Categories     Desserts

Yield 8 servings

Number Of Ingredients 17

1 ¼ cups all purpose flour, plus more for dusting
1 tablespoon sugar
¼ teaspoon kosher salt
8 tablespoons unsalted butter, cubed and chilled
1 tablespoon apple cider vinegar
¼ cup ice water
1 egg, beaten, for brushing
1 tablespoon coarse sugar, for sprinkling
1 ½ lb granny smith apple, or Fuji apple, peeled, cored and sliced
1 tablespoon lemon juice
¼ teaspoon ground cinnamon
⅓ cup sugar
1 tablespoon unsalted butter
½ cup sugar
¼ teaspoon salt
1 tablespoon unsalted butter
½ cup heavy cream

Steps:

  • Make the pie dough: In a medium bowl, combine the flour, sugar, and salt. Mix with fork.
  • Add the butter and work into the flour with a fork until only pea-size lumps remain.
  • Add the apple cider vinegar and mix into the dough with your fingers. Gradually add the ice water and mix with your hands until the dough starts to come together. Add more water as needed if the dough is dry. The dough should not be very tacky or sticky. Shape the dough into a rough ball and cover with plastic wrap. Chill in the refrigerator for 30 minutes.
  • Meanwhile, make the apple filling: In a large skillet over medium heat, combine the sliced apples, lemon juice, cinnamon, and sugar. Cook, stirring continuously, until the apples are soft, about 10 minutes. Add the butter and stir to incorporate. Remove the pan from the heat and let the filling cool.
  • Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • On a lightly floured surface, roll out the dough into a round that is about ⅛-inch (3 mm) thick. Roll the dough around the rolling pin and transfer to the prepared baking sheet.
  • Spoon the apple filling into the center of the dough, leaving a 2-inch (5 cm) border around the edges. Fold the edges over the apples. Brush the egg wash over the crust and sprinkle coarse sugar all over the galette.
  • Bake the galette for 25 minutes, until the crust is golden brown.
  • Meanwhile, make the caramel sauce: In a small pot, combine the sugar, salt, and butter. Cook over medium heat until the sugar dissolves and turns amber in color, 2-3 minutes, swirling the pan occasionally.
  • Pour in the heavy cream and stir with wooden spoon. Remove from the heat and let cool slightly.
  • Drizzle the caramel sauce over the galette, then slice and serve.
  • Enjoy!

Time 1h50m

Yield Serves 10 to 12

Number Of Ingredients 9

1 recipe Test Kitchen's Favorite Pate Brisee
4 teaspoons unbleached all-purpose flour, plus more for dusting
2 pounds apples (see cooks note), peeled, cored, and cut into 1/2-inch wedges (6 cups total)
1/2 cup granulated sugar
1 tablespoon fresh lemon juice
3/4 teaspoon kosher salt (we use Diamond crystal)
1/4 teaspoon ground cinnamon
1 large egg, lightly beaten
Coarse or fine sanding sugar, for sprinkling

Steps:

  • Preheat oven to 375°F. Remove chilled dough from refrigerator, unwrap, and place on a lightly floured work surface. Let stand about 10 minutes (to soften slightly). Bang on dough with a rolling pin (to begin flattening and soften a bit more).
  • Dust top and pin with flour, position pin on center of disk, and begin rolling dough away from you. Give disk a quarter-turn and roll again. Continue turning and rolling in this manner until you have a 13-inch round with an even 1/8-inch thickness. Transfer to a parchment-lined rimmed baking sheet. Refrigerate while making filling.
  • In a large bowl, combine apples, granulated sugar, flour, lemon juice, salt, and cinnamon. Spread filling evenly over dough, leaving a 1 1/2-inch border. Fold edges of dough up and over apples, leaving most of fruit exposed and overlapping dough as needed. Brush dough with beaten egg; sprinkle with sanding sugar. Refrigerate 15 minutes.
  • Bake until crust is golden, apples are tender, and juices are bubbling in center, 1 hour to 1 hour and 5 minutes. Using a pastry brush, spread some of juices from center of galette over apples. Transfer sheet to a wire rack; let cool 10 minutes. Using a large spatula, loosen galette from parchment and move away from any released juices (so it doesn't stick to parchment as it cools). Slide galette (still on parchment) onto rack and let cool. Serve warm or room temperature.

