225g (½lb) apples, peeled, cored and cut into 1cm (½in) slices
450g (1lb) plums, washed, stoned and halved
30ml (2 tbsp) caster sugar
175g (8oz) plain flour, sieved
120g (4oz) golden caster sugar
120g (4oz) butter
15ml (1 tbsp) oats

Steps:

  • Heat the oven to 190°C/170°C/gas mark 5.
  • Toss the apples and plums with caster sugar and place them in a 23cm (10in) round baking dish. Flatten the mixture.
  • Place the flour and golden caster sugar in a bowl and slice in the butter.
  • Rub mixture with your fingertips until a breadcrumb consistency is achieved.
  • Pour the crumbs over the fruit evenly and flatten the mixture.
  • Sprinkle with oats.
  • Bake in the oven for 35 minutes or until the top is golden and the apples are soft.
  • Leave to cool for 10 minutes before serving with cream, custard or ice cream.

250g pack butter (this must be very cold)
225g caster sugar
300g ground almond
140g plain flour , plus 25g/1oz
2 eggs
1 tsp cinnamon
1 tsp baking powder
approx 6 plums , stoned and cut into sixths
50g flaked almond

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Butter and line a 20 x 30cm baking tin with baking paper. Put the butter, sugar and ground almonds into a food processor, then pulse until the mixture resembles very rough breadcrumbs. Spoon out half the mix into a bowl and set aside.
  • Add 140g flour into the mix in the processor and whizz until it just forms a dough. Tip into the tin and press down with the back of a spoon. Bake for 15-20 mins until golden. Leave to cool for 10 mins.
  • To make the filling, put the remaining butter and the sugar and almond mix back into the processor, saving a few tbsp for the topping. Add the eggs, the 25g flour, cinnamon and baking powder and whizz to a soft batter. Spread over the base.
  • Top with the plum pieces and a little extra caster sugar and cinnamon. Bake for 20 mins, then sprinkle with the remaining crumble mix and flaked almonds. Cook for another 20 mins or until golden. Leave to cool in the tin before slicing.

800g ripe cooking plums, such as Victoria or dessert plums, halved and stoned
50g light brown sugar
finely grated zest 1 orange
1 tsp ground cinnamon
1 tsp plain flour
250g plain flour
150g butter
80g caster sugar
80g demerara sugar
50g ground almonds

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Put the plums into the base of a shallow gratin dish about 28cm long. Mix together the sugar, orange zest, cinnamon and flour and sprinkle over the plums. Trickle over 2 tbsp water.
  • Put all the crumble ingredients into a food processor, and using the pulse button, whizz until the mixture just starts to clump together. Take care not to over process at this stage. Alternatively, rub the butter into the flour using your hands and then stir in the other ingredients.
  • Scatter the crumble over the plums and bake in the oven for 30-40 mins until golden brown. Leave for about 15 mins before serving with custard or cream.

Steps:

  • Put the fruit in a large pan with the sugar, spices, lemon zest and amaretto, or 1 tbsp of water and almond extract if not using the liquer. Mix well, and cook on a med heat until the apples are just about cooked through, stirring occasionally, for about 20 mins.
  • Preheat oven to 200C/180C fan/gas 7.
  • For the crumble topping, mix together the sugar, flour and butter until combined. You may find it easiest to rub mixture together with clean hands. Stir in the oats.
  • Put the fruit in a suitably sized ovenproof pudding dish, casserole etc. Arrange the crumble over the fruit, and sprinkle the almonds over.
  • Cook in the oven for about 25 mins, or until browned to your liking. Serve warm, with custard, vanilla ice cream or cream.

50g golden caster sugar

2 tbsp plain flour, plus extra for dusting
500g block shortcrust pastry
1 egg, beaten (optional)

50g plain flour
50g ground almonds
70g golden caster sugar
70g cold butter, cut into cubes
30g flaked almonds

Steps:

  • First, make the crumble. Tip the flour, ground almonds, sugar and a pinch of salt into a bowl, then rub in the butter with your fingers until the mix resembles breadcrumbs. Stir in the flaked almonds and chill until needed. Can be prepared up to two days ahead and chilled.
  • Heat the oven to 200C/180C fan/gas 6 with a baking tray inside. Peel, core quarter and slice the apples, then tip into a bowl with the sugar, mixed spice and flour. Toss well and set aside. Roll the pastry out on a lightly floured surface until it's large enough to line a 20-22cm pie dish. Line the dish with the pastry, then trim and crimp the edge.
