APPLE CAKE, HARVEST RECIPE - (4.3/5)

Apple Cake, Harvest Recipe - (4.3/5) image

Provided by OralW

Number Of Ingredients 13

1 2/3 cups flour
1 teaspoon baking powder
1/4 teaspoon salt, preferably fine sea salt
1/2 teaspoons ground cinnamon
1/4 teaspoon freshly grated nutmeg
8 tablespoons (1 stick) unsalted butter, at room temperature
2 ounces cream cheese, at room temperature
1 cup sugar
2 large eggs, plus 1 large egg yolk
1 1/2 teaspoons vanilla extract
2 1/4 to 2 1/2 cups peeled cored, and diced "cooking" apples (3 to 4 medium apples). May use Cortland, Jonathan, McIntosh, or Fuji or a combination of all
3 tablespoons sugar
1/4 teaspoon ground cinnamon

Steps:

  • 1. Preheat oven to 350 degrees. Use flour and oil spray to coat the inside of a 9" round baking pan with 2" sides. FOR THE BATTER: 2. Sift the flour, baking powder, salt, cinnamon and nutmeg on a sheet of wax paper. 3. Place the butter in a bowl of a stand mixer or hand-held electric mixer. Beat on medium speed until smooth, about 2 minutes. Add the cream cheese and beat for 1 to 2 minutes; scrape down the sides of the bowl. On moderately high speed, blend in the sugar in 3 additions, beating for 45 seconds after each addition, stopping to scrape down the sides of the bowl as needed. 4. Add the eggs one at a time, beating after each addition for 30 seconds or until just incorporated. Add the egg yolk and vanilla extract, beating. At this point, the batter will look slightly curdled, but it will smooth out after the flour mixture is incorporated. 5. On low speed, beat in the flour mixture in 2 additions, mixing just until the particles of flour are absorbed. The batter will be thick. 6. Use a wooden spoon to stir in the apple chunks. 7. Scrape the batter into the prepared baking pan, smoothing the surface. 8. Bake for 40 to 45 minutes or until the cake has risen and set. It should pull away slightly from the sides of the pan. The top of the cake will be a medium golden color and will look somewhat bumpy due to the chunks of fruit embedded in the batter. 9. Cool the cake in the pan on a wire rack for 10 minutes. Invert the cake onto another cooling rack, lift off the baking pan, then invert again to stand right side up. FOR THE TOPPING: 10. Whisk together the sugar and cinnamon in a small bowl. While the cake is warm, sprinkle the mixture evenly over the top of the cake. To Serve: use a serrated knife to cut the cake into wedges.

Tips for making the perfect apple harvest cake recipe

When fall comes around, nothing feels more seasonal than baking an apple harvest cake. The warm, cinnamon-spiced flavor of this cake is a comforting treat, and it's also perfect for sharing with friends and family. However, creating the perfect apple harvest cake takes some care and attention, so we've compiled some helpful tips to make sure your cake is a success.
1. Choose the right apples
When making an apple harvest cake, the most important ingredient is - of course - the apples. Choosing the right type of apples can make all the difference in the flavor and texture of your cake. Apples like Honeycrisp, Granny Smith, and Braeburn are preferred for baking, as they hold their shape and don't turn to mush when cooked. It's also a good idea to use a mixture of sweet and tart apples for a more complex flavor.
2. Don't overmix the batter
One of the most common mistakes when making cakes is overmixing the batter, which can result in a dense and tough texture. To avoid this, only mix the batter until everything is just combined - don't worry too much about getting rid of all the lumps. Additionally, when adding the apples, be gentle and fold them in by hand rather than using a mixer.
3. Use the right pan
Choosing the right pan is crucial when baking a cake, as it can affect how evenly your cake cooks. For apple harvest cakes, a 9-inch springform pan is a good choice. This type of pan has a removable bottom, which makes it easy to release the cake once it's done. Additionally, make sure to grease the pan generously with cooking spray or butter to ensure that the cake doesn't stick.
4. Bake at the right temperature
To get the perfect texture in your apple harvest cake, it's important to bake it at the right temperature. Typically, apple cakes are baked at 350°F for 45-50 minutes, but every oven is different. To make sure your cake is done, check it with a toothpick inserted in the center. If it comes out clean, the cake is done, but if it comes out with batter on it, the cake needs more time in the oven.
5. Let the cake cool before slicing
It can be tempting to dive right into your freshly baked apple harvest cake, but it's important to let it cool completely before slicing it. This allows the cake to set and ensures that it won't fall apart when you cut into it. Additionally, you can dust the top of the cake with powdered sugar or drizzle it with a glaze for some extra flavor.
6. Experiment with spices
While cinnamon is the classic spice for apple harvest cakes, there are many other spices you can experiment with to make your cake more unique. Nutmeg, allspice, ginger, and cloves all pair well with apples and can add some depth to your cake's flavor. Feel free to mix and match to find your perfect spice blend.
7. Add some texture
To make your apple harvest cake a little more interesting, consider adding some texture to it. Chopped nuts like pecans or walnuts add a nice crunch, while raisins or dried cranberries can provide a chewy contrast to the soft cake. You can also top the cake with a streusel or crumb topping for some added texture.
8. Serve with whipped cream or ice cream
Finally, to make your apple harvest cake truly decadent, serve it with a dollop of whipped cream or a scoop of vanilla ice cream. The creamy, cool topping pairs perfectly with the warm, spicy flavor of the cake, and is sure to be a crowd-pleaser.

Conclusion

With these tips in mind, you'll be well on your way to creating the perfect apple harvest cake recipe. Remember to choose the right apples, not overmix the batter, use the correct pan, bake at the right temperature, let the cake cool before slicing, experiment with spices, add some texture, and serve with a delicious topping. With a little care and attention, your apple harvest cake is sure to be a hit.
