Time 1h20m

Yield 10

Number Of Ingredients 8

1/2 cup butter or margarine
2 cups sugar
2 cups water
1 1/2 cups Gold Medal™ self-rising flour
1/2 cup shortening
1/3 cup milk
2 cups finely chopped peeled baking apples (2 medium)
1 teaspoon ground cinnamon

  • On lightly floured surface, knead dough just until smooth. Roll out dough to 12x10x1/4-inch rectangle.
  • In medium bowl, gently stir apples and cinnamon until coated. Sprinkle apples evenly over dough. Beginning with long side, roll up jelly-roll fashion. Cut into 16 slices, each about 1/2 inch thick. Arrange slices in baking dish over melted butter. Pour sugar syrup carefully around and over rolls. (This looks like too much liquid, but crust will absorb it.)
  • Bake 40 to 45 minutes or until golden brown. Cool 15 minutes before serving.

When making apple cinnamon filling, use fresh apples that are juicy and have a sweet taste. Preferably, use Granny Smith or Honeycrisp apples as they are firm and do not lose their shape when baked. The cinnamon used should be of good quality and freshly ground for the best flavor. When making the puff pastry, use high-quality butter and flour to create a flaky, crispy texture.

Tip 2: Roll the puff pastry into an even rectangle

When rolling out the puff pastry, try to create an even rectangle to make it easier to roll and avoid the filling from spilling out. Create straight edges by using a ruler or a straight edge tool. Rolling out the pastry on a piece of parchment paper will help it from sticking to the surface and make it easier to transfer onto the baking sheet. Use a rolling pin dusted with flour to prevent the pastry from sticking to the rolling pin. Roll out the pastry to the desired thickness, but ensure that it is not too thin as it will become too brittle and will not hold well when rolled up with the filling.

Tip 3: Spread the filling evenly

When spreading the apple cinnamon filling on the rolled-out pastry, ensure that you spread it evenly to prevent the filling from spilling out during baking. Use a spoon or spatula to spread the filling thinly on the surface of the pastry, ensuring that the filling is not too thick. Leave approximately 1 inch at the edges to prevent the filling from spilling out.

Tip 4: Roll the pastry tightly

When rolling the pastry, ensure that you roll it tightly to ensure that it holds together and creates a presentable spiral shape. Use the parchment paper underneath to assist you to roll it up by lifting it and rolling it onto itself. Use your hands to create a tight spiral, but be gentle not to tear the pastry. When you reach the end of the pastry, use a bit of cold water to seal the edges and prevent the pastry from unrolling during baking.

Tip 5: Chill the pastry before baking

After rolling the pastry with the filling, chill it in the refrigerator for at least 20-30 minutes before slicing it. Chilling the pastry helps it to become firm, making it easier to cut and shape while preventing the filling from spilling out.

Tip 6: Cut the pinwheels evenly

When slicing the pinwheels from the chilled pastry, make sure that you cut them evenly to get consistent sizes. Use a sharp knife or a serrated knife to cut the pastry into thin slices of approximately ¼ inch. Gently place the pinwheels onto a lined baking sheet, ensuring they are spaced out to prevent them from sticking to each other when they expand during baking.

Tip 7: Bake at the appropriate temperature

Bake the apple cinnamon pinwheels at the appropriate temperature and for the right duration. Preheat the oven to the recommended temperature given in the recipe. Bake the pinwheels for approximately 15-20 minutes or until they are golden brown. When baking, ensure that you check on them regularly to avoid them from overbaking and becoming dry or burnt.

Tip 8: Garnish with powdered sugar or glaze

After baking, garnish your apple cinnamon pinwheels with powdered sugar or glaze to add flavor and make them visually appealing. To make a glaze, mix powdered sugar with a few drops of milk or cream to make it runny. Drizzle the glaze over the cooled pinwheels or sprinkle some powdered sugar to create a delicate finish.
