Number Of Ingredients 8

1 (8 ounce) package egg noodles
2 tablespoons butter, melted
3 Macintosh apples, sliced

1 cup white sugar
¼ cup golden raisins
2 teaspoons ground cinnamon
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

TRADITIONAL APPLE NOODLE KUGEL

Traditional Apple Noodle Kugel image

Sweet apple and noodle dish of east European origin. Kugels can be made in many flavors, both sweet and savory. Serve either warm or cold, as a side dish or a dessert. Like lasagna, kugel tastes better the day after it is made. Jonagold and Rome Beauty are two apple varieites ideal for this dish.

CREAMY MATZO-APPLE KUGEL

Creamy Matzo-Apple Kugel image

This sweet and creamy kugel makes an impressive centerpiece for a Passover brunch. You can also serve it for dessert.

Provided by Food Network

Categories     dessert

Yield Serves 6

Number Of Ingredients 13

2 tablespoons plus 2 teaspoons unsalted butter
4 McIntosh apples, peeled, cored, and cut into 3/4-inch slices, 1/4-inch thick
1/2 cup raisins
1/2 cup sliced blanched almonds
10 squares plain unsalted matzo
4 eggs, beaten
2 cups sour cream
1/2 cup whipped cream cheese
3/4 cup sugar
1 teaspoon cinnamon
1/2 teaspoon salt
Softened butter for greasing pan
Confectioners' sugar

Steps:

  • Melt 2 tablespoons of the butter in a large skillet and saute apple slices on high heat, stirring occasionally, until soft and lightly browned. Remove to a large bowl with a slotted spoon. Add 2 teaspoons butter to the skillet, lower heat to medium, and quickly saute raisins and almonds, stirring constantly. Be careful not to burn them. Add to bowl with apples, and set aside.
  • Preheat oven to 350 degrees. Place matzo squares in another large bowl, and run cool water over them to soften. Crumble the matzo, and drain in a colander. Return drained matzo to bowl.
  • Combine eggs with matzo and stir well. In another bowl, mix sour cream and cream cheese thoroughly. Then add it to the matzo mixture, along with sugar, cinnamon, salt, and fruit-nut mixture. Mix all ingredients thoroughly.
  • Grease a 10-inch square Pyrex baking pan (or similar) with butter (use quite a bit), pour mixture into pan, and bake for 50 minutes or until top is a light golden brown. Let cool on counter. Loosen sides with a knife, place a large platter over the baking pan, and carefully turn the kugel out onto the platter. If any pieces stick in the pan, just put them in place. When cooled, sprinkle top with confectioners' sugar (best done through a sieve or sifter). YOu can serve this kugel warm (not hot) or at room temperature, but we like it best chilled in the refrigerator with the confectioners' sugar added just prior to serving.

NOODLE AND APPLE KUGEL

Noodle and Apple Kugel image

This comforting kugel tastes much richer than it is, and it is certainly lighter than a traditional kugel (though it is not a low-calorie dessert). I've made this with Golden Delicious apples and with tarter varieties like Pink Lady; I liked it both ways.

Provided by Martha Rose Shulman

Categories     breakfast, dessert

Time 1h15m

Yield 6 servings.

Number Of Ingredients 11

2 tablespoons unsalted butter
4 apples, cored and cut in small (1/4- to 1/2-inch) dice
6 ounces flat egg noodles, preferably whole-grain
Salt to taste
1/4 cup raisins, plumped for 5 minutes in warm water and drained (optional)
4 eggs
1/4 cup raw brown sugar or dark brown sugar
1 cup drained yogurt
1 teaspoon vanilla extract
2 tablespoons rum
1/2 teaspoon freshly grated nutmeg

Steps:

