Apple-

Use this fall-flavored marinade for pork loin or tenderloins. I used it on a boneless loin, roasted with baby carrots and red potatoes. Use the marinade to baste the roast and to de-glaze the roasting pan. Bring to a boil and serve over the vegies.

1/4 cup brown sugar
1/2 teaspoon garlic powder
1 teaspoon mustard powder

1 tablespoon olive oil
1 tablespoon molasses

Steps:

  • Whisk all ingredients in a bowl.
  • Place meat in zip-loc type plastic bag and our marinade over.
  • Seal bag and refrigerate for 2-6 hours.
  • Remove meat and cook as desired, using reserved marinade as noted above.

1/2 cup dried apricots
1/4 cup raisins, minced
1/4 cup peanuts, crushed
1 teaspoon shallots, minced
1/2 teaspoon honey
1/2 teaspoon mint, minced
1 teaspoon curly parsley, minced
4 chicken breasts
Salt and pepper
3/4 cup apple cider vinegar
3/4 cup apple cider
1/4 cup apricots, minced
1 teaspoon shallots, minced
1 teaspoon fresh ginger, peeled and minced
Salt and pepper
3 apples, cored and diced into 1/4-inch pieces
1 cup celery, diced 1/4-inch
1 cup seedless red grapes, halved
1/2 cup dried cherries
1/2 cup unsalted roasted peanuts
1/4 cup plain nonfat yogurt
1/4 cup sour cream
1 tablespoon smooth peanut butter
1/4 cup fresh flat-leaf parsley, chopped
Salt and pepper

Steps:

  • Soak the apricots in hot water for 10 minutes. Drain and then mince. Mix the apricots, raisins, peanuts, shallots, honey, mint and parsley until they hold together. Slice the chicken horizontally and slightly flatten with a mallet. Place 1/4 cup of mixture in each breast. Fold the breast together. Season the chicken with salt and pepper and place on a medium hot grill with soaked applewood chips. Grill for 4 minutes. Turn 1/4 turn for 2 minutes to mark breast and then flip the breast over and cook for 4 minutes.
  • Combine all the ingredients in a medium size saucepan and bring to a boil. Reduce the heat to medium and cook until the volume is reduced to 3/4 cup.
  • Combine the apples, celery, grapes, cherries and peanuts in a large bowl. Toss thoroughly. In a separate bowl, whisk together the yogurt, sour cream, peanut butter, and all but 2 teaspoons of the parsley. Fold the dressing into the salad and season with salt and pepper. Serve garnished with the remaining parsley.

2 large sweet onions (such as Maui or Walla Walla), very thinly sliced
1/2 teaspoon dried thyme leaves
1/8 teaspoon salt

1 can (13.8 oz.) Pillsbury® refrigerated classic pizza crust
1 unpeeled large Red Delicious apple, thinly sliced
1/2 teaspoon Domino® or C&H® Granulated Sugar
3 cups cubed cooked chicken breast
1/3 cup cooked real bacon bits (from 3-oz. package)
2 medium green onions, sliced (2 tablespoons)
1 1/2 cups shredded pepper Jack cheese (6 oz.)
1 1/2 cups shredded Cheddar cheese (6 oz.)

Steps:

  • In 12-inch skillet, melt 2 tablespoons of the butter over medium heat. Add sweet onions and thyme; cook about 20 minutes, stirring occasionally, until soft and golden. Stir in salt and pepper. Remove onions from skillet; set aside. Heat oven to 425 degrees F. High Altitude (3500-6500 ft): No change. Spray large cookie sheet with CRISCO Original No-Stick Cooking Spray. Unroll pizza crust dough on cookie sheet; press dough into 14x10-inch rectangle. Bake 7 to 11 minutes or until light golden brown. Reduce oven temperature to 375 degrees F. Meanwhile, in same skillet, melt remaining 1 tablespoon butter over medium heat. Add apple and sugar; cook 4 to 6 minutes, stirring occasionally, until sugar is melted and apple is slightly soft. Appalachian apple stack cake is communal cooking at its finest. Originally, each layer was baked at home by individual cooks, likely in cast-iron skillets, then brought together and assembled for church suppers and gatherings. Instead of the spongy cakes we're used to today, these layers are more like cookies-firmer, so they slowly soften beneath liberal applications of apple butter and cooked apples. This recipe stays mostly true to those principles. Instead of individually baking the layers one skillet at a time, though, use a cake pan to trace a pattern on parchment paper and trim circles of rolled dough to fit it. Bake two layers simultaneously (more if you have a convection oven). The edges of the cake layers won't be as perfectly neat as if you'd baked them in skillets or cake pans, but that's all right. This is a rustic cake.

