4 -5 cups baking apples, Granny Smith (or other)
1 1/4 cups white flour
1 teaspoon baking powder
2 teaspoons sugar
1/2 teaspoon salt
1/2 cup unsalted butter
1 egg
2 tablespoons milk
2 tablespoons unsalted butter
3/4 cup sugar
1 1/2 tablespoons white flour
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 350°F.
  • Mix 1 1/4 cup flour, baking powder, 2 tsp sugar, and salt and sift once.
  • Cut 1/2 cup butter into dry mix with a pastry blender to pea size.
  • In a small bowl, beat egg with 2 T milk and add to dry mix.
  • Mix thoroughly and pat dough into a greased or oiled 9x13-inch baking dish.
  • Pare and core apples.
  • Cut into thin wedge slices and place on dough in rows until covered. We would cover the thin end of one apple with the thick end of the other.
  • Dot apples with 2 T butter and mix 3/4 cup sugar, 1 1/2 Tbs flour and cinnamon together.
  • Spread dry topping over dotted apples, and bake in oven for 30-45 minutes, until golden brown.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat milk, shortening, egg, and vanilla extract together in a bowl until smooth. Stir 1 1/2 cups flour, 1/2 cup sugar, baking powder, and salt into milk mixture until dough comes together. Spread dough out into the bottom of a rimmed baking sheet.
  • Spread apples over the dough on the baking sheet.
  • Stir 1 cup sugar, melted butter, 1/4 cup flour, and cinnamon together in a bowl until topping is combined. Sprinkle topping over apples.

6 large tart apples, peeled and sliced
1 cup sugar, divided
2 teaspoons ground cinnamon
1 cup all-purpose flour
1 teaspoon baking powder
1/2 cup milk

VANILLA SAUCE:
1 cup sugar
2 tablespoons cornstarch
1/2 teaspoon salt
2 cups cold water
2 tablespoons butter
1 teaspoon vanilla extract

Steps:

  • Arrange apples in a greased 13x9-in. baking dish. Combine 1/2 cup sugar and cinnamon; set aside 1 tablespoon. Sprinkle remaining cinnamon-sugar over apples. , In a small bowl, combine the flour, baking powder and remaining sugar; beat in the milk and butter until blended. Drop by tablespoonfuls over apples; sprinkle with reserved cinnamon-sugar. Bake at 350° for 35-40 minutes or until golden brown. Remove to a wire rack., Meanwhile, in a saucepan, combine the sugar, cornstarch, salt and water until smooth. Bring to a boil over medium heat. Steps:

  • Preheat the oven to 450 degrees. Lightly grease and flour a 9x13-inch pan.
  • To make the crust: Place the flour, sugar, and salt in a large bowl or food processor fitted with a steel blade and mix to combine. Add the vanilla and butter, a little at a time, and mix until it resembles cornmeal. Press into the prepared baking pan and transfer to the oven. Family and the folks from church love this cake from Ann Byrn (The Cake Mix Doctor). I've made it many times and experimented with different pan sizes. I've listed my results below so you can choose to make it "moist and gooey" or with a firmer cake base (my preference). Slicing the apples takes some time, but since the recipe uses a cake mix, it goes together faster than you think! This was a "hot item" when sold at a church bake sale (sold in disposable pans).

1 cup sour cream
8 tablespoons butter, melted
1 egg
4 -5 apples, large, peeled and sliced 1/4 inch thick

