1/2 cup unsalted butter
3 tablespoons all-purpose flour
1/2 cup white sugar
1/2 cup packed brown sugar
1/4 cup water
8 apples, peeled, cored and sliced
1 tablespoon cinnamon
1 teaspoon nutmeg
1 teaspoon ginger
1 tablespoon vanilla extract
1 cup all-purpose flour
1/2 cup rolled oats
1 cup sugar
2/3 cup firmly packed light brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup cold unsalted butter

Steps:

  • Melt butter in a sauce pan. Stir in flour to form a paste. Add white sugar, brown sugar and water; bring to a boil. Reduce temperature, and simmer 5 minutes.
  • In a large bowl mix sliced apples with nutmeg, ginger, cinnnamon, and vanilla extract (although for most everyone else the full tablespoon of cinnamon might be a lil much *my hubbys a cinnamon addict* x3 you can cut it down to 1/2 tablespoon)
  • Place the bottom crust in your pan. Fill with your apples, mounded slightly. Pour sauce over apples.
  • Bake for 30 mins at 400°F Now for the crumble topping.
  • I actually ganked this crumble topping from ratherbeswimmin
  • Remove pie from oven and lower temperature to 375°. Carefully pour the crumble mixture in the center of the pie, spreading them over the surface evenly. Bake for another 30-40 mins you may have to cover with aluminum foil the final 15 mins to prevent your topping from burning. So keep a close eye on your pie ^.^.

I got this recipe from lots of different sources. I couldn't find one I liked. So took what I liked and added my own spin and this is what came out. I love this recipe, because it has all the flavors of fall. A little trick I learned from my grandmother: use different types of apples for the best flavor. I use Granny Smith, Braeburn, and Golden Delicious, but you can use whatever you like. I serve it as is, but encourage the use of ice cream, whipped cream, or whatever addition the occasion calls for.

1 ½ cups all-purpose flour
½ teaspoon salt
2 egg yolks
¼ cup cold butter, cubed
⅜ cup water
6 apples - peeled, cored, and chopped

Steps:

  • Roll pie dough out on a well-floured surface and place in 9-inch deep-dish pie plate.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine apples, 3/4 cup sugar, 2 tablespoons flour, mulling spices, and pinch of salt in a large bowl; mix well to combine. Place apple mixture in prepared pie shell.

1 1/3 c all-purpose flour
1/2 tsp salt
1/2 stick butter flavored crisco baking stick shortening, well-chilled
6 Tbsp ice cold water
PIE FILLING
1/2 c all-purpose flour
1/2 c granulated sugar
1 tsp ground cinnamon
1 dash(es) pumpkin pie spice
1 dash(es) nutmeg
1/2 tsp salt
3 Tbsp lemon juice
3 medium granny smith apples, peeled, cored and cut lengthwise into 1/2" thick wedges
4 medium bartlett pears, firm, peeled, cored and cut lengthwise into 1/2" thick wedges
STREUSEL TOPPING
1/2 c all-purpose flour
1/2 c brown sugar, packed
6 Tbsp chilled butter, cut into small pieces

Steps:

  • 1. PREHEAT OVEN TO 375°
  • 2. FOR THE CRUST: BLEND flour and salt in medium mixing bowl. CUT chilled shortening into 1/2-inch cubes. Cut in chilled shortening cubes into flour mixture, using a pastry blender, in an up and down chopping motion, until mixture resembles coarse crumbs with some small pea-sized pieces remaining. SPRINKLE half the maximum recommended amount of ice cold water over the flour mixture. Using a fork, stir and draw flour from bottom of bowl to the top, distributing moisture evenly into flour. Press chunks down to bottom of bowl with fork. Add more water by the tablespoon, until dough is moist enough to hold together when pressed together. ROLL dough from center outward with steady pressure on a lightly floured work surface (or between two sheets of wax or parchment paper) into a circle 2-inches wider than pie plate for the bottom crust. Transfer dough to a pie plate coated with cooking spray by loosely rolling around rolling pin. Center the rolling pin over the pie plate, and then unroll, easing dough into pie plate. Trim edges of dough leaving a 3/4-inch overhang. Fold edge under. Flute dough as desired. Set aside in the refrigerator while making pie filling.
  • 3. FOR THE PIE FILLING: combine flour, sugar, cinnamon and salt in a large bowl. Add lemon juice, apples and pears to the flour mixture. Toss gently to coat. Arrange pear-apple mixture in an even layer in prepared crust.
  • 4. FOR THE STREUSEL TOPPING: combine flour and brown sugar in a medium bowl. Add cold butter and cut in with a pastry blender or 2 knives until mixture resembles coarse meal. Sprinkle evenly over pear-apple mixture. Bake for 1 hour or until lightly brown. Topping will be crunchy. Let cool for an hour before serving.

