Inspired by the bright flavors of cranberry sauce, tangy cranberries and sweet orange zest add a floral tartness to this apple crisp, topped with an oatmeal cookie crumble studded with almonds. The crumble topping can be made and frozen up to 1 week ahead of time while the full crisp can be assembled and refrigerated up to 1 day before, so it can easily be baked to serve after Thanksgiving dinner.

For the Almond-Oat Crumble:
1 cup all-purpose flour
1 cup granulated sugar
1 cup old-fashioned oats
1/2 cup (packed) light brown sugar
1 teaspoon vanilla extract
3/4 teaspoon baking powder
3/4 teaspoon ground cinnamon
1/2 teaspoon kosher salt
1/4 teaspoon freshly grated nutmeg
3/4 cup (1 1/2 sticks) unsalted butter, cut into pieces, room temperature
1/2 cup sliced almonds
For the Apple-Cranberry Filling:
7 1/2 pounds baking apples (such as Honeycrisp, Braeburn, and/or Golden Delicious; about 16), peeled, cored, cut into 1/8" slices
1 1/4 cups fresh or frozen cranberries, thawed if frozen
1 cup granulated sugar
1/2 cup all-purpose flour
1/2 teaspoon finely grated orange zest
2 tablespoons fresh orange juice
1 teaspoon ground cinnamon
3/4 teaspoon kosher salt
1/2 teaspoon freshly grated nutmeg
To serve:
Sweetened whipped cream or vanilla ice cream and toasted almonds (for serving)

Steps:

  • Make the crumble:
  • Mix flour, granulated sugar, oats, brown sugar, vanilla, baking powder, cinnamon, salt, and nutmeg in a large bowl. Add butter and mix with your hands until mixture feels like damp sand and clumps form. Add almonds and mix with a wooden spoon until evenly distributed and large, walnut-sized clumps form. Freeze 30 minutes.
  • Make the filling:
  • Toss apples, cranberries, granulated sugar, flour, orange zest and juice, cinnamon, salt, and nutmeg in a large bowl. Let stand 10 minutes.
  • Bake the crisp:
  • Meanwhile, preheat oven to 350°F. Place baking dish on a foil-lined rimmed baking sheet (if using a Dutch oven, you don't need the baking sheet).
  • Toss apple mixture again, then transfer to baking dish, leaving some juices behind. Break crumble into smaller pieces, leaving some larger clumps. Top apples with crumble, mounding slightly if needed.
  • Bake apple crisp until crumble is golden brown and filling is bubbling through in the center, about 1 hour. Transfer baking dish to a wire rack and let cool 10 minutes. Serve warm with whipped cream or ice cream topped with almonds.

In this version of apple crisp, prepared sugar cookie dough is used to create a chewy, crispy, sweet and all-but instant topping for the classic fall dessert. And there's plenty of room for improvisation here. If you like your crisps with large chunks of topping, skip the food processor and oats. Simply break off clumps of dough and scatter them over the apples (or pears or a blend). The cookie dough also could be adulterated with all manner of add-ins, from candy bits and chocolate chips to dried fruit or nuts. With the exception of nuts, add-ins are best mixed into the dough and oats after processing. For speed and ease, this recipe calls for prepared cookie dough (the sort found in the grocer's refrigerator case), but if you have the time homemade dough would taste even better. And when serving, don't forget the vanilla ice cream. After all, milk and cookies go so well together.

1 pouch Betty Crocker™ oatmeal cookie mix
1/2 cup butter, softened
1 egg
1 tablespoon water
1/3 cup old-fashioned oats
1/3 cup pecans or walnuts, chopped
1/4 cup butter, cold and cut into cubes
3 medium apples, cored and thinly sliced
1 teaspoon lemon juice
1/3 cup granulated sugar
1/2 teaspoon ground cinnamon
1 cup powdered sugar, sifted
2 to 3 tablespoons milk
1 teaspoon vanilla

Steps:

  • Heat oven to 375°F. Spray large round pizza pan with cooking spray.
  • Measure out 1/3 cup of the oatmeal cookie mix, and set aside.
  • In medium bowl, beat remaining cookie mix with the butter, egg and water 2 to 3 minutes or until smooth and creamy. Drop dough onto pan, and spread so it completely covers the bottom.
  • Bake 5 to 6 minutes or until edges just begin to turn brown.
  • In medium bowl, mix reserved cookie mix, the oats and nuts. Use pastry blender to cut butter into dry ingredients until it is the size of small peas.
  • In large bowl, toss sliced apples, lemon juice, granulated sugar and cinnamon. Scatter apples on top of partially baked cookie crust, and sprinkle with oat mixture.

2 3/4 cups Gold Medal™ all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup unsalted butter, softened
1 1/4 cups granulated sugar
1 teaspoon vanilla
1 egg
1/3 cup packed light brown sugar
1/4 cup Gold Medal™ all-purpose flour
1/2 teaspoon ground cinnamon
3 tablespoons cold unsalted butter
2 containers (4 oz each) Yoplait® Original 99% Fat Free apple crisp yogurt (from 4-pack)
1/2 container (8 oz) frozen whipped topping, thawed

Steps:

  • Heat oven to 375°F. Spray 24 mini muffin cups with cooking spray.
  • In large bowl, stir together 2 3/4 cups flour, the baking soda and baking powder with whisk until well combined. In medium bowl, beat 1 cup butter and the granulated sugar with electric mixer on medium speed until light and fluffy. Beat in vanilla and egg.
  • Gradually stir flour mixture into butter mixture until a dough forms. Roll dough into 1-inch pieces; press each piece lightly into muffin cup. Make small indentation in top of each piece of dough.
  • Bake 10 to 15 minutes or until golden brown. If indentations no longer remain, use back of shot glass to lightly press down center of each cookie cup. Cool in pan 10 minutes. Using butter knife, carefully remove cookie cups from muffin cups to cooling rack. Set aside to cool completely.
  • Meanwhile, reduce oven temperature to 350°F. In small bowl, stir together brown sugar, 1/4 cup flour and the cinnamon. With pastry blender or fork, cut in 3 tablespoons butter until mixture looks like coarse crumbs. Press Streusel in bottom and up sides of ungreased 9-inch glass pie plate.
  • Bake about 10 minutes or until edges are golden brown. Cool slightly. With fork, break into small pieces. Set aside to cool completely, about 30 minutes.
  • To serve, in large bowl, fold yogurt into whipped topping. Spoon filling into cooled cookie cups. Top each with streusel. Store in refrigerator.
