CHEF JOHN'S APPLE FRITTERS

Chef John's Apple Fritters image

I didn't think I liked apple fritters, but turns out I just don't like chunks of almost raw apple, surrounded by a doughnut. Maybe I've just been going to the wrong shops, but I've never enjoyed the texture, and always wanted to try them with cooked apples.

Yield 8

Number Of Ingredients 16

1 tablespoon butter
2 large Granny Smith apples - peeled, cored and cut into 1/4-inch dice
1 tablespoon white sugar
1 ¼ cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon kosher salt
½ teaspoon ground cinnamon
¼ teaspoon ground ginger
⅛ teaspoon ground nutmeg
1 large egg
¼ cup white sugar
1 tablespoon melted butter
½ cup sparkling apple cider
2 cups vegetable oil for frying
½ cup confectioners' sugar, or more as needed
1 tablespoon sparkling apple cider, or as needed to make glaze

Steps:

  • Melt butter over medium-high heat and cook until it turns golden brown, 2 to 3 minutes. Add apples and cook over medium-high heat until apples just begin to soften around the edges, 3 to 4 minutes. Sprinkle in 1 tablespoon sugar and continue cooking another 2 minutes. Remove from heat. Drain in a strainer; let cool to room temperature.
  • Whisk flour, baking powder, salt, cinnamon, ginger, and nutmeg together in a mixing bowl until well combined.
  • Whisk egg, 1/4 cup sugar, and melted butter together in a separate mixing bowl. Add cooled apple pieces and sparkling apple cider; add the flour mixture. Stir just until flour is incorporated.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Spoon about 2 tablespoons batter per fritter, into hot oil, slightly flattening them out. Cook in batches. Fry on one side until small bubbles appear on the surface, about 2 minutes. Carefully flip fritters over and fry the other side until richly browned, about 2 more minutes.
  • Transfer with a slotted spoon to a paper-towel-lined plate to drain grease. Cool slightly before glazing.
  • Whisk powdered sugar and cinnamon in a mixing bowl. Add enough apple cider, 1 teaspoon at a time, to form a smooth glaze that is just runny enough to drizzle over fritters.

Delicious and Flavorful Apple Fritters with Spiced Syrup

The Perfect Fall Dessert
Autumn is the season of apples, and nothing makes better use of this delicious fruit than apple fritters. The crispy, sweet dough and tender, juicy apples combine to make a mouth-watering dessert or breakfast treat that is perfect for the colder weather. And to take these already delicious fritters to the next level, add a spiced syrup that will truly make your taste buds sing. This recipe is a must-try for those who love the flavors of fall and want to indulge in a comforting, satisfying dessert.
Ingredients
The ingredients for this recipe are straightforward and easy to find, making it the perfect dessert for those who don't want to spend too much time in the kitchen. Here is what you'll need for the fritters: - Apples (peeled and chopped) - Flour - Sugar - Baking powder - Salt - Cinnamon - Nutmeg - Eggs - Milk - Butter For the spiced syrup, you'll need: - Brown sugar - Water - Cinnamon stick - Vanilla extract - Salt - Cornstarch
Instructions
To make these delicious apple fritters with spiced syrup, follow these steps: 1. Start by making the spiced syrup. In a small saucepan, combine brown sugar, water, cinnamon stick, vanilla extract, and salt. Bring to a boil, whisking occasionally to make sure the sugar dissolves. 2. In a small bowl, whisk together the cornstarch and 1 tablespoon of water until smooth. Add this mixture to the saucepan, whisking constantly to prevent lumps. Reduce the heat and simmer until the syrup thickens, about 5 minutes. 3. Remove the saucepan from the heat and set it aside to cool. 4. Next, make the apple fritters. In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg. 5. In a separate bowl, whisk together the eggs, milk, and melted butter. Pour this mixture into the dry ingredients and stir until just combined. 6. Fold in the chopped apples. 7. Heat a large pot/pan with 2 inches of oil over medium-high heat. Drop spoonfuls of the fritter batter into the hot oil and fry, turning occasionally, until golden brown and crispy, for 3-4 minutes. Remove and drain on a paper towel. 8. Serve the fritters warm, drizzled with the spiced syrup.
Tips and Variations
- You can use any type of apple for this recipe, but we recommend using a tart apple like Granny Smith for the best flavor. - To ensure that your fritters come out crispy, make sure that the oil is hot enough before dropping in the batter. You can test this by dropping a small amount of batter into the oil — if it sizzles and floats to the top, it's ready. - For an extra cinnamon kick, dust the fritters with cinnamon sugar after frying. - You can also make a caramel sauce instead of the spiced syrup. Simply melt sugar in a saucepan until it turns golden brown, then add heavy cream and stir until smooth. - Serve the fritters with a scoop of vanilla ice cream for an extra-decadent dessert.