  • Preheat the oven to 350 degrees. Butter a 2-quart baking dish. Begin heating a large pot of water.
  • Melt 1 tablespoon of the butter over medium-high heat in a large, heavy skillet and add the apples. Cook, stirring or tossing in the pan, until they begin to color and are slightly tender, about 5 minutes. Remove from the heat.
  • When the water comes to a boil, add salt to taste and the noodles. Cook al dente, a little firmer than you would want them if you were eating them right away. Drain through a colander and add to the pan with the apples (if using long flat noodles, cut them first with a scissors into shorter lengths). Add the remaining tablespoon of butter and toss together until the butter melts. Stir in the optional raisins. Set aside.
  • Beat the eggs in a large bowl. Add the sugar and beat together until the mixture is thick. Beat in the yogurt, vanilla, rum, nutmeg and about 1/4 teaspoon salt, or to taste. Add the noodles and apples and fold everything together. Scrape into the prepared baking dish. Push the pasta down into the egg and yogurt mixture (it will not be completely submerged, but try to cover as much as you can). Place in the oven and bake 40 to 45 minutes, until the kugel is set and the sides are browned. There will always be some noodles on top that brown and become quite hard. You can remove these from the baked dish if you wish. Allow to sit for at least 10 minutes before serving. Serve hot, warm or at room temperature.

SWEET POTATO AND APPLE KUGEL

Sweet Potato and Apple Kugel image

I've looked at a number of sweet potato kugel recipes, and experimented with this one a few times until I was satisfied with it. The trick is to bake the kugel long enough so that the sweet potato softens properly without the top drying out and browning too much. I cover the kugel during the first 45 minutes of baking to prevent this. After you uncover it, it's important to baste the top every 5 to 10 minutes with melted butter.

Provided by Martha Rose Shulman

Categories     dinner, casseroles, side dish

Time 1h30m

Yield 8 servings

Number Of Ingredients 7

4 eggs
Salt to taste
2 large sweet potatoes (1 3/4 to 2 pounds total), peeled and grated
2 slightly tart apples, like Gala or Braeburn, peeled, cored and grated
1 tablespoon fresh lime juice
1 tablespoon mild honey or agave nectar
3 to 4 tablespoons melted unsalted butter, as needed

Steps:

  • Heat the oven to 375 degrees. Butter a 2-quart baking dish
  • In a large mixing bowl, beat the eggs with salt to taste (I suggest about 1/2 teaspoon). Add the grated sweet potatoes and the apples. Pour the lime juice over the grated apples and sweet potatoes, then stir everything together. Combine the honey and 2 tablespoons of the melted butter and stir together, then toss with the sweet potato mixture and combine well
  • Transfer the mixture to the prepared baking dish. Cover the dish tightly with foil and place in the oven. Bake 45 minutes. Remove the foil and brush the top of the kugel with melted butter. Return to the oven and bake for another 15 to 20 minutes or longer, brushing every 5 minutes with butter. The kugel is ready when the edges are browned, the top is browned in spots and the mixture is set. Remove from the heat and allow to cool for 10 to 15 minutes before serving

FANTASTIC APPLE-CRANBERRY APRICOT MATZOH KUGEL!

Fantastic Apple-Cranberry Apricot Matzoh Kugel! image

This is better than any bread pudding!!! This is best served at room temperature, yeah right, just try and wait that long, you will have it half gone before it even reaches room temperature LOL! it is THAT good, try this, you will LOVE IT! Dried cherries can be used in place of the dried apricots and raisins can be replaced for the cranberries, I use Ocean Spray Craisins when I make this! If you prefer a less sweeter kugel then reduce the white sugar to 1-1/4 cups or less.

Number Of Ingredients 14

4 large baking apples (use Granny smith if possible, cored and medium diced)

6 plain matzohs (broken into 2-3-inch pieces, use unsalted matzoh)
1 cup warm water
8 large eggs
3/4 teaspoon salt

2 tablespoons sugar (use white or brown sugar for sprinkling)

  • In another bowl soak the matzoh pieces in 1 cup warm water until soft but not mushy; set aside.

  • Sprinkle lightly with about 2 tablespoons white or brown sugar, then dot all over with the cold butter pieces.
  • Bake covered with foil for about 40 minutes.

