1 large red onion, roughly chopped
¼ teaspoon ground cinnamon, or to taste
7 pounds pork shoulder roast
½ teaspoon salt, or to taste
½ teaspoon ground black pepper, or to taste
1 (24 ounce) jar cinnamon-flavored applesauce
¼ teaspoon ground cinnamon, or to taste

Steps:

  • Place the apples and onion into the bottom of a slow cooker, and sprinkle with 1/4 teaspoon cinnamon.

1 (32 ounce) jar sauerkraut, well-rinsed and drained
1 1/2 cups chopped apples
1/2 cup coarsely shredded carrot

Steps:

  • In medium saucepan, combine brown sugar, cornstarch, 1/4 teaspoon caraway seed, and salt.
  • Stir in 11/2 cups apple juice and lemon juice.
  • Cook, stirring, over medium heat until thickened.
  • Set aside.
