Banana Bread-Best recipe ever! image

Makes a LARGE loaf! This is not your run of the mill banana bread! It is rich with caramel undertones and simply divine. Even better, dress it up with a sweetened cream cheese spread! (4 0z cream cheese 1 TBSP sugar 1 tsp vanilla)

2 c ripe bananas mashed (3-5)
1 stick softened butter
2 large eggs
1/2 c buttermilk
1 c white sugar
1/2 c dark brown sugar packed
2 Tbsp molasses
1 Tbsp pure vanilla extract
2 1/2 c flour
1 tsp salt
1 tsp baking soda
1/2 c chopped pecans toasted

Steps:

  • 1. Preheat oven to 325, ensuring rack is in the middle of the oven. Prepare a large loaf pan by greasing with butter or non stick spray.
  • 2. Measure flour, salt and soda into a medium bowl. Whisk to combine. Set aside.
  • 3. Using a whisk, cream the butter in a large bowl. Add in the sugars, whisking until incorporated. Whisking, add in eggs, vanilla, molasses and buttermilk. Stir in mashed banana.
  • 4. Stir dry ingredients into the wet ingredients. Stir just until thoroughly incorporated. Stir in pecans if using.
  • 5. Pour into greased loaf pan. Bake in center of oven for 90 minutes. Test doneness with a toothpick inserted into center of loaf. If it remains dry, with some crumbs it is done. Let cool 20 minutes on a rack. Run a knife along sides and turn out onto cooling rack to cool to room temperature.
