1 cup chopped onion
3 cups apple juice
2 teaspoons Dijon mustard
2 medium green apples, thinly sliced
2 medium red apples, thinly sliced
2 tablespoons cornstarch
1/4 cup cold water
1 tablespoon minced fresh sage or 1 teaspoon rubbed sage
1/4 teaspoon pepper

Steps:

  • In a large skillet coated with cooking spray, brown ham steaks in batches over medium heat; remove and keep warm., In same skillet, saute onion until tender. Stir in apple juice and mustard; bring to a boil. Add apples. Reduce heat; cover and simmer for 4 minutes or until apples are tender., Combine cornstarch and water until smooth; stir into apple juice mixture. Bring to a boil; cook and stir for 2 minutes. Stir in sage and pepper. Return steaks to skillet; heat through.

2 tablespoons unsalted butter
2 (1/4-inch-thick) baked ham slices, quartered
1 large shallot, finely chopped
2 teaspoons cider vinegar
1/2 cup apple juice
1 1/2 tablespoons whole-grain mustard
1/2 tablespoon Dijon mustard, or to taste
Pinch of ground cloves

Steps:

  • Preheat oven to 250°F.
  • Core whole apple (without peeling) and cut 8 (1/4-inch-thick) rounds.
  • Heat 1 tablespoon butter in a 12-inch nonstick skillet over moderately high heat, then sauté ham, turning once, until browned, 5 to 6 minutes total. Transfer ham to a heatproof dish and keep warm, loosely covered with foil, in oven. Add remaining tablespoon butter to skillet and sauté apple slices, turning once, until golden and tender, 4 minutes total. 1-1/2 cups instant rice
1 medium onion, chopped
2 celery ribs, chopped
6 tablespoons butter, divided
2-1/2 cups apple juice, divided
1 teaspoon salt
1 pound boneless fully cooked ham steak, cut into fourths
2 medium tart apple, peeled and sliced
2 tablespoons brown sugar
1/4 teaspoon ground cinnamon
2 tablespoons raisins
1 tablespoon cornstarch

Steps:

  • In a saucepan, saute rice, onion and celery in 2 tablespoons butter until tender. Add 1-1/2 cups apple juice and salt. Bring to a boil. Cover and remove from the heat; let stand for 5 minutes. , Meanwhile, in a skillet, cook ham in remaining butter until lightly browned. Remove and keep warm. 1 medium vidalia onion, halved and thinly sliced
1/4 teaspoon fresh ground pepper
2 tablespoons butter
1 (1 lb) ham steak, boneless and fully-cooked
1 teaspoon cornstarch
1/2 cup unsweetened apple juice
1/2 cup apple butter

Steps:

  • In a large skillet, saute onion and pepper in butter until crisp tender. Remove from pan and set aside.
  • Cut ham steak into 4 pieces and in the same skillet, brown ham on both sides.

2 Tbsp olive oil, light
2 lb ham steaks
1 1/2 c apple cider
1/2 c apple wine
1/2 c sliced mushrooms
1/2 c brown suger,dark
1 c chopped dried apples
1/2 tsp rubbed sage
1/4 tsp ground cinnamon
1 1/2 Tbsp dijon mustard

Steps:

  • 1. I use a cast iron skillet for this. But any heave duty skillet will work.. Heat oil in a heavy skillet over high heat. Brown ham steak with mushrooms on each side for 2-3 minutes.Remove ham steaks and mushrooms and keep warm on a plater.
  • 2. Combine cider,brown sugar,apples,sages,cinnamon,and apple wine into skillet Bring to a rapid boil,then cook till reduced by abought 1/3. Whisk in mustard reduce heat to simmer.
  • 3. Return ham and mushrooms to the pan. Cover and cook over low heat for 10 to 15 minutes..Put meat on a platter..Raise heat to high whisk till sauce becomes like a syrup and poor over ham steak...
