ROAST PORK LOIN WITH APPLES

Roast Pork Loin with Apples image

Feed a crowd with Food Network Kitchen's Roast Pork Loin with Apples recipe. The flavor comes from apple cider, apple cider vinegar and fresh apples.

Provided by Food Network Kitchen

Categories     main-dish

Time 1h20m

Yield 4 servings

Number Of Ingredients 14

2 tablespoons vegetable oil
1 (2-pound) boneless center cut pork loin, trimmed and tied
Kosher salt and freshly ground black pepper
1 medium onion, thickly sliced
2 carrots, thickly sliced
2 stalks celery, thickly, sliced
3 cloves garlic, smashed
3 sprigs fresh thyme
3 sprigs fresh rosemary
4 tablespoons cold unsalted butter
2 apples, such as Cortland or Rome peeled, cored and cut into 8 slices
2 tablespoons apple cider vinegar
1 cup apple cider
2 tablespoons whole grain mustard

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large ovenproof skillet heat the vegetable oil over high heat. Season the pork loin all over generously with salt and pepper. Sear the meat until golden brown on all sides, about 2 to 3 minutes per side. Transfer the meat to a plate and set it aside.
  • Add the onion, carrot, celery, garlic, herb sprigs, and 2 tablespoons of the butter to the skillet. Stir until the vegetables are browned, about 8 minutes. Stir in the sliced apples, then push the mixture to the sides and set the pork loin in the middle of the skillet along with any collected juices on the plate. Transfer the skillet to the oven and roast the loin until an instant-read thermometer inserted into the center of the meat registers 140 to 150 degrees F, about 30 to 35 minutes. (See Cook's Note.)
  • Transfer the pork a cutting board and cover it loosely with foil while you make the sauce. Arrange the apples and vegetables on a serving platter and set aside. Remove and discard the herb sprigs. Return the skillet to a high heat and add the vinegar scraping the bottom with a wooden spoon to loosen up any browned bits. Reduce by half then add the cider and reduce by about half again. Pull the skillet from the heat and whisk in the mustard, and the remaining 2 tablespoons of cold butter. Adjust the seasoning with salt and pepper, to taste.
  • Remove the strings from the roast and slice into 1/2-inch thick pieces and arrange over the apple mixture. Drizzle some sauce over meat and serve the rest on the side.
  • Cook's Note: Pork cooked this way will be slightly pink. If desired, cook the pork to 160 degrees F, but be aware that this lean cut will not be as moist at the higher temperature.

APPLE PORK ROAST WITH SWEET POTATOES, CARROTS, APPLES, AND SQUASH

APPLE PORK ROAST WITH SWEET POTATOES, CARROTS, APPLES, AND SQUASH image

Categories     Pork

Yield 12-14 people

Number Of Ingredients 11

1 medium or large bone-in pork picnic roast
1 gallon jug spiced apple cider
2-4 teaspoons ground cinnamon (to taste)
2 long cinnamon sticks, broken in half
1/2 teaspoon ground cloves (to taste)
1/2 teaspoon ground nutmeg (to taste)
1 cup dark brown sugar
3-4 sweet potatoes, well peeled, sliced into 1 inch thick rounds
1/2 large bag of baby carrots (the pre-cut, peeled kind)
5-6 Granny Smith apples, peeled, cored, and sliced into 6 pieces each
1-2 large yellow squash or 1 med butternut squash cut into large chunks (whichever you prefer)

Steps:

  • Preheat oven to 375F. Put roast in large roasting pan, fat side up. Pour apple cider into pan until pan is nearly full. About a quarter inch of roast should be above the cider. Then sprinkle roast liberally with ground cinnamon, cloves, and nutmeg, to taste. Drop the cinnamon stick pieces into the cider around the roast. Then make a thick layer of brown sugar on top of the roast. Cover. Cook in oven for approximately 4 hours. Remove carefully from oven, and uncover. Add sweet potato chunks, and baby carrots. You may have to remove some juices to be able to add potatoes and carrots. Be sure to leave some room for other ingredients to be added later. Cover. Return to oven for one hour. Remove from oven, uncover. Add apples, and squash. Once again, you will probably have to remove juices to fit in apples and squash. By this time, ingredients will be packed pretty tight around roast. Recover, return to oven. Cook for one more hour. Remove from oven. Allow to cool a little, and serve.

PORK ROAST WITH APPLES AND SHALLOTS

Pork Roast With Apples and Shallots image

This is an adapted recipe - it was initially published in "The Best Slow & Easy Recipes" by the editors of Cook's Illustrated ( 2008, $35) using boneless pork loin. I prefer to use a Boston butt or boned rolled pork shoulder, moister & much more economical. The cocotte method of using a tightly covered cooking vessel, low heat & minimal extra liquid makes for a wonderful dish. I've listed the ubiquitous Granny Smith apples but we use Limber Twigs, a great keeping/cooking apple, stored over winter in the garage. Any cooking apple works well. I also add about 2 tablespoons of Calavados (well, a glug) before covering & putting in the oven. The cooking time for the butt & shoulder is longer - I cook until an internal temp of 160F is obtained - about 85 minutes. This works well with mashed potatoes & cooked kale, mustard greens or turnip greens.

