Moist Passover Apple Cake image

Unbelievably moist cake. Most Passover desserts are very dry but this cake is incredibly moist.

Categories     Desserts     Fruit Dessert Recipes     Apple Dessert Recipes

Time 1h15m

Yield 9

Number Of Ingredients 10

2 tablespoons vegetable shortening, room temperature
3 eggs, separated
½ cup vegetable oil
¼ cup orange juice
1 cup white sugar
1 cup matzo cake meal
½ teaspoon salt
¾ cup white sugar
½ teaspoon ground cinnamon
4 Granny Smith apples - peeled, cored, and quartered

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking dish with vegetable shortening.
  • Beat egg whites in a metal, glass, or ceramic bowl with an electric mixer until stiff peaks form. Lift your beater or whisk straight up: the egg whites should form a sharp peak that holds its shape. Set aside.
  • Place the egg yolks, oil, and orange juice into a mixing bowl; beat with an electric mixer until creamy and thick, about 5 minutes. Stir in 1 cup of sugar, mixing well, then lightly stir in the matzo cake meal and salt. Use a rubber spatula or wire whisk to fold about 1/3 of the beaten egg whites into the matzo meal mixture. Gently run the spatula through the center of the mixture, then around the sides of the bowl, repeating until fully incorporated. Add the remaining egg whites, folding until just incorporated.
  • Mix together 3/4 cup of sugar with cinnamon in a bowl. Spread half the batter into the prepared baking pan; distribute the apple quarters evenly over the batter. Sprinkle the apple pieces with about 1/2 cup of the sugar-cinnamon mixture, spread the remaining batter over the apples; sprinkle the remaining sugar-cinnamon mixture over the top of the cake.
  • Bake in the preheated oven until the cake is golden brown, about 45 minutes. Cut into squares while still warm.

Yield Makes one 8-inch square cake

Number Of Ingredients 12

Nonstick cooking spray
1/2 cup coarsely chopped walnuts or pecans
1 1/2 cups sugar
3/4 teaspoon ground cinnamon
3/4 teaspoon freshly ground nutmeg
3/4 teaspoon mace
3/4 teaspoon ground ginger
3 large eggs
1/3 cup vegetable oil, plus more for baking dish
3/4 cup matzo cake meal
5 medium apples, such as Golden Delicious or Crispin, peeled, cored, halved, and cut into 1/4-inch-thick slices (about 5 cups)
1/3 cup raisins (optional)

Steps:

  • Preheat oven to 350 degrees with a rack set in the center. Lightly spray an 8-inch-square glass baking dish with cooking spray; set aside.
  • Mix together walnuts, 3/4 cup sugar, cinnamon, nutmeg, mace, and ginger in a medium bowl; set aside.
  • In the bowl of an electric mixer fitted with the whisk, beat eggs on medium speed until well combined. Beat in remaining 3/4 cup sugar, 2 tablespoons at a time, until mixture is thick and foamy. With the mixer running, slowly pour in oil. Scrape down the sides of the bowl as necessary. Stir in matzo cake meal.
  • Pour half of the batter into prepared cake pan. Sprinkle over half of the walnut mixture, half of the apples, and raisins. Pour over remaining batter and top with remaining apples; sprinkle over remaining walnut mixture.
  • Transfer cake to oven and bake until the sides of the cake pull away from the baking dish very slightly and topping begins to caramelize, about 1 hour and 15 minutes. Remove cake from oven and let stand for several hours until completely cool, before cutting. Keep cake covered tightly with plastic wrap for up to 2 days, as the flavor improves with age.

CREAMY MATZO-APPLE KUGEL

Creamy Matzo-Apple Kugel image

This sweet and creamy kugel makes an impressive centerpiece for a Passover brunch. You can also serve it for dessert.