2 pounds fresh rhubarb, trimmed and cut into 1-inch thick pieces
2 pounds McIntosh apples (6 to 8 apples), cored, peeled, and each cut into 12 equal slices
1 cup granulated sugar
1 cup packed light brown sugar
1/4 cup cornstarch
2 tablespoons fresh lemon juice
2 tablespoons apple, cherry, or grape brandy
1 cup bleached all-purpose flour
1 cup chopped walnuts
4 tablespoons unsalted butter, cut into 1/2-inch pieces and chilled
1 teaspoon ground cinnamon
Pinch freshly grated nutmeg
2 cups all-purpose flour
1 tablespoon sugar
1 teaspoon salt
3/4 cup solid vegetable shortening
6 to 7 tablespoons ice cold water

Steps:

  • Preheat the oven to 370 degrees F.
  • Roll out the dough on a lightly floured work surface into an 11-inch round about 1/8-inch thick. Transfer the dough to a 9-inch pie pan. Trim off any overhanging dough to make a 1/2-inch wide overhang around the edge of the pan. Flute the edges of the dough with your fingertips.

Using either a fork or your hands, carefully press the mixture together to form a soft ball. Wrap in plastic wrap and refrigerate at least 30 minutes.
  • Preheat oven to 350 degrees F.
  • Remove the dough from the refrigerator and place it on a lightly floured surface. Roll out the dough on the floured surface into a circle about 12-inches in diameter and 1/8-inch thick. 6 firm crisp apples, washed, quartered, and cored but not peeled (like Jonathon or Macintosh)
1/2 cup granulated sugar
2 tablespoons all-purpose flour

1/2 cup light brown sugar
1/2 cup unsifted all-purpose flour

Steps:

  • For the filling: coarsely grate the apples with their skins on.
  • Mix apples thoroughly with sugar, flour, lemon juice, cinnamon, and salt.

1 1/2 cups gluten-free flour (Bob's Red Mills All Purpose Gluten Free Flour, Avail at Kroger & online)
1/3 cup cornstarch
1/2 cup sugar
1 teaspoon xanthan gum (Bob's Red Mills)
8 tablespoons butter, cut into pieces
1 large egg
1 tablespoon gluten-free vanilla extract (Available online at the Gluten Free Pantry)
7 medium apples, peeled, cored and very thinly sliced. Use mildly sweet to tart very crisp apple (such as Granny Smith, Braeburn, Cortlands)
1/2 cup sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
3/4 cup light brown sugar
3/4 cup gluten-free flour (See above)
1/2 teaspoon ground nutmeg
1/3 cup butter, chilled & cut into small pieces

Steps:

  • ***Pastry Crust Instructions***.
  • In a mixing bowl stir together the flour, xanthan gum and cornstarch.
  • Then add the sugar, butter, egg and vanilla and mix until combined.
  • Remove dough from bowl and knead and fold on a surface dusted with GF flour until well well combined.
  • Divide into two pieces and wrap in plastic wrap, place one in the refrigerator to chill and place the other in the freezer for later use.
  • --Go ahead and make Apple Filling while the Pastry Crust is chilling.

