- Combine apple juice, maple syrup, bourbon, brown sugar, liquid amino acid, Dijon mustard, and granulated garlic in a saucepan using a whisk over medium-high heat. Reduce heat to medium-low and simmer, stirring occasionally, until glaze thickens and is reduced by about 1/3, about 12 minutes. Let glaze cool.

Steps:
- Heat coals or gas grill for direct heat. In 1-quart saucepan, mix maple syrup, apple butter and mustard. Cook over low heat about 1 minute, stirring occasionally, until well blended.
- Sprinkle pork chops with garlic pepper and salt. Place pork on grill. Brush with maple mixture. Cover and grill over medium heat 10 to 12 minutes, turning and brushing with maple mixture 2 or 3 times, until no longer pink when cut near bone. Discard any remaining maple mixture.

PORK TENDERLOIN W/ ROSEMARY GARLIC MAPLE GLAZE, APPLE ONION HASH
Steps:
- Preheat sous vide machine to 135 degrees F.
- Mix all glaze ingredients in a food processor.
- Set aside about 1/3 of the mixture. Use the rest to rub all over pork loin. Add some additional salt to the loin. Vacuum seal loin and place into the 135 F water bath. Cook for 2.5 hours.
- Remove pork from bag. Heat a nonstick skillet with butter until sizzling. Add pork and sear, rotating, so all sides get a toasty brown, about 45-60 seconds / side. Remove pork and set aside.
- Using the same skillet, add your apples and onions and a tbsp. of the reserved glaze. Sautee over medium heat until onions are translucent and apples are soft.
- Slice pork, spooning any leftover glaze on top. Serve with a generous scoop of apple and onion hash. Salt more to taste if necessary.

- Boil 2 cups apple cider in a saucepan over medium-high heat until reduced to 1/2 cup, 8 to 10 minutes. Reduce the heat to low; add 1/2 cup each apple jelly and maple syrup, 1/4 cup whole-grain mustard, 1/2 teaspoon allspice and 1/4 teaspoon nutmeg.
APPLE-CRANBERRY OATMEAL SCONES WITH MAPLE VANILLA GLAZE

- 1. preheat oven to 350 degrees. Spray cookie sheet with nonstick vegetable spray or line with parchment paper. 2. Cream cane juice or sugar, cream cheese and oil until smooth. 3. Beat in egg whites and mix in yogurt and vanilla. 4. In another bowl, mix together oatmeal, flour and baking powder. Add diced apples and cranberries to dry mixture. 5. Gently fold dry and wet ingredients together (if mix is too dry, add 1 to 2 tablespoons nonfat milk) 6. Place spoonfuls of dough onto prepared sheet, leaving room between scones. 7. Bake 20 to 25 minutes (only until bottoms of scones turn slightly golden. 8. To make glaze, cream all ingredients together untilsmooth. 9. Spread glaze over warm scones.
GRILLED CHOPS WITH APPLE-CRANBERRY MAPLE GLAZE

- In a large bowl, combine the brine ingredients and stir well. Place the chops in a resealable plastic bag and pour in the brine. Refrigerate for 12 to 24 hours, turning once.
- Combine the glaze ingredients in a medium saucepan and mix well. Heat the glaze over medium heat, just until warm. Remove from the heat and reserve 1/2 cup of glaze for serving.
- Build a charcoal and/or wood fire for direct grilling. Grill the chops directly over the hot coals (approximately 450°F) for 8 minutes on each side, or until the internal temperature is 150°F. During the last 3 minutes of cooking, baste both sides of the chops with the glaze. Drizzle the reserved glaze over the chops or pass separately at the table.

- Heat oven to 350°F. Generously grease 12-cup fluted tube cake pan with shortening; lightly flour.

This recipe was inspired by treats you find while touring this corner of America: cider doughnuts and maple syrup. - To make Doughnuts: Preheat oven to 375 degrees F.
- Coat molds of a mini-Bundt pan with nonstick cooking spray or oil.
- Sprinkle with sugar, shaking out excess.
- In a mixing bowl, whisk together flour, baking powder, baking soda, salt and cinnamon; set aside.
- In another bowl, whisk together egg, brown sugar, apple butter, maple syrup, cider, yogurt and oil.
- Add dry ingredients and stir just until moistened.
- Divide half the batter among the prepared molds, spooning about 2 generous tablespoonfuls of batter into each mold.
- Bake for 10 to 12 minutes, or until the tops spring back when touched lightly.

- 1. Preheat oven to 350 degrees. Spray a large bundt pan or 2 small ones with non stick cooking spray. Set aside. Prepare apples and measure out ingredients.
- 2. In a large bowl, cream together sugars, coconut oil, eggs, and vanilla for 2 minutes. Add syrup, pumpkin, apples, and cider until mixed well. Sift or whisk all dry ingredients together. Stir into wet ingredients just until blended. Dust with a little flour and fold in cinnamon and chocolate chips.
- 3. Pour into prepared pan or pans. Bake @ 350 degrees until cake tests done, about 45 minutes to 1 hour (depending on size of pan) Cool in pan for 10 minutes. Turn out onto serving plate. Cool completely before you add glaze. While cake bakes, make the glaze.
- 4. Glaze: In a small micro safe bowl, heat brown sugar, syrup, cream and salt until mixture comes to a boil and sugar melts. Whisk in cream cheese thoroughly. Blend in powdered sugar until it is the consistancy you want. Add maple flavoring if needed. Glaze cakes and decorate as desired.
APPLE WALNUT BLONDIES WITH MAPLE BUTTER GLAZE
Full of flavor, these are the perfect blondies for fall. They have just the right gooey texture and are jam-packed full of apples and almost have a caramel flavor. Drizzled on top, the maple glaze complements all the flavors. Yum!

- Preheat oven to 350*.
- In a large bowl mix and cream together the sugars and the shortening. If you don't have butter-flavored shortening, you can add butter-flavored extract. I recommend Crisco.
- Add eggs one at a time; mixing well after each egg.
- Add baking powder, salt, vanilla, and cinnamon.
- Add flour a little at a time mixing well. Batter will be really thick, kinda like dough.
- Fold in apples and walnuts.
- Spread into greased 9x13 baking dish.
- Bake for approx. 25-30 mins until golden on top and it no longer looks wet.
- While blondies are baking, mix up the glaze. It should have the consistency of pancake batter.
- After blondies are done baking remove them from the oven, wait about 5 minutes then drizzle glaze over the blondies. Let cool for about 15 mins, then cut and serve. :)

- In a large bowl, combine all of the brine ingredients and stir until the sugar and salt are dissolved. Add in chops, settling them in so they are all covered, then cover bowl with plastic wrap, or combine brine and chops in a resealable plastic bag. Place in fridge for 12-24 hours tossing chops once or twice.
- In a medium sauce pan, combine all glaze ingredients and gently heat until medium warm. Remove from heat, and set aside 1/2 c of the glaze for final serving.
- Heat your grill for direct heat. Remove chops from brine, and grill about for about 8 minutes on each side, liberally basting glaze on both sides during the last 3 minutes of cooking. Add the reserved glaze on the finished chops or serve in a bowl for people to use individually.
