Time 30m

Yield 8 pies

Number Of Ingredients 14

4 tablespoons unsalted butter
1/4 cup light brown sugar
2 Granny Smith apples, peeled, cored and chopped
2 Gala apples, peeled, cored and chopped
1 tablespoon maple syrup
1/2 lemon, juiced
2 tablespoons ground cinnamon, divided
1/4 teaspoon ground ginger
1/8 teaspoon freshly grated nutmeg
1 box ready-made pie crusts (recommended: Pillsbury)
Peanut oil, for frying
1/2 cup granulated sugar
1 tablespoon ground cinnamon
Vanilla ice cream, for topping

Steps:

  • To a large saute pan over medium heat, melt the butter. Stir in the brown sugar, and the apples and saute until they are tender, about 5 to 6 minutes. Drizzle in the maple syrup, lemon juice, cinnamon, ginger, and nutmeg. Continue cooking for 5 minutes more until the apples are completely softened. Remove them from the pan and allow them to cool while you prepare the dough.
  • Roll out both pieces of pie dough onto a floured surface. Cut out eight 6-inch circles and lay them out onto a parchment-lined sheet tray. Put a heaping tablespoon of the apple pie filling into the center of each round Fold the circles in half and seal their edges with the tines of a fork.
  • In a deep-fryer or heavy-bottomed pot, heat enough peanut oil to come halfway up the sides of the pot, to 350 degrees F.
  • Whisk together the sugar and cinnamon in a small bowl and reserve.
  • Fry the pies, 3 at a time, in the hot peanut oil until they are golden brown and crisp, about 3 minutes. Transfer the finished pies to a paper towel-lined sheet tray. Once they are cool, toss them in the cinnamon sugar and serve with vanilla ice cream.

Ingredients

Before you start baking, it's essential to ensure that you have all the necessary ingredients for your apple pie a la mode sandwich cookies. Here's a list of ingredients you will need: - All-purpose flour - Rolled oats - Baking soda - Baking powder - Salt - Cinnamon - Nutmeg - White sugar - Brown sugar - Unsalted butter - Eggs - Vanilla extract - Vanilla ice cream - Apple pie filling

Baking Tips

1. Soften butter before use: To ensure that your cookies are soft and chewy, it's essential to use softened butter. Softened butter combines well with other ingredients, which creates a dough that is neither too stiff nor too loose. 2. Use fresh ingredients: Fresh ingredients are essential to achieving the best taste and texture. Ensure that you use fresh apples for your apple pie filling, and fresh vanilla ice cream for the creamy filling. 3. Properly measuring ingredients: Ensure that you accurately measure all ingredients, especially flour. Too much flour can make the dough too dry and crumbly, while too little flour can make the dough too wet and sticky. 4. Chilling the dough: Chilling the cookie dough before baking helps the cookies to hold their shape and prevents them from spreading too much. Ensure that you chill the dough for at least 30 minutes before baking.

Apple Pie Filling Tips

1. Use apples that hold their shape: To achieve the right texture for your apple pie filling, use apples that hold their shape, such as Granny Smith or Honeycrisp apples. 2. Cook over low heat: Cooking the apple pie filling over low heat allows the apples to cook evenly and keep their shape. It also allows the flavors to blend well. 3. Add spices: Adding spices such as cinnamon and nutmeg enhances the flavor of the apple pie filling and gives it a warm, cozy taste.

Ice Cream Filling Tips

1. Soften the ice cream: Soften the ice cream before mixing it with the filling ingredients; this will make it easier to combine. 2. Add flavors: Add vanilla extract or cinnamon to the softened ice cream to enhance the flavor and give it a unique taste. 3. Scooping the ice cream: Scoop the ice cream into the center of each cookie using an ice cream scoop to ensure that the filling is even and uniform.

Assembly Tips

1. Use a piping bag: Using a piping bag to add the apple pie filling and ice cream into each cookie creates a neat and organized cookie. 2. Use a cookie scoop: A cookie scoop or ice cream scoop can help you make even-sized cookies, making it easier to match the cookies. 3. Use a warm knife: Use a warm knife to make clean and precise cuts through the ice cream filling, making it easier to make the cookies look presentable.

Conclusion

Apple pie a la mode sandwich cookies are a great treat for all seasons, and the tips above can help you make these cookies with ease. By following these guidelines, you can create a dessert that is sure to impress your family and friends. Remember to use fresh ingredients, accurately measure ingredients, and use the right equipment. Good luck, and have fun baking!
