spring back when lightly touched. Cool in the pan, and cut into squares.

60 g butter, melted
2 tablespoons soft brown sugar
1/2 teaspoon ground mixed spice
2 medium granny smith apples

Steps:

  • Preheat oven to moderately hot.
  • Cut pastry into 4 squares, place on an oven tray.
  • Combine butter, sugar and spice, brush half the mixture over pastry squares.
  • Peel apples and cut into wedges, remove core.
  • Cut apple into very thin slices, lay on top of pastry squares leaving a 1cm border.

2 tablespoons lemon juice
4 cups water
4 Granny Smith apples - peeled, cored and sliced
2 tablespoons butter
1 cup brown sugar
1 teaspoon ground cinnamon
1 tablespoon cornstarch
1 tablespoon water
1 (17.25 ounce) package frozen puff pastry sheets, thawed
1 cup confectioners' sugar
1 tablespoon milk
1 teaspoon vanilla extract

Steps:

  • Combine the lemon and 4 cups water in a large bowl. Place the sliced apples in the water to keep them from browning.
  • Melt butter in a large skillet over medium heat. Drain water from apples, and place them into the hot skillet. Cook and stir for about 2 minutes. Add brown sugar, and cinnamon, and cook, stirring, for 2 more minutes. Stir together cornstarch and 1 tablespoon water. Pour into the skillet, and mix well. Cook for another minute, or until sauce has thickened. Remove from heat to cool slightly.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Unfold puff pastry sheets, and repair any cracks by pressing them back together. Trim each sheet into a square. Then cut each larger square into 4 smaller squares. Spoon apples onto the center of each squares. Fold over from corner to corner into a triangle shape, and press edges together to seal. Place turnovers on a baking sheet, leaving about 1 inch between them.
  • Bake for 25 minutes in the preheated oven, until turnovers are puffed and lightly browned. Cool completely before glazing.
  • To make the glaze, mix together the confectioners' sugar, milk and vanilla in a small bowl. Adjust the thickness by adding more sugar or milk if necessary. Drizzle glaze over the cooled turnovers.

1 pound (4 sticks) unsalted butter, at room temperature
3/4 cup granulated sugar
1/2 cup light brown sugar, lightly packed
2 teaspoons pure vanilla extract
4 cups all-purpose flour
1 1/2 teaspoons kosher salt
1/2 cup chopped walnuts
1 teaspoon ground cinnamon
1 1/2 pounds Granny Smith apples, peeled, quartered, cored, and sliced 1/8 inch thick (3 large)
1 1/2 pounds Golden Delicious apples, peeled, quartered, cored, and sliced 1/8 inch thick (3 large)
2 tablespoons freshly squeezed lemon juice
1/4 cup granulated sugar
1 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
4 tablespoons (1/2 stick) unsalted butter

Steps:

  • Preheat the oven to 375 degrees.
  • For the crust, place the butter, granulated sugar, brown sugar, and vanilla in the bowl of an electric mixer fitted with the paddle attachment and beat on medium speed for 2 minutes, until light and creamy. Sift the flour and salt together and, with the mixer on low, slowly add to the butter-sugar mixture, beating until combined. Scatter two-thirds of the dough in clumps in a 9 x 13-inch baking pan and press it lightly with floured hands on the bottom and 1/2 inch up the sides. Refrigerate for 20 minutes. Bake for 18 to 20 minutes, until the crust is golden brown, and set aside to cool.
  • Meanwhile, put the mixing bowl with the remaining dough back on the mixer, add the walnuts and cinnamon, and mix on low speed to combine. Set aside.
  • Reduce the oven to 350 degrees.
  • For the filling, combine the Granny Smith and Golden Delicious apples and lemon juice in a very large bowl. Add the granulated sugar, cinnamon, and nutmeg and mix well. Melt the butter in a large (10-inch-diameter) pot, add the apples, and simmer over medium to medium-low heat, stirring often, for 12 to 15 minutes, until the apples are tender and the liquid has mostly evaporated. Spread the apples evenly over the crust, leaving a 1/2-inch border.
  • Pinch medium pieces of the remaining dough with your fingers and drop them evenly on top of the apples (they will not be covered). Bake for 25 to 30 minutes, until the topping is browned. Cool completely and cut into bars.

2 apples, peeled,cored and halved
2 tablespoons butter, melted
1 teaspoon cinnamon
1 teaspoon sugar
1 egg wash

Steps:

  • Cut the puff pastry into 9 equal squares.
  • Taking one of the squares, make 5 equal 1-inch (2 cm) cuts on 2 sides of the square.
  • Make 3 vertical 1-inch (2 cm) cuts in between the edge of the uncut side and the 2 slits on the cut sides.
  • Make 2 vertical 1-inch (2 cm) cuts under the top slit and above the bottom slit.
  • Repeat this pattern until you have 6 rows with 3 cuts and 5 rows with slits and 2 cuts. Set aside
  • Preheat oven to 400˚F (200˚C).
  • Take another square place one of the apple halves in the center, peeled side facing up. Brush egg wash on each side of the square around the apple.
  • Combine the butter, cinnamon and sugar in a bowl. Brush over the apple until it is completely coated.
  • Take the other cut square of dough and stretch it over the apple, your cut should look like holes in the dough.
  • Pinch the bottom of the dough together until it is sealed.
  • Brush with egg wash and sprinkle with coarse sugar.
  • Bake for 15-20 minutes until pastry is golden brown and puffed.
  • Enjoy!

12 ounces cut up red baking apples (approx. 2 medium sized apples)
1/3 cup packed brown sugar
2 teaspoons flour
1 teaspoon lemon juice
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 beaten egg

Steps:

  • Thaw puff pastry according to directions on package.
  • Peel, core and chop apples up coarsely.
  • Combine apples with sugar, flour, lemon juice, cinnamon and nutmeg.
  • Heat oven to 350°F.
  • Flour surface lightly and cut pastry sheet into nine 3x3 squares.
  • Place approximately 1/4 cup apple mixture on each square and brush edge with beaten egg.
  • Place second pastry square on the top of the already filled pastry to form a pocket.
  • Press down border with fingers to seal and then press with fork to decorate the edges.
