Time 45m

Yield Makes 6 large popovers or 10 small popovers

Number Of Ingredients 9

3 large eggs, room temperature
1 1/2 cups whole milk, room temperature
1 1/2 cups all-purpose flour
1 teaspoon coarse salt
1/4 cup plus 1 tablespoon sugar, divided
1/2 teaspoon ground cinnamon
2 tablespoons melted unsalted butter
Vegetable-oil nonstick cooking spray
1/2 teaspoon pure vanilla extract

Steps:

  • If eggs and milk are cold, before combining, submerge whole eggs in warm water 10 minutes and heat milk until just warm. Preheat oven to 450 degrees with a nonstick popover pan on rack in lowest position.
  • After you have combined eggs and milk in a large bowl, whisk together with vanilla until very frothy. This should only take about 1 minute. Have the flour and salt measured out and ready to go.
  • Add flour, salt, and 1 tablespoon sugar to egg mixture. We tested out a blender and an electric stand mixer when making the batter, but concluded that whisking by hand produces the most tender, airy popovers.
  • Whisk flour and salt into egg mixture just until batter is the consistency of heavy cream with some small lumps remaining. See those air bubbles? They are what will cause the popovers to rise.
  • Remove popover pan from oven and coat with cooking spray. If you prefer a standard muffin tin, only coat (and fill) the outer cups; they get better circulation in the oven. (Also, reduce baking time by 5 minutes.)
  • Fill popover cups about three-quarters full with batter. Bake 20 minutes, then reduce oven temperature to 350 degrees. Continue to bake until golden brown and dry to the touch, about 20 minutes more.
  • Combine 1/4 cup sugar and cinnamon. Brush tops of baked popovers with melted butter, then coat in cinnamon sugar.
  • Popovers lose their crunch if they linger in the pan, so turn them out on a wire rack immediately and poke a small opening in the side of each with a paring knife to let the steam escape. Serve right away.

Valuable tips for making apple cinnamon popovers:

1. Use a popover pan:
A popover pan is essential for making perfectly puffed and tall popovers. This special pan has deep wells that allow the batter to expand and rise. If you don't have a popover pan, you can use a muffin tin, but the results may not be as impressive.
2. Preheat the oven:
Preheat the oven to 450°F with the popover pan inside. This will ensure that the pan is hot when you pour the batter in, which helps the popovers to rise faster.
3. Use room temperature ingredients:
Make sure your eggs, milk, and butter are at room temperature before starting the recipe. Using cold ingredients can hinder the rise of the popovers.
4. Don't overmix the batter:
Mixing the batter too much can result in tough and chewy popovers. Mix just until the ingredients are combined, and then stop.
5. Add diced apples and cinnamon:
Adding diced apples and cinnamon to the batter gives the popovers an extra burst of flavor and texture. The apples also add moisture to the popovers, making them even more tender.
6. Fill the popover wells halfway:
Fill the wells of the popover pan about halfway with batter. This allows enough room for the popovers to rise without overflowing.
7. Bake at a high temperature:
Bake the popovers at a high temperature of 450°F for the first 15 minutes. This high heat helps the popovers to puff and rise quickly.
8. Reduce the oven temperature:
After the first 15 minutes of baking, reduce the oven temperature to 350°F and continue baking for another 15-20 minutes until the popovers are golden brown and crisp on the outside.
9. Make the brown sugar butter glaze:
While the popovers are baking, prepare the brown sugar butter glaze. Combine butter and brown sugar in a saucepan and cook until the sugar has dissolved and the mixture has thickened.
10. Brush the popovers with the glaze:
When the popovers are done baking, remove them from the pan and brush them generously with the brown sugar butter glaze. This adds a sweet and caramelized finish to the popovers.

Conclusion

Apple cinnamon popovers with brown sugar butter recipes are a delightful treat that are perfect for any occasion. By following these valuable tips, you can ensure that your popovers turn out perfectly every time. Be sure to use a popover pan, preheat the oven, use room temperature ingredients, add diced apples and cinnamon to the batter, fill the wells halfway, bake at a high temperature, reduce the oven temperature, make the brown sugar butter glaze, and brush the popovers with the glaze.