CHERRY APPLE MATZOH KUGEL

Cherry Apple Matzoh Kugel image

I found this recipe while searching for an additional kugel to add to my Passover holiday menu. This was a HUGE success. You can pre-make the kugel and then right before you start your seder as your dinner is being kept warm in the oven place it inside to reheat. When your family reaches the festive meal portion of the evening spread the preserves on top and serve. This recipe was found at http://www.jewish-food.org/ and was attributed to Linda Shapiro ([email protected]).

Time 1h35m

Yield 24 serving(s)

Number Of Ingredients 9

6 large eggs
1 cup sugar
2 teaspoons cinnamon
1 teaspoon salt
5 sheets matzos
boiling water
6 large apples, peeled and chopped
1/4 lb butter, melted
12 ounces cherry preserves

Steps:

  • Preheat the oven to 350°F.
  • Grease a 9x13-inch pan.
  • Beat eggs until light and fluffy.
  • Break up matzos into small pieces. Pour boiling water over and drain well.
  • Add sugar to eggs; beat again.
  • Add matzo; beat again.
  • Add melted butter if making this dish for a meat meal use margarine; fold in apples.
  • Bake 1 hour.
  • Spread preserves on top; bake an additional 10 minutes longer.

1. Choosing the Right Apples

The first step towards making a delicious apple kugel is selecting the right type of apples. You want to choose apples that are crisp, juicy, and can hold their shape when baked. Apples like Granny Smith, Jonathan, and Honeycrisp are ideal for making apple kugel.
Tips:
  • Avoid using soft apples that quickly turn to mush when baked.
  • Choose apples that are sweet and tart for a balanced flavor profile.
  • You can also mix different types of apples to add depth to the flavor of your kugel.

2. Preparing the Apples

The next step is preparing the apples for the kugel. You want to peel, core, and slice the apples into even-sized pieces. The thickness of the slices will depend on how you want the texture of the kugel to be. For a softer texture, slice the apples thinly, and for a firmer texture, cut them into thicker slices.
Tips:
  • To prevent browning, sprinkle a little lemon juice on the sliced apples.
  • If you don't have a corer, you can use a paring knife to remove the core of the apples.
  • For a rustic look, you can leave the skins on the apples, but make sure to wash them thoroughly before slicing.

3. Adding Flavors and Spices

Adding flavors and spices to your apple kugel is crucial. It will give your kugel the taste and aroma that will leave your guests wanting more. Cinnamon and nutmeg are traditional spices used in apple kugel recipes. They add warmth and depth to the dish. You can also add vanilla, almond extract, or orange zest to enhance the flavor.
Tips:
  • Use freshly ground cinnamon and nutmeg for the best flavor.
  • Don't be afraid to experiment with other spices like cardamom, cloves, or ginger to add a unique twist to your kugel.
  • For a sweeter kugel, you can add brown sugar or honey.

4. Choosing the Right Binder

The binder is the ingredient that holds the kugel together. When making apple kugel, eggs are typically used as the binder. However, you can use other ingredients like matzo meal, bread crumbs, or ricotta cheese.
Tips:
  • Eggs are usually enough to hold the kugel together, but if you want a firmer texture, you can add some breadcrumbs to the mixture.
  • Matzo meal is a great alternative for a gluten-free kugel.
  • Ricotta cheese is a good option for a creamier texture.

5. Assembling and Baking the Kugel

Assembling the kugel is the final step towards making a delicious dish. Once you have mixed all your ingredients, transfer them to a greased baking dish. Smooth out the top to make sure the kugel cooks evenly. Preheat your oven to 350°F, and bake for about an hour or until the top is golden brown.
Tips:
  • Make sure the kugel is evenly distributed in the baking dish to ensure that it cooks thoroughly.
  • You can sprinkle some cinnamon sugar on top of the kugel before baking for added flavor.
  • Once the kugel is done, let it cool for a few minutes before serving.
