2 Granny Smith apples
2 anjou pears
1 orange, zested and juiced

1/4 cup cornstarch
1 tablespoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
One 14-ounce can whole cranberry sauce
1 cup pecans
1 cup granulated sugar
2 tablespoons unsalted butter
Pinch of kosher salt
2 1/4 cups heavy cream
1 cup whole milk
1 cup granulated sugar
1 tablespoon ground cinnamon
6 cinnamon sticks
5 large egg yolks
Butter, for greasing the dishes

Steps:

  • For the crisp topping: In a large bowl, mix together the flour, granulated and brown sugars, oats, pecans and salt. Add the cubed cold butter and mix until crumbly.
  • Chill until ready to use. Store leftover topping in the freezer.
  • For the crisp filling: Peel the apples and pears, then dice into large pieces and put in a bowl. Toss in the orange and lemon zest and juice, granulated sugar, cornstarch, vanilla, cinnamon and ginger. Add the cranberry sauce and toss until thoroughly combined
  • For the toffee pecans: Combine the pecans, granulated sugar, butter and salt in a medium saucepan and cook over medium heat until caramelized and golden, 5 to 10 minutes. Spread on a half-sheet pan and leave until cooled.
  • For the cinnamon creme anglaise: Heat the cream, milk, granulated sugar, ground cinnamon and cinnamon sticks in a saucepan until it boils. Remove from the heat and allow the mixture to steep for about 20 minutes. Remove and discard the cinnamon sticks.
  • Reheat the cream mixture. Whisk together the egg yolks. Then slowly whisk the cream mixture into the egg yolks by the ladleful. Return the mixture to the pot and heat over medium-high heat, whisking constantly, until the mixture coats the back of a spoon, 5 to 8 minutes.
  • Strain the mixture and divide among six 2- to 4-ounce small ramekins.
  • To assemble the crisp: Preheat the oven to 325 degrees F.
  • Grease six 6-ounce brulee dishes with butter. Spoon the crisp filling into the dishes and divide the crisp topping evenly to top them. Bake until the tops are golden and the edges are bubbling, 30 to 40 minutes, depending on the depth of the dishes.
  • Let cool until just warm, 20 to 30 minutes. Top with the toffee pecans and serve with the cinnamon creme anglaise.

1 1/2 pounds Red Delicious apples, 1/4-inch-thick slices
1 1/2 pounds Golden Delicious apples, peeled, cored, cut into 1/4-inch-thick slices
1/4 cup plus 1 tablespoon sugar
1/4 cup all purpose flour
3 1/2 teaspoons ground cinnamon
1 tablespoon cider vinegar
1/2 teaspoon salt
Basic Pie Crust
1/4 cup honey
1 tablespoon milk
Vanilla ice cream

Steps:

  • Position rack in bottom third of oven and preheat oven to 400° F. Combine sliced apples, 1/4 cup sugar, flour, 2 teaspoons ground cinnamon, vinegar and salt in large bowl; toss to blend.
  • Roll out 1 dough disk on lightly floured surface to 13-inch round. Transfer to 9-inch-diameter deep-dish glass pie dish. Trim overhang to 1/2 inch. Brush edge of crust lightly with water. Transfer apple mixture to crust, mounding in center and pressing lightly to compact. Drizzle with honey. Sprinkle with 1 teaspoon cinnamon. Roll out second dough disk to 13-inch round. Place atop apples. Trim dough overhang to 1 inch. Fold top crust edge under bottom crust edge, pressing to seal. Crimp edge decoratively. Cut several slits in crust to allow steam to escape.
  • Place apple pie on baking sheet. Bake 45 minutes.
  • Combine remaining 1 tablespoon sugar and 1/2 teaspoon ground cinnamon in small bowl. Brush top crust of pie with milk. Sprinkle with sugar mixture. Bake until crust is golden brown, apples are tender and juices bubble thickly, covering crust edges with foil if browning too quickly, about 20 minutes. Transfer pie to rack and cool.
  • Cut pie into wedges and serve with vanilla ice cream.