3 pounds assorted apples, peeled and cut into 1/2-inch wedges
1/2 cup brown sugar
1 cup apple cider
1/4 cup applejack, apple brandy, or bourbon
1 1/2 cups apple butter
For the cake:
5 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon kosher salt
1/3 cup buttermilk
1 teaspoon vanilla extract
3/4 cup (1 1/2 sticks) unsalted butter
2 cups granulated sugar
1/4 cup molasses
2 large eggs
For the glaze:
1 cup dark brown sugar
1/4 cup reserved apple cider mixture (from the filling)
1 tablespoon molasses
2 tablespoons unsalted butter

Steps:

  • For the filling:
  • Put the apples, brown sugar, cider, and applejack in a large saucepan; bring to a boil over medium-high heat. Reduce the heat to medium-low and simmer, covered, stirring occasionally, until the apples are tender, about 20 minutes. Drain the apples and reserve 1/4 cup of the liquid. Set aside.
  • For the cake:
  • Position the racks in the upper-middle and lower-middle of the oven and preheat the oven to 350°F. Coat two baking sheets with cooking spray.
  • In a medium bowl, whisk the flour, baking powder, baking soda, and salt together. In a large liquid measuring cup, whisk together the buttermilk and vanilla.
  • In large bowl, with an electric mixer at medium-high speed, beat the butter and granulated sugar until light and fluffy, about 2 minutes. Reduce the speed to medium-low and add the molasses, beating until incorporated. Add the eggs one at a time and mix until incorporated. Gradually add the buttermilk (the mixture will look curdled); add the flour mixture and mix until a soft dough forms-it should look like cookie dough. Remove the dough from the bowl, pat into a round, cover in plastic wrap, and refrigerate for 20 minutes.
  • Divide the dough into 6 equal portions, about 8 1/2 ounces each. On parchment paper, roll portions of dough into circles about 1/4 inch thick. Use an 8-inch cake pan as a guide to trim into uniform 8-inch circles. Bake one circle on each prepared sheet until golden brown, 10 to 12 minutes, rotating and switching the baking sheets halfway through baking. Transfer the circles to cooling racks and let cool completely. The cakes will harden and set as they cool. Repeat with remaining dough. Reroll scraps to form a seventh layer.
  • Place the first layer on a serving plate and spread with 1/4 cup of the apple butter. Arrange one-sixth of the cooled cooked apples on top of apple butter and top with another layer of cake. Repeat with the remaining filling and cake layers, ending with a cake layer on top. Wrap the cake tightly in plastic wrap and refrigerate until the layers soften, at least 12 hours and up to 2 days.
  • For the glaze:
  • In a small saucepan, combine the brown sugar, reserved apple cider mixture, and the molasses. Bring to a low boil over medium-high heat and cook until the sugar is dissolved, about 2 minutes. Remove from the heat and stir in the butter until smooth. Let cool for 5 minutes, then pour the glaze over the top of the cake. Slice and serve, or store the cake, covered, at room temperature for up to 3 days.

I got the recipe from a busy Mom who works full time and comes home to prepare dinner for a family each night.My modifications were minor. It's perfect for one of those times when you just don't have the energy to prepare something special.

4 slices monterey jack cheese or 4 slices monterey jack pepper cheese
1 teaspoon curry powder
2 apples, cored and thinly sliced
4 boneless skinless chicken breast halves

Steps:

  • Preheat oven to 350 degrees.
  • Place chicken between 2 sheets of waxed paper and, with rolling pin or metal "chicken pounder" flatten each breast piece to uniform thickness.
  • Place chicken in prepared 9 x 13 baking dish and bake for about 30 minutes, depending on thickness and your particular oven.
  • Turn chicken pieces and divide apple slices evenly on top of each piece.
  • Bake for an additional 10 minutes.

  • Gradually stir in the oatmeal.
  • Lower the heat and cook 5 to 7 minutes or until all the liquid has been absorbed by the oatmeal.
  • Remove skillet from the heat and add vanilla.

