APPLE SOUR CREAM KUCHEN
Family and the folks from church love this cake from Ann Byrn (The Cake Mix Doctor). I've made it many times and experimented with different pan sizes. I've listed my results below so you can choose to make it "moist and gooey" or with a firmer cake base (my preference). Slicing the apples takes some time, but since the recipe uses a cake mix, it goes together faster than you think! This was a "hot item" when sold at a church bake sale (sold in disposable pans).

Steps:
- Place a rack in the center of the oven.
- Preheat the oven to 350°F.
- Lightly grease the pan(s) of your choice according to how moist or firm you like your cake.
- 9x13 inch pan for a moist, gooey cake.
- 10x15 inch jelly roll pan for a firmer, sheet cake.
- Or 2 8x10 disposable pans for firm cakes (that are great for bake sales.).
- In a large mixing bowl, place the cake mix, sour cream, 4 Tablespoons butter and the egg.
- Blend on low speed just until the mixture forms a thick dough (about 1 minute).
- Gently press the dough evenly over the bottom of your chosen pan(s) so that it reaches the sides.
- Bake for 10 minutes.
- Meanwhile, toss the apple slices with the lemon juice in another mixing bowl.
- Combine the sugar and cinnamon in a small bowl.
- Remove the cake from the oven but leave the oven on.
- Arrange the apple slices in rows over the top of the cake.
- Sprinkle the sugar mixture evenly over the apples.
- Drizzle the remaining 4 Tablespoons of melted butter over the sugar mixture.
- Return the pan(s) to the oven and bake the cake until it is golden brown and a toothpick inserted in the center comes out clean (30 - 40 minutes for the firmer cakes), (Ann Byrn bakes her 9x13 for 30-32 minutes but this was too gooey in the center for me).
- Remove the pan from the oven and place it on a wire rack to cool for 20 minutes.
- This is wonderful warm but also too good to resist when cool.
- Store covered at room temperature for 3 days or in the refrigerator for up to a week.
- I have not frozen this cake but it says you can wrap it in foil and freeze it.

Steps:
- Make the cake: Heat oven to 325 degrees and position a rack in the middle of the oven. Butter and flour a 9-inch cake pan, preferably a springform pan.
- With an electric mixer, cream the butter and sugar, then add honey and whip for 1 minute, until fluffy. Beat in eggs one at a time, until well incorporated, then whip for 2 minutes. Stir in grated ginger, candied ginger and lemon zest.
- Whisk together flour, salt and baking powder and add to bowl, mixing briefly to make a stiff batter. Pour batter into prepared pan.
- With a paring knife, cut slits in each of the apple quarters on the rounded, outer part of the wedge, slicing partway through at 1/8-inch intervals. Arrange apple quarters slit-side-up over the batter. Sprinkle surface with 1 tablespoon sugar.
- Place cake pan on a baking sheet and put on middle rack of oven. Bake for about 45 minutes, or until an inserted skewer emerges dry. If cake is browning too rapidly, tent with foil until done. Cool on a rack, then carefully unmold.
- Make the glaze: Put sugar, honey and lemon juice in a small saucepan over medium heat, stirring until sugar is dissolved and mixture bubbles, about 2 minutes. Paint surface of cake and apples with warm glaze. Cake will keep for several days, tightly wrapped, at room temperature.

Steps:
- 1. In a stand mixer, mix the warm water, honey, and yeast until the honey is dissolved. Let the mixture sit for 10-15 minutes until slightly frothy.
- 2. Mix in flour, eggs, salt, and canola oil until just combined. Switch to a dough hook attachment and knead until the dough comes together. Ball up the dough on the bottom of the bowl, cover with plastic wrap, and let sit for 2 hours. Dough will rise to double in size and get a little poofy.
- 3. Place a 9-inch spring-form pan on a cookie sheet and coat with cooking spray. Mix cut up apples with cinnamon and sugar (I used more cinnamon than the original recipe because I love it).
- 4. Transfer dough to a greased surface and flatten in a rectangle (about 8x10 inches). Place half the apples down the center of the dough (long-ways) and fold over half the dough. Then, place the other half of the apples on the folded part and fold over the other side. With a knife or pizza cutter (I thought the pizza cutter was easier) slice the dough down the middle long-ways and then slice about 8 times on the sides. The apples will fall out, don't worry about it.
- 5. Place the dough pieces on the bottom of the spring-form pan so that they are all smashed together. Place any of the fallen apples on the top. Cover with plastic wrap and let rise for 1 hour.
- 6. Preheat oven to 325-degrees. Brush the top of the bread with an egg wash (1 egg and a tbsp of water) and sprinkle with sugar. Bake for 55-60 minutes. Mine took 60. Serve warm and drizzeled with honey if you want!

What is an Apple Kuchen Recipe?
An Apple Kuchen recipe is a traditional German dessert that involves a sweet yeast dough topped with sliced apples and cinnamon sugar. The dough is similar to that used in a coffee cake or cinnamon roll, and the apples add a delicious fruity flavor to the dish.
Kuchen translates directly to "cake" in German, but the texture of an Apple Kuchen is more similar to bread than cake. The yeast in the dough causes it to rise, resulting in a fluffy and tender texture. The apples give the dish a natural sweetness and juiciness that perfectly complements the dough.
The History of Apple Kuchen
The dessert originated in Germany, where it was a popular dish for Sunday brunches and family gatherings. Apple Kuchen was traditionally made with simple ingredients that were readily available in rural areas, such as flour, yeast, sugar, and apples.
As German immigrants settled in different parts of the world, they brought their recipes with them. Today, Apple Kuchen is a beloved dessert in many countries, including the United States, Canada, and Australia.
Variations of Apple Kuchen
While the traditional Apple Kuchen recipe involves a sweet yeast dough and sliced apples, there are many variations of the dish that incorporate different ingredients. Some popular variations include:
- Cheese Kuchen: In this variation, cream cheese is added to the dough, resulting in a richer and creamier texture.
- Streusel Kuchen: This version involves a streusel topping made from flour, sugar, and butter, which gives the dish a delicious crumbly texture.
- Raspberry Kuchen: Instead of apples, fresh raspberries are used in this variation. The tartness of the raspberries pairs perfectly with the sweetness of the dough.
How to Make Apple Kuchen
While the process of making Apple Kuchen is relatively simple, it does require some patience and attention to detail. Here are the basic steps:
- Prepare the dough: Combine flour, sugar, salt, yeast, butter, and milk in a large mixing bowl. Mix until the dough comes together, then knead it until it becomes smooth and elastic. Let the dough rise in a warm place for about an hour.
- Prepare the apples: Slice the apples thinly and toss them with cinnamon and sugar. Set the apples aside.
- Assemble the kuchen: Roll out the dough and place it onto a baking dish. Arrange the sliced apples on top of the dough, then sprinkle more cinnamon and sugar on top.
- Bake the kuchen: Bake the Apple Kuchen in a preheated oven at 350°F for around 30 minutes, or until the dough is golden brown and the apples are soft and juicy.
- Serve and enjoy: Serve the Apple Kuchen warm with a dollop of whipped cream or a scoop of vanilla ice cream. Enjoy!
Conclusion
Apple Kuchen is a delicious and comforting dessert that is perfect for any occasion. Its simple ingredients and easy preparation make it a popular dish in many countries around the world, and its versatility allows for a wide range of variations and customization. Whether you prefer the traditional version with sliced apples, or a more unique variation, Apple Kuchen is sure to satisfy your sweet tooth and leave you feeling warm and cozy.