  • For filling:
  • Place 3/4 cup Cider-Caramel Sauce in heavy large skillet. Add apples and cinnamon. Cook over high heat until apples are crisp-tender, about 8 minutes. Cool filling completely.
  • Place rack at lowest position in oven; preheat to 375°F Divide filling among crusts, overlapping apples, if desired. 4 large Golden Delicious apples, peeled, cored, cut into 1/8 inch thick slices
1 sheet frozen puff pastry (half of 17.3 oz. package, thawed)
1 large egg, beaten to blend

Steps:

  • ICE CREAM Melt butter in heavy small saucepan over medium heat. Whisk in sugar, then half and half and salt. Bring just to a simmer, stirring to dissolve sugar. Whisk eggs in medium bowl to blend. Gradually whisk in hot half and half mixture. Return mixture to same saucepan. 1 3/4 cups milk
1/2 teaspoon vanilla extract
2 large eggs
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon ground cardamom
1/4 teaspoon kosher salt
4 Granny Smith apples, skin on, small diced
1 teaspoon lemon juice
4 ounces (1 stick) butter
1 cup apple brandy or apple whiskey
1 1/2 cups sugar
1/2 cup apple juice
1/4 cup cornstarch
1 tablespoon plus 1 teaspoon good cinnamon
1 cup prepared salted caramel
2 1/2 cups sugar
1 teaspoon lemon juice
1 cup heavy cream
2 ounces (4 tablespoons) butter
1/2 teaspoon dry chipotle powder
1/2 teaspoon vanilla extract

Twelve 10- to 12-inch flour tortillas

Steps:

  • For the cinnamon ice cream: Mix together cornstarch and 2 tablespoons milk in a bowl to make a slurry. Whisk the cream cheese into the slurry until smooth and set aside. Fill a large bowl with ice and water.
  • Combine cream, sugar, corn syrup, cinnamon, salt and remaining 2 1/2 cups milk in a 4-quart saucepan. Bring to a rolling boil over medium heat and boil for 4 minutes. Remove from heat and gradually whisk in the cornstarch slurry mixture.
  • Bring the mixture back to a boil over medium heat and switch to a spatula. Cook, stirring, until slightly thickened, 1 to 2 minutes. Remove from the heat. (If you want to add the brandy or whiskey, now is the time.)
  • Pour into a bowl and place bowl inside ice bath. Stir until cool. Spin the ice cream in an ice cream maker until frozen, then place in freezer overnight for full flavor results.
  • For the funnel cake batter: Combine milk, vanilla and eggs in a bowl and whisk to combine.
  • Combine flour, baking powder, cardamom and salt in a bowl and whisk to mix and aerate.
  • Add dry to wet and combine thoroughly until there are no lumps and it is smooth (you can also use a blender to ensure that it is a smooth batter, but if you can't, put some elbow grease into it and whisk it... if you can't, there's a whole other problem going on there... seek medical advice or suck it up and put your big-girl panties on). Set aside in refrigerator until ready for use.
  • For the apple pie filling: Stir together apples and lemon juice in a bowl. Set aside. Melt butter in a shallow pot, then add apples and stir to coat.
  • Add liquor and quickly reduce by half, then stir together sugar, apple juice, cornstarch and cinnamon in a small bowl and add that. Continue to cook until apples are softened and mixture has thickened and reduced by half, then fold in caramel. Spread on a baking sheet for quick cooling. Don't eat too much of the filling, or there won't be enough for the actual dessert. (I'm looking at you, put the spoon down.)
  • For the chipotle caramel sauce: Combine sugar, lemon juice and 1/2 cup water in a 2-quart pot thoroughly and clean down sides with a wet pastry brush to prevent crystallization.
  • Bring to a boil and let it cook until medium amber color (don't touch it, don't stir it, don't even look at it sideways, or it will know and it will crystallize on you. Seriously though).
  • Remove from heat and slowly whisk in heavy cream (it will steam and bubble and you should watch yourself or be scarred 4evah, hot sugar is no joke).
  • Whisk in butter, chipotle, vanilla and salt until combined and smooth.
  • To finish: Preheat oil to 370 degrees F in a deep-fryer.
  • Lay a flour tortilla flat on a surface, then use a pastry brush to brush the entire outer edge with the funnel cake batter. Fill with 2 scoops apple pie filling, (don't be greedy or it won't roll and close) then roll up tight. Drop the whole thing in a shallow bowl of funnel cake batter and completely coat the entire baby burrito. Use tongs to gently place the battered rolled burrito in the fryer. Cook until golden brown, 3 to 5 minutes.
  • Remove and place on a tray lined with paper towels. Place cooked pie in a serving dish and top with a generous scoop of cinnamon ice cream and a nice drizzle of chipotle caramel (don't be stingy). Now shove a bite in your piehole! Dahhhhhhlish!