1/2 cup sugar
1 teaspoon cinnamon

  • Place a rack in the center of the oven.
  • Preheat the oven to 350°F.
  • Lightly grease the pan(s) of your choice according to how moist or firm you like your cake.
  • 9x13 inch pan for a moist, gooey cake.
  • 10x15 inch jelly roll pan for a firmer, sheet cake.
  • Or 2 8x10 disposable pans for firm cakes (that are great for bake sales.).
  • In a large mixing bowl, place the cake mix, sour cream, 4 Tablespoons butter and the egg.
  • Blend on low speed just until the mixture forms a thick dough (about 1 minute).
  • Gently press the dough evenly over the bottom of your chosen pan(s) so that it reaches the sides.
  • Bake for 10 minutes.
  • Meanwhile, toss the apple slices with the lemon juice in another mixing bowl.
  • Combine the sugar and cinnamon in a small bowl.
  • Remove the cake from the oven but leave the oven on.
  • Arrange the apple slices in rows over the top of the cake.
  • Sprinkle the sugar mixture evenly over the apples.
  • Drizzle the remaining 4 Tablespoons of melted butter over the sugar mixture.
  • Return the pan(s) to the oven and bake the cake until it is golden brown and a toothpick inserted in the center comes out clean (30 - 40 minutes for the firmer cakes), (Ann Byrn bakes her 9x13 for 30-32 minutes but this was too gooey in the center for me).
  • Remove the pan from the oven and place it on a wire rack to cool for 20 minutes.
  • This is wonderful warm but also too good to resist when cool.
  • Store covered at room temperature for 3 days or in the refrigerator for up to a week.
  • I have not frozen this cake but it says you can wrap it in foil and freeze it.

While we were stationed in Germany our land lady used to make the most fantastic apple cake. So I decided to come up with my own recipe for fresh apple cake and I hit the jack pot. I have been making it ever since, it is so simple you can do it with your eyes closed.

4 c granny smith apples coarsley sliced
1 1/2 c canola oil
2 c sugar
3 large eggs
3 c flour
2 tsp baking soda

nutmeg sprinkle on top

  • 1. Preheat oven at 375* Lightly grease and flour 9 inch baking pan.

3 eggs
1 tablespoon grated ginger

3 eggs

1/2 teaspoon salt
5 small apples, such as McIntosh, Cortland, Granny Smith, or Golden Delicious, peeled, cored, and cut into 8 wedges
2 tablespoons butter, melted
Powdered sugar

Steps:

  • Position the oven racks so that they are evenly spaced, with one rack in the center of the oven. Preheat the oven to convection bake at 400°F. Butter a 12-inch tart pan or a 9 × 13-inch cake pan.
  • Cream the softened butter and 3/4 cup of the granualted sugar until light in a large bowl, using an electric mixer; add the eggs and vanilla and beat until light and fluffy. Add the flour, baking powder, and salt to make a smooth dough.
  • Spread the dough into the prepared pan.

1/4 c honey
1 pkg active dry yeast
1/2 c water, warm
4 c all purpose flour
1 1/2 tsp kosher salt
2 large eggs
6 Tbsp canola oil
2 large gala apples, not peeled, cored and chunked
1/2 tsp cinnamon, ground
1/4 c sugar
honey to drizzle

Steps:

  • 1. In a stand mixer, mix the warm water, honey, and yeast until the honey is dissolved. Let the mixture sit for 10-15 minutes until slightly frothy.
  • 2. Mix in flour, eggs, salt, and canola oil until just combined. Switch to a dough hook attachment and knead until the dough comes together. Ball up the dough on the bottom of the bowl, cover with plastic wrap, and let sit for 2 hours. Dough will rise to double in size and get a little poofy.
  • 3. Place a 9-inch spring-form pan on a cookie sheet and coat with cooking spray. Mix cut up apples with cinnamon and sugar (I used more cinnamon than the original recipe because I love it).
  • 4. Transfer dough to a greased surface and flatten in a rectangle (about 8x10 inches). Place half the apples down the center of the dough (long-ways) and fold over half the dough. Then, place the other half of the apples on the folded part and fold over the other side. With a knife or pizza cutter (I thought the pizza cutter was easier) slice the dough down the middle long-ways and then slice about 8 times on the sides. The apples will fall out, don't worry about it.
  • 5. Place the dough pieces on the bottom of the spring-form pan so that they are all smashed together. Place any of the fallen apples on the top. Cover with plastic wrap and let rise for 1 hour.
  • 6. Preheat oven to 325-degrees. Brush the top of the bread with an egg wash (1 egg and a tbsp of water) and sprinkle with sugar. Bake for 55-60 minutes. Mine took 60. Serve warm and drizzeled with honey if you want!

