1 cup vegetable oil
½ cup butter, softened
1 ½ cups white sugar
3 eggs
3 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon vanilla extract
2 cups diced apple without peel
1 cup flaked coconut
1 cup raisins
1 cup chopped walnuts
1 cup brown sugar
½ cup butter
¼ cup milk

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour one 10 inch tube pan.
  • Combine oil, butter or margarine, and sugar together. Beat well with a mixer. Add eggs, flour, baking soda, salt, and vanilla; mix well. Stir in apples, coconut, raisins, and walnuts. Pour batter in prepared pan.
  • Bake for 90 minutes. Remove cake from oven. Let it cool in the pan for a few minutes, and then remove from pan.
  • If desired, make glaze. In a small saucepan, heat brown sugar, butter or margarine, and milk. Bring mixture to boil, and stir for 1 minute. Pour over warm cake.

1 cup packed brown sugar
2 teaspoons vanilla extract
1 teaspoon baking soda
1 teaspoon salt

½ cup butter
¼ cup heavy whipping cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan, or a 10 inch tube pan. Stir the flour, baking soda and salt together and set aside.
  • In a large bowl, cream the oil, eggs, 1 cup brown sugar and 2 teaspoons vanilla. Add the flour mixture and mix well. Stir in the chopped apples and nuts.
  • Pour batter into prepared pan. Bake at 350 degrees F (175 degrees C) for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  • For the Topping: In a saucepan, combine 1 cup brown sugar, 1/2 cup butter and 1/4 cup cream. Bring to a boil, and continue boiling for 3 minutes. Cool slightly and pour over warm cake.

1 1/2 cups cooking oil
2 cups sugar
3 eggs
2 teaspoons vanilla
3 cups plain flour
1 teaspoon salt
1 teaspoon baking soda

1/4 cup milk
1/2 cup margarine

Steps:

  • Mix oil, sugar, eggs, and vanilla together.
  • Sift the plain flour, salt, soda, & cinnamon together and then add to the wet mixture.
  • Fold in the pecans and apples last.
  • Mix by hand as batter is very stiff.
  • Bake in a greased & floured 13x9 pan at 350 for 40-45 minutes.
  • To make topping: Mix the brown sugar, milk & margarine and bring to a boil on the stove. Boil for 3 minutes.
  • Punch holes in the cake with a wooden spoon and then pour the topping over the cake.
  • Allow the cake to sit until cool.

1 teaspoon salt
1 teaspoon baking soda
1 cup pecans, chopped
1 cup canola oil
2 cups sugar

3 cups raw apples, peeled and chopped
1 cup packed brown sugar (for sauce)
1/4 cup milk (for sauce)
1 cup butter, salted

Steps:

  • Mix oil, sugar, eggs and vanilla.
  • Sift together flour, salt, soda. Add to first mixture.
  • Fold in pecans and apples.
  • Bake in greased tube pan (NOT BUNDT--too small) at 350 for 1 hour.
  • Mixture will be tTHICK--No worries -- Apples have an amazing way of making it just right during the baking process.
  • For the sauce, mix and cook ingredients 3 minutes after it begins to gently boil, stirring constantly.
  • Poke cake with spoon while still in pan once baked.
  • Pour sauce over hot cake while cake is still in pan.
  • Let cake cool completely before removing. May Need a knife to loosen edges, it will eventually slide out.
  • Once cooled and inverted onto cake plate, dust with powdered sugar if desired or leave as is.
  • Best the next day after making!
  • You may feel an urge to add cinnamon -- this cake does not need it!

Cake batter:
1 1/2 cups sugar (up to 2 cups if using tart apples)
3 extra-large eggs
1 1/2 cups vegetable or canola oil (I used canola)
1 teaspoon vanilla extract
3 cups self-rising flour
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
3 cups peeled and chopped apples (about 3 medium)(I used Honey Crisp variety)
1/2 cup finely chopped pecans
8 pecan halves for pan, optional
Glaze:
1 stick (1/2 cup) butter
1 cup packed brown sugar (I used dark)
1/4 cup whole milk or half-and-half

Steps:

  • Preheat oven to 350 degrees F. Generously butter and flour a 12-cup Bundt cake pan. Arrange pecan halves (upside down) in the bottom of the pan, if desired. Set pan aside. In a large mixing bowl and using a mixer, beat together the sugar, eggs, and oil until creamy, 3-4 minutes. Beat in the vanilla. Sift the flour over the egg mixture in the bowl; add cinnamon and nutmeg and combine well. (I used a rubber spatula first (to reduce the flour dust) then used the mixer to finish combining.) Peel and chop the apples; then gently fold apples and pecans into the batter with a spatula. CAREFULLY spoon (so the pecans don't shift) a heaping tablespoon of the batter over each pecan half in the pan. Pour the remaining batter into the pan. Bake in the center of the oven for 50-60 minutes, or until center tests done with a toothpick. Cool in pan on a wire rack for 10 minutes, then loosen the cake from the pan and turn out onto a serving plate, pecan side up. In the meantime, make the Glaze: Melt the butter in a medium non-stick saucepan over medium heat; add the brown sugar and milk and bring to a boil, at first bubble cook for exactly 2 1/2 minutes. Remove from heat and whisk for 2-3 minutes to cool slightly. If you haven't done so already, turn the cake out onto a serving plate. Slowly drizzle the glaze over the cake. Use any leftover glaze to drizzle over individual slices at serving.

The whole family loves this cake along with friends that I have gifted with it. The hot caramel sauce soaks in and makes it wonderful! The longer it sits the more moist it gets so it's good to the last crumb is gone.

