Bake, rotating halfway through, until loaf is golden brown and a tester inserted in the center comes out clean, about 1 hour, 10 minutes. Let cool on a wire rack. Soda bread is best eaten the day it is made; serve with salted butter.

What is Apple Cider Soda Bread?
Apple cider soda bread is a type of bread that is made without yeast. Instead, it uses baking soda as a leavening agent. The bread is usually made with a combination of flour, baking soda, salt, and buttermilk to create a dense, slightly sweet loaf that is perfect for breakfast or as an accompaniment to soup or stew. What sets apple cider soda bread apart from regular soda bread is the addition of apple cider. The apple cider adds a subtle sweetness to the bread and gives it a unique flavor that is perfect for fall weather. The bread is often studded with raisins or dried cranberries to add even more sweetness and texture.History of Soda Bread
Soda bread has a long history in Ireland, where it was first created in the mid-19th century. At that time, yeast was expensive and difficult to come by, so people had to find other ways to leaven their bread. Baking soda proved to be the perfect solution, and soda bread quickly became a staple in Irish homes. Today, soda bread is popular all over the world, and there are many different variations of the basic recipe. In addition to the classic recipe made with flour, baking soda, salt, and buttermilk, there are also variations made with whole wheat flour, oats, and other grains. How to Make Apple Cider Soda Bread
While there are many different recipes for apple cider soda bread out there, most follow a basic formula. The bread is made by combining flour, baking soda, salt, and sugar in a large bowl. Then, buttermilk and apple cider are added to create a wet dough. The dough is then shaped into a round loaf and baked in a hot oven for about an hour. The result is a crusty, hearty loaf that is perfect for slicing and serving alongside a pat of butter or jam.Ingredients
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/4 cup granulated sugar
- 1 1/2 cups buttermilk
- 1/2 cup apple cider
- 1/2 cup raisins or dried cranberries (optional)
Instructions
- Preheat your oven to 375°F. Line a baking sheet with parchment paper or grease lightly with cooking spray.
- In a large mixing bowl, whisk together the flour, baking soda, salt, and sugar.
- Add the buttermilk and apple cider to the dry ingredients and stir until the dough comes together. If the dough seems too dry, add a splash more buttermilk or cider.
- If using raisins or dried cranberries, gently fold them into the dough.
- Shape the dough into a round loaf and place on the prepared baking sheet.
- Use a sharp knife to score an X on the top of the loaf.
- Bake for 50-60 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
- Cool on a wire rack before slicing and serving.
Tips for Perfect Apple Cider Soda Bread
Making bread can be intimidating, but apple cider soda bread is a straightforward recipe that is hard to mess up. Here are some tips to help you get the perfect loaf every time.- Use buttermilk: The acid in buttermilk helps activate the baking soda, so don't substitute regular milk or cream for the buttermilk in this recipe.
- Don't overmix: Once the dough comes together, stop stirring. Overmixing can develop gluten and make the bread tough.
- Watch the baking time: Every oven is different, so start checking the bread a few minutes before the recommended baking time to ensure it doesn't overbake.
- Let it cool: It can be tempting to slice into a fresh loaf of bread as soon as it comes out of the oven, but resist the urge! Letting the bread cool for 10-15 minutes will allow the crust to crisp up and the crumb to set.
