TARTE AUX POMMES (FRENCH APPLE - CUSTARD TART)

Tarte Aux Pommes (French Apple - Custard Tart) image

The classic French Apple - Custard Tart. Unfortunately for me, I can never eat just one piece of this - the combo is heavenly!

Provided by evelynathens

Categories     Tarts

Time 1h30m

Yield 8-10 serving(s)

Number Of Ingredients 11

short pastry, for a 10 inch tart pan (Pate Brisee)
3 -4 medium firm granny smith apples
1/3 cup sugar, plus
2 tablespoons sugar
3/4 teaspoon ground cinnamon
1 egg
1/3 cup granulated sugar
1/3 cup sifted flour
1/2 cup whipping cream
3 tablespoons brandy or 3 tablespoons calvados
icing sugar

Steps:

  • For crust: Roll out the dough 1/8 inch thick on a lightly floured surface turning it constantly so that it does not stick; add more flour as needed (the dough might crack around the edges, most of the cracks don't matter since the edges will be trimmed after the tart is in the pan, if there are some big ones that will show when the tart is in the pan, patch them with pieces of dough before fitting the) when the dough is rolled out, flip it over the rolling pin and transfer it to a 10-inch tart pan with removable bottom; fit it into the tart pan without stretching; roll the rolling pin over the top of the tart to cut off the dough hanging over the pan's edge; refrigerate 20 minutes.
  • Preheat oven to 400°F Place the tart pan on shallow baking sheet; fit the tart pan with aluminum foil or parchment paper, fill with beans or pie weights, and bake in the middle of preheated oven for 15 minutes; carefully remove the foil with beans and bake for another 5 minutes.
  • For filling: Turn the heat down to 375F; quarter, core, and peel the apples; cut into 1/4" lengthwise slices; toss them in a bowl with the sugar and cinnamon, then arrange them in the crust in concentric circles; bake in the upper third of preheated oven for about 20 minutes, or until they start to color and are almost tender; remove from oven and let cool while preparing the custard.
  • For custard: Beat the egg and sugar together in a mixing bowl until mixture is thick, pale yellow, and falls back on itself forming a slowly dissolving ribbon; beat in the flour, then the cream, and finally the cognac; pour the mixture over the apples; it should come almost to the top of the pastry shell; return to oven for 10 minutes, or until cream begins to puff.
  • Sprinkle with icing sugar (placed in a sieve and sprinkled evenly over) and return to oven for 15 to 20 minutes more.
  • Tart is done when top has browned and a knife plunged into the custard comes out clean; unmold the tart; cool 10 minutes and serve.

CUSTARD APPLE PIE

Custard Apple Pie image

I found this recipe when I was looking for an alternative to double crusted apple pie but a little fancier than the Dutch version. This actually calls for peaches instead of apples, but having none on hand and "baker's itch" I substituted apples, added the cinnamon, and it turned out so well that I have yet to try it with peaches. I like it best served a little warm.

APPLE CUSTARD PIE

Apple Custard Pie image

Don't be intimidated by the kataifi (shredded phyllo); it's easy to find and comes in a big bunch that you simply need to pull apart before baking.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Pie & Tarts Recipes

Time 2h25m

Yield Makes one 9-inch pie

Number Of Ingredients 12

3 ounces frozen kataifi (shredded phyllo), thawed (1 cup packed)
3 tablespoons unsalted butter, melted
1 tablespoon unsalted butter
5 baking apples, such as Pink Lady, peeled, cored, and sliced into 1/2-inch wedges
1/4 cup sugar
3/4 cup sugar
1 cup heavy cream
1 large egg, plus 1 large egg yolk
2 cups whole milk
1/2 cup sugar
Salt
1/2 cup semolina flour

Steps:

