2 cups fresh or frozen cranberries, coarsely chopped
2 medium tart apples, peeled and coarsely chopped
1-1/4 cups packed brown sugar
2 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
1 to 2 tablespoons butter

Steps:

  • On a lightly floured surface, roll half of the pastry into a 13-in. circle. Press onto the bottom and up the sides of an ungreased 11-in. fluted tart pan with removable bottom or press onto the bottom and 1 in. up the sides of a 10-in. springform pan. , In a large bowl, combine the cranberries, apples, brown sugar, flour and cinnamon; pour into crust. Dot with butter. Cut leaf shapes from the remaining pastry. Place over filling. , Place tart pan on a baking sheet. Bake at 425° for 35-40 minutes or until filling is hot and bubbly and crust is golden. Cool on a wire rack. Serve warm.

1 (9 inch) pie crust
2 cups chopped walnuts
½ cup dark brown sugar
2 eggs, divided
¼ cup butter, softened
½ teaspoon vanilla extract
1 (20 ounce) can apple pie filling
½ cup dried cranberries
1 tablespoon water
1 tablespoon Demerara sugar, or as needed

Steps:

  • Preheat the oven to 415 degrees F (210 degrees C). Line a baking sheet with parchment paper.
  • Arrange pie crust on the prepared baking sheet. Mix walnuts, brown sugar, 1 egg, butter, and vanilla extract together in a bowl. Spread the walnut filling over the pie crust, leaving a 1-inch border. Reserve 2 tablespoons of the filling in the bowl.
  • Arrange apple slices in a circular pattern over the filling. Sprinkle cranberries over the apples. Drop small amounts of the reserved walnut filling here and there over the apples. Fold crust over the filling, overlapping as necessary to form a rustic circle.
  • Beat remaining egg and water together to make egg wash. Brush edges of crust with the egg wash. Sprinkle Demerara sugar on top.
  • Bake in the preheated oven until the crust is browned and apples are bubbling, about 30 minutes. Place baking sheet on a cooling rack for 30 minutes. Lift up tart using the parchment paper and place directly on a cooling rack for 1 hour.
  • Run a large knife or angled cake spatula under the tart to release the parchment paper and transfer to a serving tray.

1/3 cup all-purpose flour

  • In a large saucepan over medium heat, bring 3/4 cup apple juice and sugar to a boil, stirring occasionally. Add apples and cranberries; return to a boil. Reduce heat; simmer, uncovered, for 5-8 minutes or until apples are tender and berries pop,. Whisk flour and remaining juice until smooth; stir into cranberry mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Cool to room temperature. , Fit pastry into an 10-in. fluted tart pan with removable bottom, or press into the bottom and 1 in. up the sides of a 10-in. springform pan. Line pastry with double thickness of heavy-duty foil. , Bake at 450° for 5 minutes. Remove foil; bake 7-10 minutes or until pastry is nearly done. Cool. Add apple mixture. 1 can(s) 21 ounce can apple pie filling
1 c fresh or frozen canberries, chopped
1/4 c chopped walnuts (optional)
1 tsp cinnamon

  • 1. Preheat oven to 400 degrees F ~ Unwrap pie crust: press seams together firmly. Place in 9 inch pie plate.

MINCEMEAT, APPLE & CRANBERRY LATTICE TART

flour , for dusting
500g puff pastry
2 Granny Smiths apples, peeled, cored and diced
140g fresh cranberries (or frozen and defrosted)
½ tsp cinnamon
½ tsp mixed spice
1 tbsp golden caster sugar , plus extra for sprinkling
zest 0.5 lemon
411g jar mincemeat
1 egg , beaten
whipped cream or brandy cream, to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6 and put a baking sheet in to heat up. Lightly flour a work surface, roll out the puff pastry to a 30 x 45cm rectangle, then put on a sheet of baking parchment. Mix together the apples and cranberries, then add the cinnamon, mixed spice, sugar, lemon zest and mincemeat, and mix again.
  • Arrange the pastry in front of you with a short edge nearest to you. Spread the mincemeat mixture in a line down the centre, about 12cm wide, leaving 2cm of pastry at the top and bottom.
  • To create the lattice pattern, start at the top of the pastry and cut a 1.5-2cm-wide horizontal strip of pastry on both sides of the mincemeat filling (so it is still attached next to the filling). About 1.5cm in from the filling, cut out a 0.5cm strip of pastry and remove this, then cut another 1.5-2cm strip (you're creating a pattern like the teeth of a comb). Repeat this method until you get to the bottom of the pastry. You'll need to cut out the final strip and remove this. Fold the top and bottom flaps of pastry up and over the filling. Fold the strips of pastry diagonally over the filling, starting from the top until you reach the bottom, creating a lattice pattern. You can now chill the tart for up to 2 days, or freeze for up to 2 months.
  • Brush the tart with the egg and sprinkle with the extra sugar. Using the baking parchment, transfer the tart to the hot baking tray. Bake for 20-25 mins or until golden brown on top (add an extra 10-15 mins if baking from frozen). Leave to cool for 5 mins before serving with whipped cream or brandy cream.

