3 extra-large eggs, at room temperature
3/4 cup vegetable oil
2 teaspoons pure vanilla extract
2 teaspoons grated orange zest (2 oranges)
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon kosher salt
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/8 teaspoon ground cloves
1 1/2 pounds Granny Smith apples, peeled, cored, and 1/4-inch-diced (3 to 4 apples)
Vanilla ice cream, such as Haagen-Dazs
Caramel sauce, such as Fran's, heated

Steps:

  • Preheat the oven to 350 degrees F. Grease and flour a 9-by-13-by-2-inch baking pan.

CAKE:
4 c chopped peeled apples
2 c sugar
2 eggs
1/2 c vegetable oil
1 tsp almond extract
2 c all purpose flour
2 tsp baking powder
1 tsp salt
1 tsp cinnamon
1/2 c chopped pecans
SAUCE:
1/2 c butter
1 c sugar
2 Tbsp all purpose flour
1/8 tsp salt
1 c water
1/2 tsp rum extract

Steps:

  • 1. In large bowl, combine the apples and sugar let stand for 30 mins.
  • 2. In a small bowl, whisk the eggs, oil, and almond extract. Add to teh apple mixture and toss to coat. Combine the flour, baking powder,salt, and cinnamon, stir into apple mixture just until moistended. Stir in pecans. (if you like nuts add some more to suit your taste)
  • 3. Transfer mixture to a large greased 11-inch x 7inch x 2in baking dish. Bake at 350 for 35 - 40 minutes, or until toothpick comes out clean.
  • 4. For sauce, in a small saucepan, melt butter. Stir in the sugar, flour, and salt until smooth. Gradually add water. Bring to a boil, cook and stir for 2 minutes. Remove from heat, stir in vanilla and rum extract. Serve with warm cake. ( I drizzle it over the entire cake, then serve.