Categories     < 4 Hours

Time 1h15m

Yield 6 serving(s)

Number Of Ingredients 12

2 1/2-3 lbs boneless pork loin roast (or Boston butt as above)
1 teaspoon thyme
1 teaspoon rosemary
1 teaspoon marjoram
1/2 teaspoon lavender (optional)
2 teaspoons kosher salt
1 teaspoon black pepper, freshly ground
3 tablespoons vegetable oil (use 1 t if using butt or shoulder)
8 shallots, peeled and quartered
1 lb apple, peeled, cored and cut into 1/2-inch-thick wedges (Golden Delicious or Granny Smith - 2 to 3 medium)
1 teaspoon sugar
1 tablespoon butter

Steps:

  • Heat oven to 250 degrees. Pat pork dry, sprinkle with herbs and season to taste with salt and pepper.
  • Heat 2 tablespoons oil in a large Dutch oven over medium-high heat. Brown pork well on all sides. Transfer pork to a large plate.
  • Add remaining 1 tablespoon oil to pot. If using butt or shoulder, drain all but 2 tablespoons oil from pot as these are cuts with fat versus the loin. Add the shallots and cook about 3 minutes. Add the apples and sugar and cook about 5 minutes.
  • Off the heat, return the pork and any accumulate juices to the pot. Place a sheet of foil over the pot and press to seal, then cover tightly with a lid. Transfer the pot to the oven and cook until pork reaches an internal temperature of about 145 degrees, about 35 to 55 minutes (160F for butt & shoulder, about 85 minutes).
  • Remove pot from oven and transfer pork to a cutting board, tent loosely with the foil and let rest 5 to 10 minutes.
  • Stir butter into the apple-shallot mixture, season with salt and pepper.
  • Slice the pork and serve with apple-shallot mixture.

Making apple pork roast with sweet potatoes, carrots, apples, and squash is a delicious meal that is easy to prepare. This dish can be cooked in a slow cooker, oven, or pressure cooker. However, to ensure the dish comes out perfect, there are valuable tips to remember.

Tips for Preparing the Pork

  • Select the right pork cut- For pork roasts, pork loin or pork shoulder will always work best. These cuts are flavorful, and the fat content will keep the roast moist during cooking.
  • Trim the fat- The pork cut might have too much fat, which could make cooking the roast an uphill struggle. Therefore, to make your cooking less stressful, trim off the excess fat
  • Season the pork- Coat the pork with an even layer of salt and pepper or your preferred spice mixture for additional flavor. You may also marinate the pork a couple of hours before cooking with non-acidic ingredients like herbs, olive oil, garlic, and onions.

Tips for Preparing the Vegetables

  • Choosing the right vegetables- Sweet potatoes, carrots, apples, and squash are good choices. Root vegetables like rutabagas and turnips also work well in this recipe.
  • Cutting the vegetables- Make sure to cut the vegetables into similar-sized pieces. This ensures even cooking, and your dish will end up looking and tasting great.
  • Seasoning the vegetables- Just like with the pork, the vegetables also require seasoning. You can season with salt, pepper, or a spice mixture. However, over-seasoning the vegetables might overpower the pork’s flavor.
  • Adding the vegetables- Depending on the recipe, you can add the vegetables at the beginning of the cooking time or partway through. This depends on how quickly each vegetable cooks. Add the quicker cooking veggies like carrots and squash partway through the cooking process.

Tips for Cooking the Roast

  • Choose the right cooking method- There are different ways of cooking the roast. But slow cooking, oven roasting or pressure cooking are the popular ways to prepare apple pork roast. Ensure you choose the appropriate method depending on your preference and what’s available in your kitchen.
  • Preheat the oven- If oven roasting, preheat the oven to 350 degrees Fahrenheit.
  • Use a meat thermometer- Insert a meat thermometer to determine when the pork roast is done. The pork should reach an internal temperature of 145 degrees Fahrenheit.
  • Let the pork rest- When the pork roast reaches the correct internal temperature, remove it from the oven and let it rest for 10-15 minutes. This step ensures the juices redistribute, making the pork juicy and tender.

Tips for Serving the Meal

  • Pair with the right beverage- Apple pork roast pairs incredibly well with a glass of Chardonnay or Cabernet Sauvignon to compliment the flavors of the dish.
  • Serve with a starch- Apple pork roast meal is already filling, but you can serve it with mashed potatoes or roasted bread to make it more substantial.
  • Use leftovers wisely- If there are leftovers, don't toss them out. You can use the pork to make a sandwich or wrap for lunch or dinner, or make a delicious breakfast hash with sweet potatoes and apple.
