APPLE FILLING
6 large apples, granny smith, peeled and chopped
1/4 c pecans, toasted and chopped
1/3 c brown sugar
1 medium lemon, zested and juiced (2 tbls)
2 Tbsp all purpose flour
1 tsp cinnamon
1/2 tsp nutmeg
1 tsp vanilla extract
TOPPING
1/2 c all purpose flour
1/2 c brown sugar
1/2 c pecans, toasted and chopped
1/2 c quick cut oatmeal
1/4 c unsalted butter, cold and chopped
1 tsp cinnamon
DULCE DE LECHE
1 can(s) sweetened condensed milk
1 1/2 Tbsp heavy cream
1 tsp pure vanilla extract
1/2 tsp salt, to taste

Steps:

  • 1. Tools 9" x 13" Baking Dish Medium Bowls (2) Spatula Crock Pot Tongs
  • 2. Tactics - Dulce De Leche Submerge a can of sweetened condensed milk in enough water to cover, placed the lid on at set it to low. After a few hours (2-3 to be sure), I removed it with some tongs, placed it in the sink and let it cool for 30 minutes. I then opened it up with a kitchen towel (no liquid hot magma!), add cream, vanilla, salt, blend well and voilà, Dulce de Leche.
  • 3. Tactics - Apple Crisp Pre-heat the oven to 350°F. To assemble the apple filling, place lemon zest, lemon juice, brown sugar, vanilla, cinnamon, nutmeg, and salt in a bowl and mix to combine. Place to the side. To assemble the topping, place the flour, brown sugar, oatmeal and cinnamon in the other bowl and mix to combine. Then add the butter and using either a pastry blender or your bare hands, mix until the ingredients resemble course sand. Place the apple filling into the baking dish and place the topping evenly in top. Place the dish into the oven and cook for 1 hour. The top should be nice and browned. Allow it to cool for 10 minutes and then serve warm with some cinnamon icecream. Enjoy.

¼ cup brown sugar
¼ cup white sugar
¼ cup all-purpose flour
¾ teaspoon ground cinnamon
¾ cup all-purpose flour
¾ cup quick-cooking oats
⅔ cup brown sugar
2 tablespoons brown sugar
⅓ cup butter, melted
1 (9 inch) deep-dish pie shell

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Mix apples, 1/4 cup brown sugar, white sugar, 1/4 cup flour, and cinnamon together in a bowl.
  • Combine 3/4 cup flour, oats, and 2/3 cup plus 2 tablespoons brown sugar in a bowl. Drizzle melted butter over flour mixture; stir until crumbly.
  • Pile apple mixture into the pie shell. Scatter crumbly topping over apples.
  • Bake in the preheated oven until apples start to soften, about 15 minutes. Reduce oven temperature to 350 degrees F (175 degrees C). Continue baking until apples are soft and topping is browned, about 40 minutes more.

3 tablespoons cornstarch
1 ½ teaspoons ground cinnamon