  • Make the crust: Preheat oven to 325 degrees. Arrange a 1/2-inch-thick layer of kataifi into the bottom and up and over the sides of a 9-inch pie plate (it will shrink during baking); brush all over with melted butter. Bake until golden, about 25 minutes.
  • Meanwhile, make the caramelized apples: Melt butter in a large high-sided skillet over medium-high heat. Add apple wedges and sugar. Cook, stirring occasionally, until apples are soft and caramelized, about 40 minutes. Transfer apples to a medium bowl.
  • Make the caramel: Add sugar to skillet. Cook over high heat until sugar dissolves and turns medium amber. Remove skillet from heat. Slowly and carefully stir in cream (it will bubble and steam as you add it).
  • Cover bottom of crust with 3/4 cup caramelized apples. Drizzle apples with 2 tablespoons caramel.
  • Make the custard: Whisk to gether egg and yolk in a medium bowl. Bring milk, sugar, and 1/4 teaspoon salt to a simmer in a medium saucepan over medium heat. Gradually add semolina flour, whisking constantly, until mixture starts to bubble, about 30 seconds. Remove from heat, and slowly whisk one third of the semolina mixture into egg mixture. Return entire mixture to saucepan. Cook, whisking constantly, until thick, about 30 seconds.
  • Pour custard over caramelized apples into crust. Let stand until set, about 1 hour. Top with remaining caramelized apples just before serving. Drizzle top of pie with some caramel (reheat if needed). Serve immediately.

Time 1h40m

Number Of Ingredients 12

1 1/2 lb granny smith apples, peeled, cored, cut into small pieces
1 Tbsp calvados, or apple brandy or white rum or omit
1 tsp lemon juice, fresh
1 c plus 2 tablespoons all purpose flour
1 c plus 1 tablespoon granulated sugar
2 tsp baking powder
1/2 tsp salt
1 large egg-plus 2 more large yolks
1 c vegetable oil only
1 c whole milk
1 tsp vanilla extract
garnish with sifted powdered sugar,optional

Steps:

  • 1. Adjust oven rack to lower-middle and heat oven to 325^. Spray a 9-inch springform pan with vegetable spray. Place pan on a rimmed baking sheet lined with foil. Place chopped apples into microwave safe place for about 3 minutes. Toss apples with the Calvados and lemon juice and set aside to let them cool for at least 20 minutes.

  • 5. Whisk remaining 2 Tablespoons flour into the 1 cup of reserved batter. Pour over batter in pan and spread evenly to pan edges and smooth surface. Sprinkle remaining Tablespoon of granulated sugar evenly over cake.
  • 6. Bake until center of cake is set and toothpick inserted in center comes out clean and top is golden brown, about 1 hour and 15 minutes. Transfer pan to wire rack; let cook for 5 minutes. Run knife around sides of pan so top does not crack as it cools completely, 2 to 3 hours. Dust lightly with powdered sugar, cut into wedges and serve.
  • 7. Note: Adding the extra flour creates a tender airy top. Adding the 2 extra yolks creates a creamy, dense custard bottom.

DUTCH'S EASY-EASY APPLE CUSTARD PIE

Dutch's EASY-EASY Apple Custard Pie image

This may not look so pretty, but it was sure gone in a hurry! It's another way that I found to use the Jell-O Cook&Serve Custard that I like to use.

Provided by Dutch Reyveld

Categories     Pies

Time 1h10m

Number Of Ingredients 3

1 frozen pie crust
1 can apple pie filling
1 pkg jell-o cook&serve custard

Steps:

  • 1. Blind bake the frozen pie crust for 5~10min @ 350^
  • 2. Load the full can of pie apples into the crust
  • 3. Make the Custard according to instructions on the box. I cut the milk down a little and do it in the micro-wave.
  • 4. Pour the Custard over the apples and bake about 35~40min @ 350^ or until the Custard is set. Let cool and then into your fridge for a couple hours before you cut. It doesn't get much easier than this! Because I thought the canned apples were too sweet, I plan to poach my own, using a Splenda simple syrup next time. I'm also going to try Pears when they're in season.

Apple custard recipes are versatile and can be made in many different variations. This dessert is perfect for any occasion, be it a fancy dinner party or a casual evening at home with your family.

The History of Apple Custard

The origins of apple custard are unclear, but custards have been a popular dessert for centuries. In medieval times, custard was used as a filling for pies and tarts. Custard is made by cooking milk or cream with egg yolks, sugar, and flavorings. The addition of apple to custard was a natural evolution of this dessert.

