I adapted this from a 50-year-old peach crisp recipe. Although it works well with peaches, it works even better with fresh, crisp cooking apples.

HOMEMADE APPLE CRISP OR APPLE CRUMBLE

Homemade Apple Crisp or Apple Crumble image

This Apple Crisp, or Apple Crumble, is the best one that I have ever made. It has become a staple for every gathering that we hold. I hear about it if it is missing from the food line-up! I also frequently take it to potlucks, BBQ's and get-togethers. It has the perfect blend of ingredients for a true homemade, down home, apple dessert flavor. This is very comforting in the winter months served warm, yet refreshing in the summer months served at room temperature with a dollop of sour cream, cinnamon or vanilla ice cream.NOTE: Prep time does not include the 15 minute resting time after baking. Do not skip this step or the crisp will have to much unabsorbed liquid and will become messy on the plate.

Time 1h30m

Yield 1 Crisp, 12-14 serving(s)

Number Of Ingredients 15

5 lbs apples (McIntosh or Macoun)
1 orange, zest of, grated
1 lemon, zest of, grated
2 tablespoons orange juice, freshly squeezed
2 tablespoons lemon juice, freshly squeezed
1/2 cup granulated sugar
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1 1/2 cups flour
3/4 cup granulated sugar
3/4 cup light brown sugar, packed
4 tablespoons butter
1/2 teaspoon kosher salt
1 cup oatmeal
1/2 lb unsalted butter, cold and diced

Steps:

  • Preheat the oven to 350 degrees F.
  • Butter a 9 by 13 by 2-inch baking dish.
  • Zest the orange and the lemon and squeeze the juices from both.
  • Peel, core, and cut the apples into large wedges. Combine the apples with the zests, juices, sugar, and spices. Pour into the dish.
  • To make the topping, combine the flour, sugars, salt, oatmeal, and cold butter in the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed until the mixture is crumbly and the butter is the size of peas.
  • Scatter evenly over the apples and cut the 4 table spoons of butter into slices. Place the slices all over the top of the topping. If you skip this step, you may find that you have dry spots in the topping.
  • Place the crisp in its baking dish on a sheet pan to catch anything that may spill over and bake for 1 hour until the top is brown and the apples are bubbly.
  • Allow to rest for 15 minutes before serving.
  • COOKS NOTES: This can be made the day before. To store, let cool to room temperature, lightly place a paper towel on top of the crisp to absorb condensation. Cover tightly with foil, plastic wrap, or a lid. To reheat, place leftovers in the oven at 350 degrees for 15 minutes. Or, microwave single servings for 30-40 seconds at a time until warmed through.

Valuable Tips for Making Apple Crisp/Crumble for Passover and All Year Recipes

When it comes to making apple crisp/crumble, there are certain tips and tricks that can help ensure your dish turns out delicious every time. Whether you're making it for Passover, a special occasion, or just because, here are some valuable tips to keep in mind:

Choose the Right Apples

The type of apples you use can make a big difference in the flavor and texture of your apple crisp/crumble. Generally, you want to choose apples that are firm and slightly tart, as they will hold their shape and provide a nice contrast to the sweetness of the topping. Some popular apple varieties for baking include:

  • Braeburn
  • Cortland
  • Granny Smith
  • Honeycrisp
  • Jonathan
  • McIntosh
  • Rome

However, you can also experiment with different types of apples to find your favorite flavor combination. Just be aware that some apples will break down more easily than others, which can affect the texture of your dish.

Make a Delicious Topping

The topping is one of the most important elements of apple crisp/crumble, as it provides the sweetness and crunch that complements the soft, baked apples. Some tips for making a great topping include:

  • Use old-fashioned oats instead of quick oats for a heartier texture
  • Add chopped nuts like almonds or pecans for extra crunch
  • Incorporate spices like cinnamon or nutmeg for a warm and cozy flavor
  • Try swapping some of the flour for almond meal or coconut flour for a gluten-free option
  • Use a combination of butter and coconut oil for a healthier, yet still delicious, topping

Don't be afraid to experiment with different ingredients to find the perfect topping for your apple crisp/crumble. Just be sure to taste it as you go to make sure it's not too sweet or too dry.

Prep the Apples Properly

When it comes to slicing your apples, there are a few things to keep in mind for the best results:

  • Peel and core the apples before slicing them
  • Cut the slices evenly so they cook at the same rate
  • Toss the slices with lemon juice to prevent browning
  • Coat the slices evenly with sugar and spices for flavor

You can also adjust the size of your apple pieces depending on your preference. Some people like larger chunks, while others prefer smaller, bite-sized pieces. Just keep in mind that larger pieces will take longer to cook and may require more liquid.

Add Some Extra Flavors

While apple crisp/crumble is delicious on its own, there are several ways to add extra flavor and texture to your dish:

  • Stir in some dried fruit like raisins or cranberries for a sweet and tangy element
  • Add a splash of apple cider or brandy for a boozy twist
  • Top the baked crisp/crumble with a scoop of vanilla ice cream or whipped cream for a decadent dessert
  • Serve the warm crisp/crumble with a drizzle of caramel sauce for extra sweetness

These small additions can take your apple crisp/crumble to the next level and provide a unique flavor experience.

Adapt It for Passover

If you're making apple crisp/crumble for Passover, there are a few things to keep in mind to ensure it's kosher for the holiday:

  • Skip the oats in the topping and use matzo meal instead
  • Use kosher-for-Passover vanilla extract instead of regular vanilla extract
  • Make sure all of your other ingredients are kosher for Passover, including the sugar and spices

With a few simple substitutions, you can easily adapt your favorite apple crisp/crumble recipe for Passover.

Store It Properly

If you have leftovers of your apple crisp/crumble, it's important to store it properly to prevent it from getting soggy or stale. Here are some tips:

  • Cover the dish with plastic wrap or aluminum foil
  • Refrigerate for up to 5 days
  • Reheat in the oven for a few minutes to crisp it back up
  • Freeze in an airtight container for up to 3 months
  • Thaw in the fridge overnight and reheat in the oven to serve

By following these storage tips, you can enjoy your apple crisp/crumble for several days after making it.

In Conclusion

Making apple crisp/crumble for Passover or any time of year is a simple and delicious way to enjoy this classic dessert. By choosing the right apples, making a delicious topping, prepping the apples properly, adding extra flavors, adapting it for Passover, and storing it properly, you can ensure your apple crisp/crumble turns out perfectly every time. So grab some apples and get baking!
