¼ cup barbeque sauce

It's a great dish to make any day of the year, and perfect for a Super Bowl gathering or any party. If you don't have time to make quince jam, or can't find quince, you can substitute any fruit chutney.

1 quince, grated
3/4 cup sugar
2 tablespoons Champagne vinegar
1 teaspoon pure vanilla extract or 1/2 vanilla bean, split lengthwise
Finely grated zest and juice of 1 lemon
2 tablespoons unsalted butter
5 shallots, minced
3 tablespoons packed light brown sugar
2 tablespoons Champagne vinegar
4 tablespoons honey
1 teaspoon truffle oil
2 tablespoons vegetable oil
Fine sea salt to taste
Freshly ground black pepper to taste
10 ounces Scottish salmon, skin removed
1 cup arborio rice, cooked al dente ahead of time
2 ounces fresh lump crabmeat, picked over
1/4 Granny Smith apple, diced
1/4 cup vegetable or chicken stock or low-sodium chicken broth

Steps:

  • In a medium saucepan over moderate heat, bring the quince, sugar, vinegar, and 1 1/2 cups of water to a boil. Add the vanilla (or scrape in vanilla seeds), lemon juice, and zest then lower the heat, cover, and simmer until the jam is thickened and reduced by half, about 25 minutes. Let the jam cool for 1 hour.
  • In a medium saucepan over moderate heat, warm the vegetable oil. Sprinkle the salmon with salt and pepper, add to the pan, and cook, flipping once, until just cooked through, about 3 minutes per side. Transfer the salmon to an oven-safe pan and cover. Do not clean the saucepan.
  • Place the pan you used for the salmon over low heat and melt the butter. Add the shallots and sauté, stirring often, until translucent, about 5 minutes. Add the sugar and vinegar and cook until the sugar is dissolved, about 1 minute. Let cool, then transfer to a blender. Add the honey and truffle oil and purée until combined.
  • In a medium saucepan over low heat, combine all the ingredients and cook, stirring often, until the risotto starts to stick to itself and becomes creamy, about 2 minutes.
  • Preheat the broiler. Brush the salmon with the shallot-truffle honey glaze and place under the broiler until warmed through, about 1 minute.
  • Divide the risotto among 4 plates. Cut the salmon into four servings and arrange on top of the risotto. Drizzle each piece of fish with 1 tablespoon quince jam and serve immediately.

GLAZE
1 c powdered sugar
2 Tbsp honey
2 Tbsp milk
CAKE
3 c honeycrisp or granny smith apples peeled and diced ( i used granny smith in this one and it took 2 large apples)
1 c lightly toasted walnuts
2 tsp vanilla
2 tsp ground cinnamon
3 c all purpose flour
1 tsp baking soda
1 tsp salt
2 c sugar
1 1/4 c vegetable or canola oil
3 eggs

Steps:

  • 1. Preheat oven to 325 degrees lightly grease or spray bundt pan
  • 2. In a bowl mix the apples, walnuts, vanilla and cinnamon. set aside. In a seperate bowl sift together the flour, soda and salt.
  • 3. Beat sugar,oil and eggs in large bowl. Add dry ingredents and beat until combined. (Batter will be thick) Fold in apple mixture.
  • 4. Scrape batter into sprayed bundt pan and bake on center rack for 1 to 1 1/2 hours. ( mine took 1hr 15 minutes) Allow cake to cool 45 minutes or so. turn onto plate and drizzle with glaze

1/2 teaspoon baking powder
1/2 teaspoon baking soda

1/4 teaspoon salt
1 large egg
1/2 cup brown sugar
1/4 cup milk
1/4 cup vegetable oil

2 medium apples, peeled, cored and chopped finely
almond glaze
1/2 cup liquid honey
2 tablespoons apple juice
1/8 teaspoon ground cardamom
1/4 cup sliced almonds, toasted

Steps:

  • Line a 9 inch square baking pan with foil, allowing a 2 inch overhand on 2 sides of pan; grease foil.
  • In a bowl whisk together flour, ground almonds, baking powder, baking soda, cardamom, cinnamon, nutmeg, cloves and salt.
  • In a large bowl beat egg with brown sugar until thick and creamy.
  • Combine milk, oil and honey; add to egg mixture and blend.
  • Stir in flour mixture.
  • Fold in apples; spread in prepared pan.
  • Bake at 350 approximately 35 minutes or until cake tester comes our clean.
  • To prepare glaze:
  • In a small saucepan, bring honey, apple juice and cardamom to a boil;.
  • reduce heat and simmer for about 5 minutes or until slightly thickened stirring occasionally.
  • Place cake on wire rack and gently poke several holes in cake with fork.
  • Carefully pour warm glaze over cake.
  • Sprinkle with toasted almonds.
  • Allow to cool about 10 minutes and then lift cake out of pan using foil handles.
  • Serve warm or at room temperaturre.
  • Preparation time includes glaze.
