SNICKERDOODLE SKILLET COOKIE

Snickerdoodle Skillet Cookie image

The way we get this giant snickerdoodle to crack on top is to make one big ball of dough, roll it in cinnamon sugar and then put the whole thing in a cast-iron skillet without pressing it down. It spreads as it bakes, making the signature crack in the center while the sugar on the bottom caramelizes into an irresistible crust.

Time 1h

Yield 8 servings

Number Of Ingredients 9

1 cup (2 sticks) unsalted butter
2 cups plus 2 tablespoons all-purpose flour (see Cook's Note)
1 teaspoon baking soda
1 teaspoon cream of tartar
1/4 teaspoon fine salt
1 cup plus 2 tablespoons granulated sugar
1/4 cup packed light brown sugar
1 large egg
2 teaspoons ground cinnamon

Steps:

  • Position a rack in the center of the oven and preheat to 350 degrees F. Melt the butter in a 10-inch cast iron skillet over medium heat, then set aside to cool slightly, 5 minutes.
  • Whisk the flour, baking soda, cream of tartar and salt together in a medium bowl. Vigorously whisk 1 cup of the granulated sugar, brown sugar and egg together in a large bowl. Whisk in the melted butter. (Do not wipe out the skillet.)
  • Add the flour mixture and continue whisking until the dough comes together. Let the dough and buttered skillet rest, separately, in a cool place for 30 minutes. (This allows the dough to firm up and the skillet to cool.)
  • Mix together the remaining 2 tablespoons granulated sugar and the cinnamon in a large bowl. Shape the dough into a large ball and gently roll it in the sugar mixture until evenly coated.
  • Place the dough ball in the center of the prepared skillet. Bake until the sides are browned, the center is still soft, and the surface of the cookie cracks, about 35 minutes, rotating once halfway through. Cool on a wire rack at least 15 minutes. Cut into wedges and serve warm or room temperature. Store in a sealed container at room temperature for up to 3 days.

Apple Crisp Snickerdoodle Skillet Cookie: An Overview

Apple crisp snickerdoodle skillet cookie is a delicious dessert that brings together two classic desserts in one dish. The cookie is made in a skillet and has a crisp yet chewy texture. It is loaded with apples that are cooked to perfection, making it a perfect dessert for fall or winter. The cookie is also coated with a cinnamon-sugar mixture that gives it a delightful snickerdoodle flavor. If you are planning to make this dessert, there are a few tips that you should keep in mind. Let's take a look at them.

Tips for Making Apple Crisp Snickerdoodle Skillet Cookie

1. Use a Cast-Iron Skillet
Cast-iron skillets are the best choice for making skillet cookies. They distribute heat evenly and can go from the stovetop to the oven without any issues. Additionally, cast-iron skillets have a non-stick surface that makes cleaning up a breeze. When using a cast-iron skillet, make sure to preheat it before adding your ingredients. This will help ensure that your cookie bakes evenly.
2. Choose the Right Apples
Apples are a key ingredient in this recipe, so you want to make sure you choose the right ones. Tart apples like Granny Smith or Honeycrisp work well in this recipe as they hold their shape when cooked and have a pleasant tartness that pairs well with the sweetness of the cookie. When preparing the apples, make sure to slice them thinly so they cook evenly. You can also add a bit of lemon juice to your apples to prevent them from browning.
3. Don't Overmix the Dough
When making the cookie dough, it is important not to overmix it. Overmixing can cause the cookies to become tough and chewy. Mix the dough until the ingredients are just combined, and then stop. Another tip is to chill the dough for at least 30 minutes before baking. This will help prevent the cookies from spreading too much in the skillet.
4. Add Toppings Before Baking
One of the best things about this recipe is that you can customize it with your favorite toppings. Before baking, you can sprinkle the cookie with chopped nuts, caramel sauce, or additional cinnamon-sugar mixture. Adding toppings before baking ensures that they stick to the cookie and become a delicious part of the final product.
5. Serve Warm with Vanilla Ice Cream
The best way to enjoy apple crisp snickerdoodle skillet cookie is warm with a scoop of vanilla ice cream. The coolness of the ice cream pairs perfectly with the warmth of the cookie and the tartness of the apples. If you want to take things a step further, you can also add a drizzle of caramel sauce or whipped cream on top.

Conclusion

Apple crisp snickerdoodle skillet cookie is a delicious dessert that is perfect for the fall and winter months. With the tips mentioned above, you can create a perfect cookie that is crispy on the outside and chewy on the inside. Remember to choose the right ingredients, use a cast-iron skillet, and customize the recipe with your favorite toppings. Finally, serve the cookie warm with a scoop of vanilla ice cream, and you have a dessert that is sure to impress!
