4 to 5 medium tart apples, peeled and sliced
3/4 cup dried cranberries
6 tablespoons brown sugar
1 teaspoon ground cinnamon, divided
3 tablespoons butter
6 large eggs
1-1/2 cups orange juice
1-1/2 cups all-purpose flour
3/4 teaspoon salt
2 tablespoons sugar
Maple syrup, optional

Steps:

  • In a large skillet, saute the apples, cranberries, brown sugar and 3/4 teaspoon cinnamon in butter until apples begin to soften, about 6 minutes. Transfer to a greased 13x9-in. baking dish., Place the eggs, orange juice, flour and salt in a blender; cover and process until smooth. Pour over apple mixture. Sprinkle with sugar and remaining cinnamon. , Bake, uncovered, at 425° until a knife inserted in the center comes out clean, 20-25 minutes. Serve with syrup if desired.

This makes a nice one dish dessert, on the cold winter days . We lived in the middle of an apple orchard in Grand Junction Colo. for a few years . We had so many apples I didn't know what to do with them. This dish is fast to make and really good to eat, I like to put ice cream on mine.

3 c sliced granny smith apples
1 c sugar
1 Tbsp flour
1/4 tsp salt
1/4 to 1/2 tsp cinnomon
TOPPING--
3/4 c oatmeal
3/4 c flour
3/4 c brown sugar
1/4 tsp baking soda
1/4 tsp baking powder
1/3 c melted butter

Steps:

  • 1. Mix apples, sugar, flour, salt and cinnamon and put into baking dish.
  • 2. Mix the topping ingredients together and pat over the apple mixture. Bake in a 350 degree oven for 30 minites. Serve with ice cream or whipped cream.
