1 cup sliced apple
1/3 cup sugar
1/4 teaspoon cinnamon
1 small pinch freshly grated nutmeg
2 tablespoons cornstarch
2 teaspoons water
1/2 cup brown sugar
1/2 teaspoon cinnamon
1/3 cup butter
3/4 cup sugar
1/2 cup applesauce
1 teaspoon vanilla
2 eggs
2 1/4 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1 cup Greek yogurt (you could use plain yogurt as well or sour cream)
2 cups powdered sugar
1 teaspoon vanilla
6 tablespoons milk

Steps:

  • For filling: Make your filling by combining apples, sugar, water, cinnamon and cornstarch in a small saucepan. Cook on low heat for 5 to 7 minutes, stirring constantly until the sauce is thickend and the apples are a bit soft. Set aside to cool. In a small bowl, mix the brown sugar and cinnamon together until well combined and set aside.
  • For Cake: Preheat oven to 350°. Grease and flour a 9×13 baking dish. Set aside.
  • Cream butter and sugar until light and fluffy, about 3 minutes. Add applesauce and vanilla and mix till combined. Add the eggs, one at a time, beating well after each addition.
  • Sift the dry ingredients together. Add the dry ingredients to the batter in three parts alternating with the yogurt in two parts, beginning and ending with the dry ingredients. Beat until just combined.

  • For Glaze: While the cake is baking, make the glaze. In a bowl, mix the powdered sugar, vanilla, and milk until the glaze is desired consistency. When the cake comes out of the oven, immediately but carefully pour onto hot cake. Try to pour as evenly as possible. You might have to pick up the cake and tilt it to spread the glaze evenly. I even poured some out that pooled at the corners and repoured that over the top. Let the cake sit for awhile for the glaze to set.

1/4 cup sugar
2 tablespoons ground cinnamon
3 teaspoons baking powder
1 teaspoon salt
2 medium apples, peeled and chopped (about 2 cups)
1 bottle (12 ounces) beer or unsweetened apple juice, room temperature
1/4 cup butter, melted
ICING:
2 cups confectioners' sugar
3 to 5 tablespoons 2% milk
1/2 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°. Line an 8-in. square baking pan with parchment, letting ends extend up sides., Whisk together the first 5 ingredients. Add apples and beer; mix just until blended (do not overmix; batter will be thick). Transfer to prepared pan. Bake until a toothpick inserted in center comes out clean, 40-45 minutes., Lifting with parchment, immediately remove cake from pan. Brush all sides with melted butter. Cool. Meanwhile, combine all icing ingredients. Spread or drizzle over cooled cake.

3 cups of flour
1/4 tsp. salt
1 cup of sugar
4 tsp. baking powder
1 1/2 cup milk
2 eggs
2 tsp. vanilla
1/2 cup butter, melted
6 small apples cored, peeled and diced
For the topping:
1 cup of butter, softened
1 cup of brown sugar
2 tbsp. flour
1 tbsp. cinnamon
For the glaze:
2 cups of powdered sugar
5 tbsp. milk
1 tsp. vanilla

Steps:

  • Start by mixing all the ingredients for the batter (except the butter) together in a bowl. Once combined, carefully pour in the melted butter. If you do this part with your mixer at a high speed it will splash everywhere. So slow is best. Pour the batter into a greased 9×13 pan, any smaller and it will overflow while baking. Evenly distribute the apples over the top of the batter. In a separate bowl mix together the topping, it will be thick so do your best to drop scoops of it evenly over the apples. Then take a knife and drag it in a swirly motion all over the pan allowing the topping to make friends with the apples and batter below. Bake at 350 degrees for at least 40 minutes. Depending on how many apples you put in and how juicy they were you may need to increase your time. If the top is getting too brown you can always tent it with foil. Once baked let sit for 20 minutes and then pour the glaze all over the cake.

1/2 c dark brown sugar, frimly packed
1/2 tsp cinnamon, ground
1/2 c chopped walnuts, optional
CAKE:
1/3 c butter, softened (room temp)
3/4 c sugar
1/2 c unsweetened applesauce
1 tsp vanilla (danish pastry extract if you can find it)
1/3 c liquid egg substitute
2 1/4 c flour
2 Tbsp fresh ground flaxseed
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon, ground
1/4 tsp cardamom, ground
1 c low-fat greek yogurt
GLAZE:
