- Preheat oven to 350 degrees F (175 degrees C). Lightly grease or line 24 muffin cups.
- In a large bowl, cream together butter and 1 1/2 cup sugar. Beat in eggs and vanilla. Combine flour, baking powder, baking soda and salt. Stir into the creamed mixture alternately with sour cream. Fold in apple pie filling and walnuts. Spoon batter into prepared muffin cups. Combine 1/4 cup sugar and cinnamon; sprinkle over the muffins.
- Bake in preheated oven for 16 to 18 minutes, until a toothpick inserted into the center of a muffin comes out clean.

- 1. Full directions are on the box of whole wheat pancake mix, by A.J. THESE ARE WONDERFUL RECIPES, WHICH I WILL USE MANY TIMES. THEY ARE QUICK, EASY AND PERFECT.
- 2. The Apple-Walnut Muffins are made in several steps: First you measure the dry ingredients into a large bowl, and set aside.
- 3. In a medium sized bowl, mix one egg, one cup milk, one tablespoon oil, one small or individual-size serving of "Natural" apple sauce (unsweetened); and blend together.
- 4. Measure out one and one/half cups of POST Raisin Bran Cereal, and stir into the liquid ingredients.
- 5. The Granny Smith apple needs to be cored, peeled and shredded. I prefer to use one large G.S. Apple. I also use 1 cup of chopped walnuts, coarsely chopped.
- 6. Combine the wet ingredients with the dry ingredients in the large bowl and stir in the apple and walnuts.
- 7. Have a twelve-cup Medium-size muffin pan sprayed with oil, and an ice-cream scoop also sprayed with oil ready. The oven should be preheated to 425 degrees.
- 8. Scoop the batter into the muffin tin and bake for at least 25 minutes. Remove tin and let rest on the counter on a cake rack for a few minutes, then loosen muffins. Enjoy one (or two) while warm with a nice hot cup of coffee for breakfast each morning! We do!

- Line 16 muffin tins with paper liners.
- In a large bowl, sift together flour, sugar, baking powder, 1/2 teaspoon cinnamon and salt.

- Set oven to 350F [always pre-heat when baking!] and allow cold ingredients [milk/yogurt/eggs/butter] to reach room temperature. Next coarsely grate your apple [simply grab a cheese grater!] and mash the banana with a fork. Add both to a skillet along with coconut oil, honey, cinnamon, allspice, and nutmeg and saute until tender and fabulously fragrant [a few minutes should be perfect, adjust the cinnamon to smell/taste]. Remove from heat and allow to cool to room temperature. While you wait, mince your walnuts until they're super fine [feel free to use a knife or food processor] and combine with remaining streusel ingredients. Mash/mix with a fork or fingers and taste as you go to make the mixture as sweet or cinnamon-y as you like. The result should be a crumbly, buttery streusel that you can't keep your fingers out of =) Set aside.
- Next combine carefully measured flours, baking soda, baking powder, and salt in a medium/small mixing bowl and stir well to incorporate. In a large bowl, whisk together eggs with yogurt or milk, and add the cooled sauteed apple-banana mixture. Using a sifter or sieve [even a slotted spoon will do the trick!], slowly sift flour into wet mixture as you mix the two. I skipped the beater in favor of a fork out of pure laziness. Stir until just combined, spoon batter into a lightly greased/sprayed muffin tin, and top with as much streusel topping as your heart desires.
- Bake at 350F for 15-17 minutes depending on muffin size. Test with a toothpick in the center around the 15 minute mark and if it comes out clean, pull the muffins; otherwise, test again in a minute or two. Allow to cool and enjoy!
- I highly recommend stuffing at least one in your face once they're still hot. So. Much. Yum! Wrap tightly and store on your counter for a few days if needed; 25 seconds in the microwave makes these absolutely divine the next day! Serve them straight up [they can handle it!] or slathered in apple butter, coconut butter, or even peanut butter.
- I took some of the batter [about 3 muffins worth] and tossed it into a mini 4-inch foil loaf pan. If you lack a muffin tin, feel free to make this recipe into a few small or medium loaves of apple cinnamon banana-nut bread instead. Simply bake for a bit longer and remove from heat once a toothpick comes out clean from the center. Small loves will take around 24 minutes and larger ones will take anywhere from 30 minutes to 45 minutes to bake.

- 1. Preheat oven to 375 degrees. Grease a12 cup muffin pan or line with papers and spray the papers with non stick.(apples like to stick to papers).
- 2. Mix together the butter, white sugar and 1/4 cup of the brown sugar. Beat until light and fluffy. (the creaming method). Add the eggs and mix well. Gently mix in the buttermilk or yogurt.
- 3. Whisk the dry ingredients in a bowl, then add to the batter. Do not over mix. Add the chopped apples. Make sure they are chopped pretty small, like the size of a peanut. If the batter seems too thick, add a tablespoon of milk to it, mixing a bit more. It will be pretty thick.
- 4. Divide the batter between the 12 muffin cups and sprinkle the remaining 1/2 cup of brown sugar on top. (if you have extra batter, you can bake it in a small oven proof bowl or cup or another muffin pan.) Bake 25-30 minutes or until a toothpick comes out with only moist crumbs and the top of the muffin is springy when you touch it with your finger. Remove from the oven andc ool 5 minutes in the pan. Then put them on a cooling rack to finish cooling.