APPLE GALETTE

Apple Galette image

A fancy yet simple version of apple pie. This version was conceived in a Montreal hotel room (with a full kitchen, nonetheless) after being inspired by all the apples at the Marche Jean-Talon. I hope you enjoy this! Why not try adding some raisins, dried cranberries, or even some almonds to the mix. Serve warm with a scoop of good quality vanilla ice cream.

Valuable Tips for Making Apple Galette Recipe by Tasty Recipes Apple galette is a dessert that is easy to make and delicious to eat. It consists of a flaky pastry crust filled with thinly sliced apples and sugar. If you are planning to make an apple galette recipe by Tasty Recipes, there are some valuable tips that you should keep in mind. These tips will help you to produce a perfectly baked apple galette that is sure to impress your guests. Tip 1: Choose the Right Apples The first step in making an apple galette is selecting the right apples. It is essential to choose apples that can hold their shape when baked. Apples that tend to turn mushy when baked, such as Red Delicious or Gala apples, are not suitable for apple galettes. Instead, choose firm and tart apples like Granny Smith, Honeycrisp, or Braeburn. These apples will remain firm and crisp when baked, and their tartness will balance the sweetness of the sugar. Tip 2: Use the Right Pastry Dough The pastry dough is a crucial element in making an apple galette. You can make the pastry dough from scratch or buy pre-made pastry dough from the store. If you are making the dough from scratch, use a combination of all-purpose flour, salt, sugar, and unsalted butter. You can also add some ice water to the dough to help it stick together. Avoid overworking the dough, as it can make it tough and chewy. Tip 3: Use Cornstarch to Thicken the Filling To avoid a soggy crust, it is essential to thicken the apple filling before placing it on the pastry dough. You can use cornstarch to thicken the filling. Cornstarch will help to absorb the excess liquid from the apples and create a thick, syrupy filling. It will also help to ensure that the filling stays in place when the galette is sliced. Tip 4: Slice the Apples Thinly and Evenly When slicing the apples, it is important to do it evenly and thin enough to create a compact and orderly arrangement of the slices. This will ensure that the apples cook evenly and do not create a lumpy filling. Use a sharp knife or mandoline slicer to achieve this. If you are using a mandoline, be sure to use the guard to prevent accidents. Tip 5: Sprinkle Sugar and Cinnamon on the Apples Once you have layered the apples onto the pastry dough, sprinkle some sugar and cinnamon over them. The sugar will help to sweeten the apples, while the cinnamon will give the filling a warm and spicy flavor. You can adjust the amount of sugar and cinnamon according to your preference. Tip 6: Bake the Galette at the Right Temperature Baking the galette at the right temperature is crucial to achieving a crispy and flaky crust. Set your oven to 400°F (200°C) and bake the galette for 35 to 40 minutes until the crust is golden brown and the filling is bubbling. Avoid opening the oven door while the galette is baking, as this can cause the temperature to drop and affect the baking process. Tip 7: Let the Galette Cool Before Serving Allow the galette to cool for at least 15 to 20 minutes before serving. This will allow the filling to settle and thicken, making it easier to cut and serve. You can serve the galette with vanilla ice cream, whipped cream, or caramel sauce for added flavor and texture. Conclusion These are some valuable tips that can help you to make an apple galette recipe by Tasty Recipes. By following these tips, you can create a delicious and impressive dessert that is sure to please everyone. Remember to choose the right apples, use the right pastry dough, slice the apples thinly and evenly, sprinkle sugar and cinnamon, bake at the right temperature, and let the galette cool before serving.
