Time 25m

Number Of Ingredients 21

2¼ cups (270 g) whole wheat pastry flour
1 cup (213 g) (213g) packed light or dark brown sugar
1 tablespoon baking powder
¼ teaspoon kosher salt
2 teaspoons ground cinnamon
¼ teaspoons ground nutmeg
⅔ cup (160 mL) vegetable oil
½ cup + 2 tbsp (142 mL) milk
2 large eggs (room temperature)
1½ teaspoon vanilla extract
1½ cups peeled, chopped apples (about 2 medium apples)
½ cup (48 g) whole wheat pastry flour
1/8 teaspoon kosher salt
¼ cup (53 g) (53 g) packed light or dark brown sugar
2 tablespoons granulated sugar
½ teaspoon ground cinnamon
¼ cup (1/2 stick, 57 g) unsalted butter (melted)
1 cup (120 g) confectioners sugar
2-3 tablespoons milk (or heavy cream)
½ teaspoons ground cinnamon
½ teaspoon vanilla extract

Steps:

  • Preheat and prepare pan. Preheat oven to 375oF. Line pan with paper muffin cups or grease the wells and top of pan with non-stick cooking spray.
  • Make crumb topping. In a small bowl, combine flour, salt, brown sugar, granulated sugar and cinnamon. Work butter into mixture until crumbly. Set aside.
  • Combine dry ingredients. Whisk together the flour, brown sugar, baking powder, salt, and spices in a large bowl. Make a well in the center by pushing the dry ingredients to the side and creating a hole in the middle.
  • Combine wet ingredients. In a second mixing bowl, whisk together oil, milk, eggs, and vanilla extract.
  • Add wet to dry. Pour wet ingredients all at once into the well in the flour mixture. Mix quickly and lightly with a rubber spatula, but do not overbeat. The batter will be lumpy. Stir in apples. Divide the batter into the wells, filling each well.
  • Sprinkle on crumb topping.
  • Bake muffins. Bake for 25 minutes, or until golden and a toothpick inserted comes out clean. Allow to cool in the pan for 5 minutes, then transfer each muffin to a wire cooling rack to continue to cool.
  • Make icing. In a small mixing bowl, stir together all icing ingredients. Adjust consistency if needed. Drizzle on cooled muffins.

Tips for Making Perfect Apple Muffins

Making apple muffins with whole wheat blend flour is easy, but there are some tips and tricks to keep in mind to ensure that your muffins turn out perfectly. First, it's important to use fresh, ripe apples that are in season. This will ensure that the apple flavor is strong and the apples are tender. Third, be sure to grease your muffin tin well or use muffin liners to prevent the muffins from sticking. Finally, be sure to let the muffins cool for a few minutes in the pan before removing them to cool completely on a wire rack. This will help prevent them from falling apart.

Apple muffins are a great way to incorporate healthy ingredients and get a dose of fiber and vitamins in your diet. With the use of whole wheat flour, the muffins become more filling and have a nuttier taste. Here are some valuable tips to consider when making apple muffins with whole wheat blend recipes.

Tip 1: Choose Fresh Organic Apples

Fresh and organic apples are the best when it comes to making apple muffins. Fresh apples have a rich taste and a crispy texture that gives your muffins the perfect balance of sweet and sour. Organic apples are free of pesticides and other harmful chemicals, making them a healthier choice for consumption. Choose high-quality apples from reputable sources to ensure you get the best results.

Tip 2: Use Whole Wheat Flour

Whole wheat flour gives your apple muffins a healthy twist, and it's a great alternative to all-purpose flour. Whole wheat flour is packed with nutrients, including fiber, vitamins, and minerals. It also has a nutty flavor that adds a unique taste to your muffins. Substitute some or all of the all-purpose flour with whole wheat flour for a healthier option.

Tip 3: Add Spices

Spices are a great addition to apple muffin recipes. Cinnamon is a popular spice that pairs well with apples and whole wheat. It adds a warming flavor to the muffins and enhances the sweetness of the apples. Nutmeg and ginger are also great spices that can be added to the recipe to enhance the flavor. Add spices to taste, but be careful not to overdo it.

Tip 4: Don't Overmix the Batter

Overmixing the batter can cause your muffins to become tough and chewy. Mix the ingredients until they are just combined, leaving some lumps in the mixture. This will result in light and fluffy muffins that are not overly dense. Overmixing also releases gluten, which can result in a tougher texture.

Tip 5: Add Healthy Toppings

Toppings are a great way to add flavor and nutritional value to your apple muffins. Chopped nuts, such as almonds, pecans, or walnuts, are a great topping option for added crunch and healthy fats. Other toppings like granola, yogurt, or fruit can also be added for a sweet and healthy twist. Toppings can be added before, during, or after baking, depending on the recipe.

Tip 6: Use Muffin Liners

Muffin liners help prevent the muffins from sticking to the pan, making them easier to remove. They also make cleaning up a breeze. Choose liners made of parchment paper or silicone to avoid any harmful chemicals that might be present in other liners. If you don't have liners, you can grease the muffin tin with cooking spray or butter.

Tip 7: Preheat the Oven

Preheating the oven ensures that the muffins will cook evenly and have a nice texture. Preheat the oven to the temperature recommended in the recipe, usually around 375°F. This will give the oven enough time to reach the desired temperature so that your muffins cook perfectly.

Tip 8: Measure Ingredients Accurately

Accurately measuring the ingredients is crucial when baking. Use a kitchen scale or measuring cups to ensure that you add the right amount of ingredients to the mixture. Too much flour or sugar can result in dense or flat muffins, while too little can lead to dry and crumbly muffins. Follow the recipe and measure the ingredients accurately for consistent and perfect muffins.

Tip 9: Use Room Temperature Ingredients

Room temperature ingredients blend together more easily, creating a smoother texture. Take out the ingredients like eggs, butter, and milk from the fridge at least half an hour before baking. This will allow them to come to room temperature and create muffins with a better texture and flavor.

Tip 10: Don't Overbake the Muffins

Overbaking muffins can make them dry and hard. Pay close attention to the baking time recommended in the recipe and monitor the muffins closely. Insert a toothpick or skewer into the center of the muffin, and if it comes out clean, it's done. Remove the muffins from the oven immediately after they're done, and let them cool on a wire rack.

Conclusion

Baking apple muffins with whole wheat blend recipes requires careful consideration of the ingredients and baking technique. Choosing fresh organic apples, using whole wheat flour, adding spices, measuring ingredients accurately, and adding healthy toppings are among the valuable tips that can make your apple muffins healthier and tastier. Follow these tips, and you'll end up with delicious and nutritious apple muffins that you'll love.