8 tablespoons apple butter
1 liter white wine
1 tablespoon vegetable oil
1 pinch dried sage
1 pinch dried thyme
1 pinch salt
1 pinch pepper
2 cups cooked rice or 2 cups cooked pasta

Steps:

  • Preheat oven to 350°F.
  • Heat oil in ovenproof baking dish and brown chicken on one side.
  • Turn over and while browning the second side, place sage, thyme, salt and pepper on each piece.
  • Spoon one tablespoon apple butter on each, and pour wine over so it is sitting in about 1/4" of wine (drink the rest).
  • Cover and bake in oven for about 45-60 minutes.
  • Remove chicken, leaving the applesauce and wine.

1 pkg plain spice cake mix
1 cup buttermilk
3/4 cup vegetable oil
2 tblspoons Jack Daniels
3 large eggs
2 Cups finely shopped peeled apples (2 med)
1 cup chopped pecans
Glaze:
4 Tablesppons (1/2 stick) melted butter
2 cups powdered sugar (sifted)
3 Tablesppons Jack Daniels
1 Teaspoon vanilla extract.

Steps:

  • Preheat oven to 350 degrees Grease and flour 9 X 13 pan. Place all ingrediens except apples and pecans in a large mixing bowl. Mix on low 1 minute scrape bowl. Mix on medium 2 minutes. Batter should blook thick and well blended. Fold in apples and pecans. Spread evenly in pan. Bake until light brown and springs back when lightly touched with finger. 40 to 50 minutes. Rmeove from oven and place on wire rack to cool while your prepare the glaze. Glaze: Place all ingredients in medium bowl and stir until sugar is disolved and glaze is smooth. Spoon glaze over warm cake apreading to edges. Allow cake to cool 30 minutes before cutting.

◾1 (10 oz.) Package Mini Marshmallows
◾4 Tablespoons Unsalted Butter
◾1 (11 oz.) Package Caramel Bits
◾1 (4 oz.) Package Premium Baking White Chocol

Steps:

  • 1. Line a 9 x 13 cake pan with parchment paper and set aside. 2. In a large stock pot, add the Butter and melt on low heat. 3. Add in the Mini Marshmallows and stir until melted. 4. Turn the heat source off and stir in the Caramel Bits and the Cereal 5. Immediately transfer the Cereal mixture into the prepared pan. Using the back of a spatula press the mixture flat in the pan going all the way to the edges as you see here. You will need to work quickly for this step before the bars set. 6. Allow the Bars to cool completely. 7. In the mean time, melt the White Baking Chocolate according to package directions. 8. Use the parchment to lift the Bars out of the pan. Cut into 3 x 3 size Bars, and place them on a cookie cooling rack. 9. Drizzle the Bars with the melted Chocolate 10. Allow the Chocolate to set and then you are ready to serve! Makes about 18 bars. 2 tablespoons Jack Daniels or other whiskey

  • Place the apples in the juicer, and process until juiced. Transfer the apple juice to a covered shaker, and add the Jack Daniels. Shake until well blended. Place three to four ice cubes in a cocktail glass, and add the Apple Jack. I have not made this but have had the pleasure of sampling! So good! But be careful, it will sneak up on you! This is intended to be sipped in small quantities!

Number Of Ingredients 7

1 pound(s) brown sugar
1 gallon apple juice
1/2 gallon apple cider
1 quart(s) vodka
1 quart(s) everclear
8 - granny smith apples
- cinnamon sticks, at least 2 per jar

Steps:

  • Heat apple juice, cider and brown sugar until the brown sugar is melted.
  • Add the sliced apples and heat. DO NOT BOIL.
  • Shut off heat and pour in vodka and everclear. Let set until cool enough to pour into jars.
  • Add 2 cinnamon sticks to each jar. Fill with Apple Jack mixture. Makes approximatley 9 quarts. Best served very cold.

1/3 cup mayonnaise
2 teaspoons honey
2 teaspoons lemon juice
1/2 teaspoon curry powder
8 slices raisin bread health-nut bread or multi-grain bread, lightly toasted
1 apple Red Delicious, very thinly sliced
8 (1-ounce) slices Monterey Jack cheese

Steps:

  • In a small bowl, stir mayonnaise, honey, lemon juice and curry powder until blended.Preheat broiler. To make each sandwich, spread toast with a scant 1 tablespoon of the mayonnaise mixture. Top with about 5 slices of apple, overlapping slightly if needed. Cover with cheese. Place open faced on a baking sheet.Broil sandwiches 6 inches from heat source for 1 to 1 1/2 minutes or until cheese melts and just begins to turn golden.To Microwave: Place two open-faced sandwiches at a time on a paper towel-lined microwavable plate. Microwave, uncovered, at 100% power for 45 seconds or until cheese melts.