3 cups flour
2 tsp. baking powder
1 tsp. salt
1/2 cup (1 stick) butter or margarine, softened
1-3/4 cups sugar, divided
2 eggs
1 tsp. vanilla
1 cup milk
3 cups sliced peeled apples
1 tsp. ground cinnamon

Steps:

  • Preheat oven to 375°F. Mix flour, baking powder and salt; set aside. Beat butter and 1-1/2 cups of the sugar in large bowl with electric mixer on medium speed until light and fluffy. Blend in eggs and vanilla. Add flour mixture alternately with milk, mixing well after each addition.
  • Pour into greased 13x9-inch baking pan; top with apples. Mix remaining 1/4 cup sugar and the cinnamon; sprinkle over apples.
  • Bake 35 to 40 min. or until toothpick inserted in center comes out clean. Cut into 16 squares to serve.

1 piece freezer white bread
1 Tbsp rh all purpose flour
1/3 c granulated sugar
1/4 tsp cinnamon
1/8 tsp nutmeg
3 c peeled, thinly sliced apples
TOPPING:
1/2 c dairy sour cream
1/3 c granulated sugar
1 large egg
1/4 tsp cinnamon

Steps:

  • 1. Thaw frozen dough as directed on header page.(See Robin Hood Flour Freezer Yeast Dough ) Roll dough into a 13x9-inch rectangle on lightly floured board. Place dough in a greased or sprayed 13x9 inch pan. Press to form rim about 1/2-inch high around edges of pan. Let rise away from draft for 30 minutes. Combine sugar,flour,cinnamon and nutmeg. sprinkle small amount of sugar mixture evenly over dough in pan. Top with apples and sprinkle with remaining sugar mixture. Combine topping ingredients;blend until smooth. Pour evenly over apples. Bake at 375^ for 30-35 minutes until apples are tender. Serve warm.

1/4 cup margarine, softened
18 1/2 ounces yellow cake mix
1/2 cup flaked coconut
4 granny smith apples, peeled, cored, cut into wedges
1 teaspoon ground cinnamon
1/2 cup granulated sugar
1 egg
1 cup sour cream

Steps:

  • Preheat oven to 350 degrees F, then grease & flour a 13"x9" baking dish.
  • In a medium bowl, combine margarine, cake mix & coconut until crumbly.
  • Cover the bottom of prepared baking dish with this mixture, spreading evenly & patting down, building up edges to form a crust.
  • Place apple wedges on top, arranging them evenly.
  • Combine cinnamon & sugar, & sprinkle this mixture over apples.
  • In a small bowl, combine sour cream & egg, then drizzle this mixture on top of cinnamon/sugar mixture.
  • Bake for 35 minutes or until apples are tender & edges are golden.
  • Remove from oven, cool slightly & enjoy!.

2 c flour
2 tsp baking powder
2 Tbsp shortening
1 c sugar
1 egg
1/2 tsp mace
1/2 tsp salt
1/2 c milk (little less than 1/2 cup)
2-3 c chopped apples
1/2 c sugar
4 Tbsp butter
1 dash(es) salt
1/2 c sugar
1/4 c flour

Steps:

  • 1. Preheat oven to 350 degrees. Grease and flour glass 9 X 13.
  • 2. Sift first two dry ingredients. Set aside.
  • 3. In mixing bowl, cream shortening and 1 cup of sugar. Add egg. Add sifted dry ingredients along with mace and salt. Add milk.
  • 4. Spread in prepared 9 x 13. (I use a greased spatula to help spread). Top with apples. Sprinkle 1/2 cup sugar over top.
  • 5. In bowl prepare struesel. (4 T. butter, 1/2 cup sugar, 1/4 cup flour). Crumble struesel over apples on cake.
  • 6. Bake for 40 minutes.