Apple fritters with spiced syrup is a delicious and indulgent dessert that combines the sweetness of apples with a crunchy outer layer of fritters and a warm, spiced syrup. The recipe for apple fritters with spiced syrup is simple, but there are some tips that can help you make the most out of this dessert. In this article, we will discuss some of the valuable tips that can help you make the perfect apple fritters with spiced syrup at home.

Tip #1: Choosing the right apples

The first step in making apple fritters with spiced syrup is choosing the right type of apples. You will want to choose apples that are firm and not too ripe. Some of the best types of apples to use for this recipe include Honeycrisp, Granny Smith, and Braeburn. These apples are tart and firm, which makes them perfect for cooking.
Pro tip:
You can also use a combination of apples to give your fritters a more complex flavor.

Tip #2: Preparing the apples

Before you begin making the fritters, it is important to prepare the apples properly. You will need to peel and core the apples before slicing them into thin wedges. This will ensure that the apples cook evenly and are easy to eat.
Pro tip:
You can use an apple corer and slicer to make this process faster and easier.

Tip #3: Making the batter

The batter for the fritters is a simple mixture of flour, sugar, baking powder, salt, and milk. To make the batter, you will need to combine all of the dry ingredients in a bowl and then gradually add the milk, whisking until the mixture is smooth. It is important not to overmix the batter, as this can make the fritters tough.
Pro tip:
For a lighter batter, you can separate the egg whites and yolks and beat the egg whites until stiff peaks form. Fold the egg whites into the batter just before frying.

Tip #4: Frying the fritters

To fry the fritters, you will need a large, heavy-bottomed pot and oil (such as vegetable or canola oil) heated to 350-375°F. You can use a candy or deep fry thermometer to ensure that the oil is at the correct temperature. Once the oil is heated, dip the apple slices into the batter and then carefully place them into the oil. Fry the fritters until they are golden brown (usually 2-3 minutes per side), then remove them from the oil and place them on a paper towel-lined plate to drain off any excess oil.
Pro tip:
Avoid overcrowding the pot when frying the fritters, as this can lead to uneven cooking and a greasy final product. Fry the fritters in small batches, making sure to keep an eye on the oil temperature.

Tip #5: Making the spiced syrup

The spiced syrup is what gives the apple fritters their signature flavor. To make the syrup, you will need to combine sugar, water, cinnamon, and cloves in a saucepan and bring it to a boil. Once the sugar has dissolved and the syrup has thickened slightly, remove it from the heat and stir in butter and vanilla extract. The syrup can be served warm or at room temperature.
Pro tip:
For an extra burst of flavor, you can add a splash of apple cider or orange juice to the syrup.

Tip #6: Serving and storing the fritters

Once your apple fritters and spiced syrup are ready, it's time to serve them up! Arrange the fritters on a serving platter and drizzle the syrup over the top. You can also dust the fritters with powdered sugar or serve them with a scoop of vanilla ice cream. If you have leftovers, store them in an airtight container in the refrigerator for up to 2 days.
Pro tip:
For a fun twist, you can use the apple fritters as the base for a dessert parfait. Layer the fritters with whipped cream and chopped nuts, then drizzle with the spiced syrup.

Conclusion

Apple fritters with spiced syrup is a delicious and satisfying dessert that is sure to impress your friends and family. By following these valuable tips, you can make the perfect apple fritters with spiced syrup every time. Remember to choose the right apples, prepare them properly, make a light batter, fry the fritters carefully, and serve them with a delicious spiced syrup. Enjoy!