1 c vegetable oil
2 c sugar
5 eggs
2 tsp pure vanilla extract
2 tsp cinnamon, ground
3 c self-rising flour
1 c chopped pecans or walnuts
3 c peeled, chopped apples or pears (any type apples work well)
HOT CARAMEL SAUCE:
1 c brown sugar
1 stick butter
1/4 c milk

Steps:

  • 1. Peel and chop apples or pears into small pieces and set aside. Chop the nuts and set aside. (I like to use Gala apples or green pears. They both have just enough firmness without being too soft.)
  • 2. Whisk together the oil, eggs and sugar in large mixing bowl. Add the vanilla and cinnamon. Next whisk in the flour a cup at a time until smooth. Batter will get thick.
  • 3. Fold in the chopped apples or pears and nuts with a wooden spoon or spatula. Pour the batter into a heavily greased and floured bundnt or tube pan. Bake at 325 degrees for 1 hour or until tests done.
  • 4. When cake is nearly done, make the caramel sauce. In a small boiler on the stove, melt the stick of butter and stir in brown sugar til smooth then add the milk. Stir with a whisk while cooking to break up any lumps. Bring sauce to a rolling boil and cook for 3 minutes only. Set aside.
  • 5. Remove cake from oven and let stand a minute or two to allow it to pull away from the sides of the pan a little. Pour the hot caramel sauce over the cake while in the pan, around the edges to the outside and middle and then just over the bottom. Allow the cake to rest in the pan for 2 hours or longer. The sauce will absorb into the cake. Turn the cake out onto a plate, slice and serve. Goes great with vanilla ice cream! There won't be much sauce on the top of the cake but you won't miss it I promise!

  • 1. Cream together eggs, sugar, and oil. Combine flour, soda, salt, and cinnamon. Add this to creamed mixture; 1 cup at a time, beating well. Add the 5 t. of vanilla; 1 cup chopped nuts, 2 cups coconut, and 3 large apples chopped (I use Granny Smith). Bake in 10 x 15" pan that has been greased and floured; 45 minutes at 350 degrees. TOPPING: 1 stick margarine, 1 cup brown sugar, 1/4 c. milk. Let this mixture come to a boil and cook 2 minutes. Puncture warm cake with a fork and spoon this topping over the cake. This is a very moist cake and is better after it sits a while. ENJOY

  • Stir with a Sturdy Spoon. ( No need for a Mixer).

  • Last add crushed Pecans. ( Optional ).
  • Pour Mixture into a LARGE Bundt Pan or Use two Smaller ones.
  • Bake for 1 Hour until a toothpick inserted comes out clean.
  • Let cakes cool until slightly warm sprinkle with the Powdered Sugar and serve with a dollup of whip cream or even Vanilla Ice Cream. Enjoy!

2 granny smith apples, peeled, cored, and cut into 1/4-inch pieces
1 cup walnuts, toasted and chopped

4 tablespoons unsalted butter, cut into 4 pieces

Steps:

  • Position oven rack in middle position; preheat oven to 350°; grease a 16 cup tube pan.
  • Whisk the flour, cinnamon, baking powder, baking soda, and salt together in a bowl.

1 1/2 cups oil
3 eggs
1 cup brown sugar
2 teaspoons vanilla

1/2 cup butter
1/4 cup heavy whipping cream

Steps:

  • Preheat oven to 350°F. Grease a 9x13-inch pan or a 10-inch bundt pan. Stir the flour, baking soda and salt together. In a large bowl cream the oil, eggs, 1 cup brown sugar and 2 teaspoons vanilla. Add the flour mixture and mix well. Stir in the apples and nuts. Pour the batter into the prepared pan. Bake at 350°F for 30 minutes or until toothpick inserted comes out clean. FROSTING: In a saucepan combine the frosting ingredients. Bring to a boil and continue for 3 minutes. Cool slightly and pour over warm cake.

1 c vegetable oil

Steps:

  • 1. Mix oil, sugar,eggs and vanilla. Sift flour, salt, soda together. Add to first mixture.
  • 2. Fold in pecans and apples. Bake at 350 for 1 hour
  • 3. For the sauce, mix and cook ingredients 3 minutes after it begins to gently boil, stirring constantly. Pour over hot cake while cake is still in pan. Let cake cool completely before removing from pan.

This recipe was posted in our newspaper. It was made by my friend and also grandmother to 2 of my grandchildren. Her name is Glenda Strouse she told me she got this recipe 30 years ago and she actually served this to Tom Coughlin (now the Giants coach) when he came to her house in the early 80s to recrute her son Tommy to play for Boston College. I thought it was fitting to make it for the Super Bowl this year.

SECOND STEP - TOPPING

  • Mix all dry ingredients together and set aside.
  • Put the wet ingredients, not the apples, in your stand up mixer or a mixing bowl and mix until blended. Gradually add the dry ingredients to the wet. Batter will be stiff. Fold in apples.
  • Smooth batter into a greased 13 x 9 pan and bake in a preheated oven, 350°, for 30 to 40 minutes. I baked mine to 35 minutes.
  • 5 to 8 minutes before the cake is done baking, 35 minutes, bring to a boil for a few minutes about 4 minutes, 1 cup of brown sugar, 1/4 cup milk and one stick of butter. Turn off heat and add nuts, stir and pour over cake. Place cake back in oven for about 5 minutes more or until the top is bubbly and browned.
  • I made this recipe according to her instructions but I am sure you can substitute applesauce for the oil and use splenda. The cake is very moist, good and honestly isn't overly sweet, as I thought it would be.