  • After approx 20 minutes, remove dough from refrigerator and roll into a ball.
  • Using a rolling pin, roll the dough out on a lightly GF floured surface until it is the thickness of a normal pie crust.
  • Place crust in a 9 inch glass pie dish that is lightly sprayed with non stick spray.
  • Using a fork poke a bunch of holes in the sides and bottom of the crust.

  • In a large bowl mix apples, sugar, cinnamon, nutmeg and salt.
  • Set aside and let the juices mix.
  • ***Crumble Topping Instructions***.
  • In small bowl mix together brown sugar, GF flour and nutmeg.
  • Next mix in the chilled butter and cut it in with a fork or other tool until you have a course crumbly mixture.
  • ***Assembling your Pie***.
  • Preheat oven to 400°F.
  • Spoon apples into your pie crust, mounding in the middle and pouring the sugary juices over top.
  • Sprinkle your Crumble Topping all over the top (use it all).
  • Use tin foil to cover edges of crust as it will burn easily.
  • Bake for approximately 35 minutes, topping will be lightly browned and filling will be bubbly.
  • Let cool for at least an hour before serving.

1 1/2 stick cold butter (cut into small cubes)
1 c all purpose flour
6 Tbsp brown sugar
1 c quick cooking oats
1 tsp cinnamon, ground
1/2 tsp nutmeg, ground
PIE FILLING:
1/2 c granulated sugar
1/3 c all purpose flour
1 tsp cinnamon, ground
1/2 tsp nutmeg, ground
1 Tbsp lemon juice
1 c blueberries, fresh or frozen
1 c raspberries, fresh or frozen
3 granny smith apples (peeled, cored and sliced)
1 frozen pie crust

Steps:

  • 1. let a frozen pie crust defrost while you make the topping and the filling.
  • 2. Streusel topping: mix ingredients with a fork or pastry cutter until combined and crumbly.
  • 3. Pie filling: peel core and slice the apples, add 1 tablespoon of lemon juice and toss.
  • 4. Mix flour, sugar, cinnamon & nutmeg to combine.
  • 5. Do not defrost berries if you are using frozen, toss berries into sliced apples.
  • 6. Add Flour mixture and toss by hand until apples and berries are completely coated.
  • 7. Mound the apple berry mixture into your unbaked pie crust.
  • 8. Press the streusel over the top of the pie gently, making sure to cover most of fruit and packing it in gently.
  • 9. Bake on a cookie sheet or sheet pan at 350 degrees for 45-55 mins.
  • 10. Let cool and come to room temperature before cutting or serving.

Steps:

  • Preheat your oven to 400°F.
  • Peel, pit and slice your peaches and do the same for the apple. Make sure your apple is sliced very thinly. Combine the fruit in a medium sized bowl and set aside.
  • Roll out the pie crust and sprinkle it with a pinch of your sugar.
  • Add the rest of your sugar, vanilla, cinnamon and nutmeg to your fruit mixture and fold together. Fill your pie crust with the fruit mixture.

1/2 cup sugar
3 t. flour
3 t. butter, softened
2 egg yolks
1/2 cup cream
1 t. apple pie spice or 1 t. cinnamon

Steps:

  • 1. Put apples in food processor and blend for about 5 seconds or until apples re coarsely chopped. Add remaining ingredients and blend until apples are finely chopped but not pureed. Place apple mixture in a buttered 9 inch pie plate and bake at 350 for 35 minute or until pie is almost set. Spread top with Lemon Meringue Topping (recipe follows) and return to oven. Continue baking for about 20 minutes or until top is golden brown. Allow to cool and cut into wedges to serve. Serves 8 Note: The only thing to watch is that the apples don't get pureed in blending. If you blend too long, apples with turn into a soupy sauce and pie will not bake properly Lemon Meringue Topping: 2 egg white 1/4 cup sugar 1 T. grated lemon peel Beat egg whites until foamy. Gradually add sugar and beat until meringue is stiff. This is not a light meringue, but a denser version. Beat in the lemon peel.   • For crust:
