4 c coarsely chopped apple
2 c brandy
1 c sugar
4 inch stick cinnamon, broken

Steps:

  • 1. In a large jar with a screw-type lid, combine apple, brandy, sugar and cinnamon; cover tightly. Invert jar. Let stand for 24 hours. Repeat turning process till sugar dissolves. Store in cool, dark place for 4-6 weeks. Strain through cheesecloth into bottles; cover. Makes 2 1/2 cups.

It's apple time! This is wonderful apple brandy. It's quick and easy. The longer it sits, the better. I just strain it through cheesecloth before serving, if it settles again. I have also used coffee filters for a fine strain, it just takes longer. I have some that is 8 years old and it is a beautiful amber color and very smooth.

6 cups apples, seeded and coarsely chopped
1 1/2 cups sugar
four inch cinnamon stick, broken in half
1/8 teaspoon pure vanilla extract
3 cups 80-proof brandy

Steps:

  • I remove the seeds because I think they make it bitter if left in the apple.
  • I don't use top shelf brandy, I use a less expensive brandy but not the cheapest either, something in between.
  • I use a glass gallon screw-top jar.
  • Combine all ingredients and place cover on tightly-invert jar, I always place it in a large pan, just in case it might leak.
  • (although, this has never happened) Let jar stand 24 hours, turn jar upright and let stand another 24 hours.
  • Repeat process until sugar dissolves.
  • Store in a dark, cool place 4-6 weeks.
  • Strain through cheesecloth into decanter.
  • Note: I always use very dark red sweet apples and I think that it is the dark red skin that gives the brandy a nice color.

Now I always have apple pie in my frig. ;-) This cordial is so easy to make and it really does taste like apple pie. I made a few batches around the holidays. I put it in pretty bottles and gave it as hostess gifts. Everyone loves it.

4 granny smith apples, cored and sliced
4 cinnamon sticks
800 mls of your favorite vodka (inexpensive is fine)
simple syrup
SIMPLE SYRUP
1 c sugar
1/2 c water

Steps:

  • 1. Place apples and cinnamon in a large glass container that has a tight fitting lid.
  • 2. Add vodka to apples and cinnamon.
  • 3. Make the simple syrup. I combine the water and sugar in a 2 cup pyrex measuring cup and microwave it until the sugar is disolved.
  • 4. Let the simple syrup cool and then add to vodka.
  • 5. Shake well.
  • 6. Let mixture sit for approximately 4 days. Shake the mixture twice daily.
  • 7. Remove the apples and cinnamon sticks.
  • 8. The cordial needs to be strained to remove all the residue. Coffee maker filters work well. Strain through coffee filters until the cordial is nice and clear.
  • 9. NOTE: Be sure to dampen coffee filters first. Place them in a strainer and pour liquid through the filter a little at a time. This is a time consuming process. You may have to strain it 3-4 times. I've actually opened up the filters and lined a small collender with them and then poured the liquid through.
  • 10. You can store the cordial in an empty vodka bottle or put it in little bottles to give as gifts. Keep in frig.
