1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon (or more)
1/4 teaspoon salt
2 eggs
3/4 cup dark brown sugar, firmly packed
1/4 cup vegetable oil
1/4 cup sour cream
1 teaspoon vanilla
3/4 cup apple, unpeeled and diced
3/4 cup cranberries
1/2 cup walnuts, chopped

Steps:

  • Mix flour, baking soda, cinnamon and salt in a large bowl.
  • In a separate bowl, whisk eggs, sugar, oil, sour cream and vanilla until smooth.

2 cups cored peeled chopped apples
3/4 cup sugar
2 tablespoons oil
1 egg
1 1/2 cups flour
1 1/2 teaspoons baking soda
1 teaspoon cinnamon
1 cup cranberries
1/2 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees.
  • Grease a muffin pan.
  • Combine apples, sugar and oil in a medium mixing bowl.
  • Add egg and mix well.
  • Combine dry ingredients in a separate mixing bowl.
  • Add to apple mixture, mixing just until dry ingredients are moist.
