APPLE-OATMEAL COOKIES

Apple-Oatmeal Cookies image

My family went through an oatmeal phase one brutal winter when we all wanted a nice hot bowl of oatmeal for breakfast every day. Except for Buddy Jr., who hated oatmeal. Lisa tried everything, but nothing worked, till she tried Granny Smith apples, with a little help from brown sugar and cinnamon. That combination led to these cookies, which are packed with flavor and texture, and just as welcome on a cold, wet day as those bowls of oatmeal were.

Provided by Buddy Valastro

Categories     dessert

Time 55m

Yield 16 large cookies

Number Of Ingredients 12

1 1/2 sticks plus 2 teaspoons unsalted butter, softened at room temperature
2 small Granny Smith apples, peeled, cored, and cut into 1/2-inch dice
2/3 cup plus 1 teaspoon light brown sugar
1/8 teaspoon ground cinnamon
Kosher salt
1 large egg
1/2 teaspoon pure vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking soda
2 cups oats
1 1/4 cup confectioners' sugar
1/4 teaspoon pure vanilla extract

Steps:

  • Position a rack in the center of the oven and preheat the oven to 350 degrees F.
  • Heat a small, heavy saucepan over medium-high heat. Add 2 teaspoons of the butter, and let melt. Add the apple, 1 teaspoon of the brown sugar, the cinnamon, and a scant pinch of salt, and stir well to combine. Cook, stirring occasionally, until the apples are slightly softened, about 3 minutes.
  • In the bowl of a stand mixer, cream the remaining butter and brown sugar on medium-high speed until the mixture appears light and fluffy. Add the egg and vanilla and beat until incorporated.
  • Combine the flour, baking soda, and 1/4 teaspoon salt in a separate bowl. With the mixer on low, beat in the dry ingredients, including the oats, then fold in the apples by hand.
  • Line 2 baking sheets with parchment paper. Scoop out 2 tablespoons of dough at a time and arrange them at least 2 inches apart on the prepared cookie sheet. Bake, rotating the sheets top to bottom halfway through baking, until the cookies appear set, 15 to 17 minutes. Remove and let cool for a few minutes on the sheet, then transfer to a baking rack to cool completely.
  • To make the optional glaze: Put the confectioners' sugar, the vanilla extract, and 1 tablespoon water in a medium mixing bowl and whisk until the mixture is smooth. Drizzle the glaze over the cookies using a spoon.

Valuable Tips When Making Apple Oatmeal Bar Cookies

When it comes to baking, there are few things as satisfying as the aroma of warm and freshly baked cookies. Apple oatmeal bar cookies are a delicious and tasty treat that perfectly combines the goodness of oats with the sweetness of apples. However, making these cookies can be a bit tricky. Here are some valuable tips to keep in mind to ensure that your apple oatmeal bar cookies turn out perfect every time.
1. Choosing the Right Apples
The first step towards making delicious apple oatmeal bar cookies is choosing the right kind of apples. Opt for firm and crisp apples like Granny Smith, Honeycrisp, or Braeburn. These apples hold their shape when baked and have the perfect balance of tartness and sweetness. Apples like Red Delicious or McIntosh are best avoided as they tend to turn mushy when baked.
2. Measuring the Ingredients Accurately
Measuring the ingredients accurately is crucial when baking. Use measuring cups and spoons to measure out the ingredients for your apple oatmeal bar cookies. Avoid using the "eyeballing" method, as it can lead to inaccurate measurements and affect the texture and taste of your cookies.
3. Preparing the Apples
Before incorporating the apples into your cookie dough, it is essential to prepare them correctly. Peel, core, and finely chop the apples into small pieces. This ensures that the apples cook evenly and do not turn mushy during baking.
4. Mixing the Dough
When mixing the dough for your apple oatmeal bar cookies, be careful not to overmix. Overmixing can lead to tough and chewy cookies. Mix the ingredients until they are just combined.
5. Adding the Apples
When adding the chopped apples to the cookie dough, fold them in gently. Do not overmix or stir too vigorously, as this can break down the structure of the dough.
6. Choosing the Right Baking Pan
The type of baking pan you use can affect the texture and baking time of your cookies. Use a 9x13-inch baking pan for apple oatmeal bar cookies. This ensures that the cookies bake evenly and do not become too thin or burnt on the edges.
7. Preheating the Oven
It is essential to preheat your oven to the correct temperature before baking your cookies. This ensures that the cookies bake evenly and are cooked to perfection.
8. Using Parchment Paper
Using parchment paper to line your baking pan is a great way to ensure that your apple oatmeal bar cookies do not stick or burn. The parchment paper also makes it easy to remove the cookies from the pan without breaking them.
9. Checking the Cookies Regularly
Check your cookies regularly while they are baking to ensure that they do not overcook or burn. The baking time can vary depending on the type of oven you have and the thickness of your cookies. Keep an eye on them and remove them from the oven when they turn golden brown.
10. Letting the Cookies Cool
Once you have removed the cookies from the oven, let them cool completely before cutting them into bars. This allows the cookies to set and ensures that they hold their shape. In conclusion, following these valuable tips can help you make the perfect apple oatmeal bar cookies. With the right ingredients, preparation, and baking techniques, you can enjoy delicious and wholesome cookies that are perfect for any occasion.
