This is a very old recipe from the "Out of Old Nova Scotia Kitchens" cookbook, and was used in times when certain ingredients such as sugar and butter were expensive and scarce. However, these are very yummy, especially if you like something not too sweet. (You can add more sugar if you like a sweeter flavor.) The thing that makes these extra nice is the brown sugar/cinnamon topping. It almost caramelizes....mmmmmm. You can add in raisins or anything else you like. Please note these have more of a bread like texture, that's the way they're supposed to be. Enjoy!

2 cups flour
4 teaspoons baking powder
3 tablespoons sugar
1/2 teaspoon salt
2 teaspoons cinnamon and brown sugar
2 tablespoons melted butter
1 egg, beaten
1 cup milk
1 cup diced apple (I prefer Granny Smith)

Steps:

  • Sift dry ingredients together 3 times.
  • Add combined liquids and then add apples.
  • Fill greased muffin pan 2/3 full and sprinkle with Cinnamon and B. Sugar mixture. Bake in hot oven at 400 degrees for 20-25 mins (sometimes less, keep an eye on them).

1 medium apple, peeled and cut into 24 slices
TOPPING:
1/3 cup all-purpose flour
1/4 cup packed brown sugar

2 tablespoons cold butter

Steps:

  • In a large bowl, beat butter and brown sugar until crumbly, about 2 minutes. Add eggs, one at a time, beating well after each addition. Stir in the buttermilk. Combine the flour, cinnamon, baking soda and salt; add to butter mixture just until moistened. Fold in chopped apples. , Fill paper-lined muffin cups three-fourths full. Place sliced apples over batter. For topping, combine the flour, brown sugar and cinnamon; cut in butter until crumbly. Sprinkle over tops., Bake at 350° for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.