Provided by Food Network

Categories     dessert

Yield Serves 6

Number Of Ingredients 13

2 tablespoons plus 2 teaspoons unsalted butter
4 McIntosh apples, peeled, cored, and cut into 3/4-inch slices, 1/4-inch thick
1/2 cup raisins
1/2 cup sliced blanched almonds
10 squares plain unsalted matzo
4 eggs, beaten
2 cups sour cream
1/2 cup whipped cream cheese
3/4 cup sugar
1 teaspoon cinnamon
1/2 teaspoon salt
Softened butter for greasing pan
Confectioners' sugar

Steps:

  • Melt 2 tablespoons of the butter in a large skillet and saute apple slices on high heat, stirring occasionally, until soft and lightly browned. Remove to a large bowl with a slotted spoon. Add 2 teaspoons butter to the skillet, lower heat to medium, and quickly saute raisins and almonds, stirring constantly. Be careful not to burn them. Add to bowl with apples, and set aside.
  • Preheat oven to 350 degrees. Place matzo squares in another large bowl, and run cool water over them to soften. Crumble the matzo, and drain in a colander. Return drained matzo to bowl.
  • Combine eggs with matzo and stir well. In another bowl, mix sour cream and cream cheese thoroughly. Then add it to the matzo mixture, along with sugar, cinnamon, salt, and fruit-nut mixture. Mix all ingredients thoroughly.
  • Grease a 10-inch square Pyrex baking pan (or similar) with butter (use quite a bit), pour mixture into pan, and bake for 50 minutes or until top is a light golden brown. Let cool on counter. Loosen sides with a knife, place a large platter over the baking pan, and carefully turn the kugel out onto the platter. If any pieces stick in the pan, just put them in place. When cooled, sprinkle top with confectioners' sugar (best done through a sieve or sifter). YOu can serve this kugel warm (not hot) or at room temperature, but we like it best chilled in the refrigerator with the confectioners' sugar added just prior to serving.

The recipe for apple matzo cake typically includes the following ingredients: - Matzo meal - Eggs - Sugar - Cooking oil (vegetable or canola) - Apples (peeled, cored, and chopped) - Cinnamon - Salt Additional ingredients may include dried fruits, such as raisins or apricots, honey, or nuts.

Apple matzo cake is a delicious dessert that combines the sweetness of apples and the crunch of matzo. It is typically made during the Jewish holiday of Passover since it is a gluten-free dessert. This cake is easy to make and requires only a few ingredients. In this article, we will share valuable tips that will help you make the perfect apple matzo cake.

Tip 1: Use fresh ingredients

When making an apple matzo cake, it is essential to use fresh ingredients. This cake requires only a few ingredients, but each one must be fresh to ensure that the cake comes out delicious. Choose apples that are firm and not too ripe, as they will hold up better in the cake. Similarly, use fresh eggs and matzo meal to ensure that the cake rises properly and has a good texture.

Tip 2: Use a food processor

Using a food processor to shred the apples will save you a lot of time and effort. It will also ensure that the apples are evenly shredded, which will make the cake more uniform in texture. When using a food processor, be sure to pulse the apples so that they are not completely pureed. It is best to have some texture in the cake, and chunky apple bits will add to the overall flavor and texture of the cake.

Tip 3: Add spices

Spices are an essential component of an apple matzo cake. Adding cinnamon, nutmeg, and cloves will give the cake a warm and comforting flavor. These spices are also great for aiding digestion, which is helpful after a big meal. Be sure to use fresh spices to ensure that they have the most potent flavor.

Tip 4: Let the cake sit before serving

After the apple matzo cake is baked, it is essential to let it sit for at least an hour before serving. This will allow the cake to settle and absorb the flavors fully. It will also allow the matzo meal to absorb the moisture from the apples and eggs, giving the cake a firmer texture. Slicing the cake while it is still warm will cause it to fall apart, so it is best to let it cool before slicing.
Conclusion
Making an apple matzo cake is a simple process that requires a few essential ingredients. Taking care to use fresh ingredients and add spices will ensure that the cake comes out delicious. Using a food processor to shred the apples will save time and effort, and allowing the cake to sit after baking will allow it to settle fully. With these valuable tips, you can make the perfect apple matzo cake for your Passover dessert table.
