2 1/2 lbs apples, peeled, quartered, cored, and sliced to yield about 6 cups (about 6 medium, Granny Smith works well)
2 -3 tablespoons sugar
1/4 teaspoon ground cinnamon
1 tablespoon all-purpose flour
1 cup all-purpose flour
5 tablespoons brown sugar
2 tablespoons sugar
1/2 cup finely chopped nuts (I like pecans)
4 ounces unsalted butter, cut into small pieces and chilled

Steps:

  • Preheat oven to 350.
  • To make the filling--In a 9-inch pie pan that's 2 inches deep (or a similar baking pan), toss the apples with the sugar to taste, cinnamon, and flour.
  • To make the topping--In a medium bowl, mix together all the topping ingredients with your fingers or a pastry cutter until small pebbly pieces of butter are distributed throughout the mixture.
  • Sprinkle the entire mixture over the apples.
  • Bake until the topping is golden and the fruit is bubbling and tender, about 1 hour and 15 minute.
  • for a large crisp and 1 hour for individual crisps.
  • Cool slightly before serving.
  • You can make individual crisps by dividing the filling and topping among six ramekins or individual gratin dishes.
  • Serve with heavy cream or a scoop of vanilla ice cream.
  • Serves six.

2 1/2 pounds Golden Delicious apples (6 or 7 medium apples), peeled, cored, and thinly sliced
1 tablespoon fresh lemon juice
1/2 cup granulated sugar

3 tablespoons applejack
3 tablespoons unsalted butter, cut into 1/4-inch cubes
1 1/2 cups fresh or frozen raspberries (not in syrup)

Steps:

  • 1. To make the pecan topping, place the flour, brown sugar, cinnamon, and salt in a food processor and pulse until combined. Add the butter pieces and pulse a few times, just until the mixture resembles coarse meal. Add the pecans and pulse just until they are coarsely chopped.
  • 2. Preheat the oven to 350 degrees F. Butter the bottom and sides of a 9-by-13-inch glass baking dish.
  • 3. To make the fruit filling, in a large bowl, toss the apple slices with the lemon juice. Add the granulated sugar, flour, and cinnamon and stir to combine. Add the apple brandy and butter cubes and toss until combined. Gently toss in the raspberries. Evenly spread the apple mixture in the prepared pan. Sprinkle the pecan topping evenly over the filling.

6 granny smith apples
1 cup dried cherries (or 1 1/2 cups fresh)
1 cup orange juice
1 cinnamon stick
1/2 cup raspberry liqueur
1/4 cup brown sugar
5 cups all-purpose flour
1 1/2 cups brown sugar
1 1/2 cups sugar
1 teaspoon salt
1 1/2 lbs butter
1 1/2 cups pecans

Steps:

  • Peel and core apples. Cut into 1/8-inch pieces. Simmer all filling ingredients until apples become soft.
  • Put first 4 ingredients in mixer bowl with paddle attachment.

- 1/4 tsp. salt

- 3/4 cup old fashioned rolled oats
- 3/4 cup chopped pecans
- filling:
- 3/4 cup dried cranberries
- 3/4 cup brandy, boiling
- 4 lb. granny smith apples, peeled, cored and cut into 1/2 inch thick slices, about 9 apples
- 3/4 cup pure maple syrup
- 2 tbsp. fresh lemon juice
- 2 tbsp. flour
- 3/4 tsp. ground cinnamon
- 1/4 tsp. salt

Steps:

  • Preheat oven to 350. For streusel, whisk together 1 1/2 cups flour, sugar, brown sugar and 1/4 tsp. salt in bowl. Cut butter into flour mixture using a pastry blender til butter is pea sized
  • Mix oats and pecans into flour mixture with your hands til thoroughly mixed. Cover and refrigerate
  • For filling, soak cranberries in brandy, covered, til plumped, 20 minutes. Drain brandy and save for another use. 2/3 cup dark brown sugar
1 cup rolled oats
1 teaspoon cinnamon
1/2 cup chopped pecans
1/2 cup cold butter or vegan butter stick, cut into small cubes
10 medium Honeycrisp, Braeburn or Granny Smith apples, peeled, cored and thinly sliced
1/2 cup pure maple syrup
2 teaspoon cinnamon
2 tablespoon vanilla extract or bourbon (optional)

Steps:

  • Preheat oven to 350 degrees F. Generously grease 2 8x8 baking pans with nonstick cooking spray. To make the topping: Combine the flour, oats, brown sugar, cinnamon and pecans in a large bowl until well-combined. Add in the pieces of butter and use your hands to squeeze and combine until the mixture becomes crumbly and resembles wet sand. (Alternatively, you can cut in the butter with a pastry cutter, or place all of the topping ingredients in a food processor and pulse until just blended. My favorite method is to use my hands, as I believe you get the best crumbly topping that way.) Once finished, place topping in the fridge and begin making the apple filling. To make the filling: Place apples, maple syrup cinnamon and bourbon in a large bowl and toss to combine. Take a heaping 1/2 cup of the topping mixture and toss with the apple mixture.
