Number Of Ingredients 12

2 sweet red apples (6 ounces each), such as Braeburn or Jonagold, peeled, cored, and sliced 1/8 inch thick
1 tablespoon fresh lemon juice
1 tablespoon unsalted butter or nondairy margarine
3/4 cup granulated sugar
1 teaspoon ground cinnamon
2 tablespoons sweet kosher wine
Vegetable oil cooking spray, for pan
6 large eggs, room temperature, separated
1 1/4 cups toasted pecans, finely ground
1/4 cup matzo cake meal (or finely ground matzo meal)
1/2 teaspoon salt

  • Preheat oven to 350 degrees. Coat a 9-inch springform pan with cooking spray. Whisk together yolks and 1/4 cup granulated sugar with a mixer on medium-high speed until pale and thick, about 3 minutes. Transfer to a large bowl; fold in apples, pecans, matzo cake meal, and remaining 1/2 teaspoon cinnamon.
  • Whisk whites, salt, and remaining 1/4 cup granulated sugar in a clean bowl of a mixer until stiff, glossy peaks form. Working in 3 batches, gently fold whites into batter. Pour into pan. Bake until top is brown and a toothpick comes out clean, about 35 minutes. Let cool.
  • Run a knife or an offset spatula around edge of torte. Remove from pan. Garnish with confectioners' sugar.

Apples
When choosing apples for your torte, look for firm and slightly tart varieties, such as Granny Smith, Honeycrisp, or Braeburn. Avoid apples that are too sweet or soft, as they won't hold their shape during baking. Peel and core the apples before using them in the recipe.
Pecans
Choose fresh, unsalted pecans for your torte. Toast them lightly in a dry pan before using them in the recipe. This will enhance their flavor and give them a crispy texture.
Flour
Use all-purpose flour for your torte. Sift it before using it in the recipe to remove any lumps or impurities.
Sugar
Use granulated sugar for the cake batter and brown sugar for the pecan topping.
Butter
Use unsalted butter for the cake batter and pecan topping.
Eggs
Use large, room-temperature eggs for the cake batter.
Vanilla Extract
Use pure vanilla extract for the best flavor.
Baking Powder
Use aluminum-free baking powder to avoid any metallic taste in your torte.

Tip 2: Prepare the Ingredients Properly

To make a perfect apple pecan torte, you need to prepare the ingredients properly. Here are some tips to help you:
Apples
Peel, core, and slice the apples into thin wedges. Toss them with lemon juice to prevent them from turning brown.

Flour
Sift the flour into a bowl to remove any lumps or impurities.
Sugar
Measure the sugar accurately and set it aside.
Butter
Cube the butter and let it soften at room temperature.
Eggs
Let the eggs come to room temperature before using them.

To make a perfect apple pecan torte, you need to use the right equipment. Here are some essentials:
Measuring Cups and Spoons
Use accurate measuring cups and spoons to measure the ingredients.
Bowls
Use large mixing bowls to prepare the batter and the pecan topping.
Electric Mixer
Use an electric mixer to beat the butter and sugar together until creamy.
Rubber Spatula
Use a rubber spatula to mix the ingredients and scrape the sides of the bowl.