Types of Apple Custard Recipes

There are many different types of apple custard recipes, each with its own unique flavor profile. Some of the most popular variations are:
Classic Apple Custard
This is the most simple and traditional version of apple custard. It consists of custard and sliced apples baked together. The custard is usually flavored with vanilla extract or cinnamon, and the apples are typically topped with a layer of caramel.
Apple and Cinnamon Custard
This variation of apple custard is flavored with cinnamon and nutmeg. The custard is made with a combination of milk and cream, and the apples are sliced and mixed with the cinnamon-spiced custard. The finished dish is garnished with a sprinkle of cinnamon and nutmeg.
Apple and Pear Custard
For this recipe, both apples and pears are used to make the custard. The fruit is sautéed in butter and sugar before being added to the custard mixture. The custard itself is flavored with vanilla, and the finished dish is garnished with chopped nuts.
Apple and Cranberry Custard
This variation of apple custard is perfect for fall and winter. The apples are mixed with fresh cranberries, giving the dessert a tart twist. The custard is flavored with cinnamon, nutmeg, and orange zest, and the finished dish is garnished with a sprinkling of fresh cranberries.

Tips for Making Apple Custard

To make a perfect apple custard, here are some tips to keep in mind:
Use fresh apples
Choose apples that are ripe and firm. Avoid using apples that are too soft or mushy, as they will become even softer when baked in the custard.
Choose the right custard dish
Use a ceramic or glass dish that is deep enough to hold the custard and the apples. A shallow dish may cause the custard to overcook and become dry.
Precook the apples
For a softer texture, precook the apples in a saucepan with some sugar and butter before adding them to the custard mixture.
Use quality ingredients
Use fresh milk and cream, and high-quality vanilla extract or spices. The quality of your ingredients will make a big difference in the taste and texture of the final dish.

Conclusion

Apple custard is a delicious and indulgent dessert that can be enjoyed in many different variations. Whether you prefer a classic apple custard or a more exotic apple and cranberry custard, this dessert is sure to please. Keep in mind a few key tips when making your apple custard, and you'll be well on your way to creating a delicious and satisfying dessert for any occasion.
Apple custard is a dessert that is both delicious and easy to make. Custard is a creamy mixture of milk, eggs, sugar, and vanilla, while apples add a fruity and slightly tart flavor. This recipe is perfect for those who love combining fruity and creamy flavors in desserts.

Tips for Making Apple Custard

1. Choosing the right type of apples
The type of apples used in making apple custard is important as it affects the overall taste and texture of the dessert. Generally, you want to use apples that are firm and slightly tart as they hold their shape when baked and contrast well with the sweetness of the custard. Some good apple varieties to use for making apple custard are Granny Smith, Honeycrisp, Braeburn, or Pink Lady.
2. Balancing sweetness and tartness
When making apple custard, it’s crucial to achieve the right balance of sweetness and tartness. Too sweet and the dessert can become cloying, too tart and it can become sour. You can adjust the sweetness by adding varying amounts of sugar to the custard mixture. Additionally, you can add a little bit of lemon juice to the apples to help balance out the sweetness and bring out their natural tartness.
3. Using the right milk
Milk is a crucial ingredient in custard, providing the creamy base for the dessert. Whole milk is the most commonly used type of milk in custard recipes, but you can also use low-fat or non-fat milk if you prefer a lighter version. You can also use cream, half-and-half, or a combination of milk and cream to create a richer custard.
4. Temper the eggs
One of the most important steps in making custard is tempering the eggs. This means slowly adding hot liquid to the egg mixture while whisking constantly. This process prevents the eggs from curdling and creates a smooth custard. It’s important to add the hot liquid gradually and whisk vigorously to ensure a smooth mixture.
5. Preparing the apples
When preparing the apples for the custard, you should peel and core them and slice them into even pieces. This helps ensure that the apples cook evenly and hold their shape in the custard. You can also sprinkle a little bit of cinnamon and sugar on the apples before adding them to the custard to enhance their flavor.
6. Baking the custard
When baking the custard, you want to make sure that you use a baking dish that is shallow and wide enough to allow the custard to cook evenly. A baking dish that is too deep can make the custard take longer to cook or become unevenly cooked. Additionally, it’s important to avoid overcooking the custard, as this can cause it to become dry and rubbery.
7. Serving the custard
Apple custard can be served warm, at room temperature, or cold. It can also be topped with whipped cream, caramel sauce, or chopped nuts. To make it truly special, you can serve it with a scoop of vanilla ice cream on top.

Conclusion

In conclusion, making apple custard is a simple and delicious dessert that combines creamy custard with the fruity flavor of apples. With the right ingredients and techniques, you can make a perfect apple custard that is both sweet and tart. By following these valuable tips, you can create a dessert that will be a crowd-pleaser at any gathering.