3 cups Granny Smith apples, peeled and thinly sliced
3 cups Golden Delicious apples, peeled and thinly sliced
1 cup packed light brown sugar
1 cup chopped walnuts
1 cup fresh or frozen cranberries
1 stick unsalted butter, melted
Vanilla ice cream

Steps:

  • For pastry: Mix the all-purpose flour, sugar, and salt in a food processor. Pulse until mixture resembles coarse meal. With processor running add enough ice water to to gather into a ball. Wrap dough in plastic wrap and refrigerate at least 1 hour. On a floured surface and with a floured rolling pin, roll pastry into a 12 or 13-inch round. Don't trim ragged edges. Turn a large baking sheet upside down, mist lightly with cooking spray and place pastry on it. Preheat oven to 375 degrees with rack in the middle position. Combine Granny Smith and Golden Delicious apples and heap onto a pastry into a 9-inch circle. In a bowl, combine brown sugar, walnuts, cranberries and melted butter. Mix well and spread mixture evenly on top of the apples. Bring outer edges of pastry up and over to partially cover filling, pleating pastry as necessary to maintain a rough round circle. Bake 40 to 50 minutes until apples are tender and topping is crisp and bubbling. Cool tart on a rack until warm. Cut into wedges and top with vanilla ice cream.

8 tablespoons unsalted butter, room temperature
1/4 cup plus 1 tbsp. granulated sugar
1 egg yolk
1 2/3 cups cake flour, sifted
1 1/2 lbs tart apples (granny smith)
1 cup fresh cranberries, rinsed and picked over
2 tablespoons all-purpose flour
2 teaspoons all-purpose flour
2/3 cup granulated sugar
1/2 teaspoon cinnamon
1 cup rolled oats
3/4 cup all-purpose flour
2/3 cup light brown sugar (packed)
6 tablespoons unsalted butter, melted

Steps:

  • Make the dough: In a large bowl, using an electric mixer, cream the butter and sugar on medium speed until light and fluffy. Beat in the egg yolk until incorporated. On low speed, mix in the flour until the dough just comes together. Turn out on a lightly floured surface and knead 3 or 4 times to form a smooth ball. Pat the dough into a 6-inch disk. Press the dough evenly into the bottom and up the sides of an 11-inch by 1-inch fluted tart pan with a removable bottom. Prick all over with a fork. Refrigerate for 1 hour.
  • Preheat the oven to 375 degrees. Place the tart shell on a baking sheet and bake for 10-15 minutes, until just starting to color. Set aside.
  • Make the filling: Peel, quarter and core the apples; slice lengthwise 1/4 inch thick. In a bowl, toss the apples and cranberries with the flour. Sir in the sugar and cinnamon. Mound the filling in the tart shell.
  • Make the topping: In a medium bowl, combine the oats, flour and brown sugar. Pour in the butter and crumble the mixture with your fingers. Pile it on the fruit to cover completely.
  • Bake the tart for about 40 minutes, or until the topping is golden, the filling is bubbling and the apples are tender when pierced. (Cover loosely with foil if the top gets too brown too soon). Transfer to a rack to cool. Prep time includes refrigeration time for crust.

CRANBERRY APPLE TART

It's easy to love apple pie. Turning out the perfect crust? Not so easy. Which is why this apple and dried cranberry tart does away with the hard part without sacrificing the joy of baking. This recipe uses purchased pizza dough to create a thin crust that is topped with tart apple slices.For a nice finish, dust the tart with powdered sugar, or a blend of powdered sugar and cinnamon. If you'd prefer a more traditional crust, a prepared pie crust also could be used. But pizza crust lends a nice chew that works well with the tender apple slices. Be sure to let the dough come to room temperature before rolling it. The dried cranberries can be soaked in water or juice for 15 minutes before using. This isn't necessary, but it makes them plump and juicy. Be sure to drain them well before placing them on the tarts.

2 lb navel oranges, plus 12 oz. bag of fresh cranberries
1 lb apple, winesap, mcintosh, pippin or your choice, cord, peeled and cut into 1/2 inch pieces
1 1/4 c sugar
1 c golden raisins
1 tsp cinnamon, ground
1/2 c orange juice, fresh
1 Tbsp orange liqueut
1 Tbsp freshly grated orange rind
FOR CRUST ---THE DOUGH ALSO MAKES COOKIES
2 1/4 c flour
1/3 c almonds, slivered
1/4 c sugar
1/2 tsp salt
1/4 c sweet (unsalted) chilled raw organic butter, cut into pieces
1/4 tsp almond extract or pure vanilla extract
6 Tbsp ice water or more
GLAZE
1 egg beaten with 1 tblsp. ice water
TO FINISH
powdered sugar for dusting
vanilla ice cream or whipped cream

  • 1. For Filling: Grate enough peel from 1 orange to measure 1 tablespoon and reserve. Cut all peel and pith from oranges. Cut between membranes of oranges with small sharp knife to release segments. Cut segments into thirds.

  • Crust:
  • Preheat oven to 350. cream together the butter and sugar. Beat in the egg yolks until smooth.