1 cup whole milk
⅔ cup white sugar
2 ½ cups heavy cream
4 tablespoons ground cinnamon, divided
2 teaspoons cinnamon extract, divided
1 large apple - peeled, cored, and diced
½ cup water, or as needed
½ teaspoon light brown sugar
½ teaspoon white sugar
¼ cup crushed pecans

Steps:

  • Mix milk and 2/3 cup sugar together with an electric blender, about 2 minutes. Stir in heavy cream, 2 tablespoons ground cinnamon, and 1 teaspoon cinnamon extract with a spoon. Chill in a refrigerator for 2 hours.
  • Meanwhile, place apples into a pot and add water to cover; heat over medium heat. Add remaining cinnamon extract, remaining ground cinnamon, light brown sugar, and 1/2 teaspoon white sugar, in that order, while stirring the mixture in between each addition. Cook on medium heat until apple pieces are soft to the touch, 8 to 10 minutes. Turn off heat and pour apple mixture into a colander to drain. Transfer to a container and add pecans; allow to cool, 15 to 20 minutes. Place into a refrigerator and wait until ice cream mixture has setup for those 2 hours.
  • Pour mixture into an ice cream maker and freeze according to manufacturer's instructions, at least 18 minutes.
  • Take the top off and add your apple/pecan mixture and allow machine to mix that for you for an additional 4 to 5 minutes. At this point it should be soft-serve consistency; if hard-serve is desired place cinnamon ice cream with apple-pecan swirl into a freezer to setup for 1 additional hour.

  • To make the boiled cider: Measure 1 1/4 cups of the cider and pour into a medium sized, heavy bottom stockpot. Take a ruler or chopstick and place it in the pan to measure the depth of the cider. Make a mark on the chopstick so you'll know when the cider reduces to that amount. Add the remaining cider to the pan and bring to a boil over medium-high heat, stirring occasionally with a wooden spoon. Reduce the heat to medium-low and cook, uncovered, for 3-4 hours, stirring occasionally, or until the cider has reduced to a little less than 1 1/4 cups of syrup. Make sure you don't ignore the cider. I recommend that you check and stir it frequently. I set a timer so I would remember every 20-30 minutes in the beginning, then when it was getting thick, I stayed close by to stir more often to prevent scorching. The boiled cider is done when it coats the back of a wooden spoon and measures slightly under 1 1/4 cups of syrup. It should have the texture of maple syrup. Cool until needed for the ice cream. However, it can be added to the ice cream mixture while still warm or even hot. To make the ice cream: Place a large glass or metal pan inside another larger bowl filled with ice. Add the whipping cream and vanilla bean paste to the bowl set inside the ice bath. Set aside. Pour the milk into a heavy bottom, medium saucepan. Add 1/2 cup of sugar, salt and cinnamon. Warm over medium heat, stirring to dissolve the sugar, until the mixture almost comes to a boil. While the milk is warming, combine the remaining 1/4 cup of sugar with the egg yolks in a medium mixing bowl. Whisk vigorously until the mixture is pale and slightly thickened. Set aside. Temper the egg mixture by slowly drizzling a little of the hot milk mixture into the eggs while whisking constantly. Continue adding the hot milk to the egg yolks, a little at a time, until combined. Once most of the hot milk has been added to the eggs, pour the egg/milk mixture back into the saucepan. Heat on medium, stirring constantly, until the mixture coats the back of a wooden spoon or reaches 175 degrees on an instant-read thermometer. Remove from the heat and add 2/3 cup of the boiled cider. Stir until combined. Pour the cider custard into the cream set over the ice bath. Stir occasionally (about every 5 minutes) while cooling, about 30 minutes. Cover and refrigerate the custard for at least 8 hours or overnight before processing. Process the ice cream according to the manufacturer directions for your ice cream maker. Once processed, scoop the ice cream into a freezer safe container, layering the ice cream with the remaining apple cider syrup. Alternately, freeze the ice cream without layering with the syrup, but serve with a drizzle of syrup to taste. Freeze the container for several hours or overnight before serving.

1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk (NOT evaporated milk)
1 cup applesauce
1/2 teaspoon ground cinnamon
2 cups whipping cream, whipped

Steps:

  • In a large mixing bowl, beat egg yolks until smooth; beat in EAGLE BRAND®sweetened condensed milk, applesauce and cinnamon until well blended. Fold in whipped cream. Pour into 9x5 inch loaf pan or other 2 quart container; cover. Freeze 6 hours or until firm. Return leftovers to freezer.
