1 1/4 cups all-purpose flour
3/4 cup granulated sugar
1 teaspoon baking powder
1 teaspoon kosher salt
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon freshly grated nutmeg
1 cup Old-Fashioned rolled oats
3/4 cup chopped toasted pecans
1/2 cup plain yogurt or sour cream
1 teaspoon pure vanilla extract
2 large eggs
1 teaspoon grated lemon or orange zest, optional
1 cup shredded apples, excess moisture squeezed out
1 cup confectioners' sugar
3 tablespoons cream cheese, at room temperature
2 tablespoons milk
1/4 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 350 degrees F. Lightly brush one 9-by-5-by-3-inch loaf pan or three 6-by-3-by-2-inch mini loaf pans with melted butter and set aside.

dry indredients:
1 1/4 c flour
1 1/4 tsp baking powder
1 tsp cinnamon
1/2 tsp cardamom
1/4 tsp salt
1/4 pepper
wet ingredients:
1 stick unsalted butter
2/3 c brown sugar
1 egg
2/3 c apple pie filling
1/2 granny smith apple, diced (skin on)
1 1/2 Tbsp vanilla extract
cream cheese dollops:
8 oz cream cheese
1/3 c brown sugar

Steps:

  • 1. Melt stick of butter and set aside to cool. Take out cream cheese to soften. Preheat oven to 350*.
  • 2. Combine all the dry ingredients in bowl. Set aside.
  • 3. Combine all the wet ingredients in a different bowl: Start with butter and brown sugar; mix lightly. Add egg; mix. Add apple filling and vanilla. Mix lightly.
  • 4. Fold dry ingredients into wet ingredient bowl. Then fold in the diced apple.
  • 5. Grease and dust loaf pan with flour.
  • 6. Pour batter into loaf pan.
  • 7. Combine cream cheese with brown sugar and "drop" onto top of batter.
  • 8. Bake 30-35 minutes, until edges are browned and knife comes out clean (clean from bread part; the cream cheese will get on the knife). Remove from oven and let cool about 15 minutes. Now you can slice the bread around edge of pan and use a big spatula to help remove it from the pan. Let cool 5-10 more minutes before slicing / serving.
