The yellow cake batter gets an apple infusion with cider and shredded apples before being baked and finished with a double sprinkle of cinnamon sugar.

1 box Betty Crocker™ Super Moist™ yellow cake mix
3/4 cup apple cider
1/2 cup butter, melted
4 eggs
2 teaspoons ground cinnamon

1 cup coarsely shredded peeled tart apples (2 medium)
3 tablespoons butter, melted
1/4 cup sugar
1 teaspoon ground cinnamon

Steps:

  • Heat oven to 350°F. Generously spray 12-cup fluted tube cake pan with baking spray with flour.
  • In large bowl, beat cake mix, apple cider, 1/2 cup melted butter, the eggs, 2 teaspoons cinnamon and the nutmeg with electric mixer on medium speed 2 minutes, scraping bowl occasionally. Stir in apples. Pour into pan.
  • Bake 35 to 40 minutes or until toothpick inserted in center comes out clean. Remove from oven. Let stand 20 minutes; run metal spatula around outer and inside edges of pan to loosen cake. Remove from pan to cooling rack; place cooling rack over waxed paper.
  • Brush top and sides of cake with 3 tablespoons melted butter. In small bowl, mix sugar and 1 teaspoon cinnamon until blended. Press 2 tablespoons cinnamon mixture up side and top of cake with hand. Let stand 20 minutes. Repeat with remaining cinnamon mixture. Cool completely, about 1 hour.
  • Store loosely covered at room temperature.

1 cup apple cider

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a fluted tube pan (such as Bundt®) with cooking spray.
  • Combine cake mix, 1 cup apple cider, eggs, butter, and vanilla pudding mix in a large bowl; mix until smooth. Pour batter into the tube pan.

½ tsp. baking soda
1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt, plus more

Steps:

  • Place a rack in middle of oven; preheat to 325°F. Lightly butter an 8½x4½" or 9x5" loaf pan. Line with parchment paper, leaving overhang on both long sides. Bring cider to a boil in a medium saucepan over medium-high heat. Reduce heat and simmer until cider is reduced to ¾ cup, 8-10 minutes. Pour ¼ cup reduced cider into a small measuring glass or bowl and set aside. Transfer remaining reduced cider to a small bowl and let cool 5 minutes. Stir in sour cream and vanilla and set aside.

Whisking constantly, gradually add melted butter in a steady stream; continue to whisk until fully combined and emulsified (no spots of fat should remain). Reserve saucepan. Whisk dry ingredients into egg mixture in 3 additions, alternating with reserved sour cream mixture in 2 additions; whisk just until no lumps remain. Batter will be thin.   • Using parchment paper, lift cake onto rack and set rack inside rimmed baking sheet. Peel away parchment from sides. Brush warm butter mixture over top and sides of cake. Sprinkle generously with sugar mixture to coat every surface (use parchment to help rotate cake and collect any excess sugar). Remove parchment and let cool completely before slicing.
  • Do Ahead: Cake can be made 4 days ahead. Store tightly wrapped at room temperature.

Alex Levin, the pastry chef of Osteria Morini in Washington, adapted this Rosh Hashana honey cake recipe from his grandmother, an accomplished baker, though he put his own touches on it. Mr. Levin took out the cloves, allspice and raisins, and added an apple cider compote to the batter, which moistens the cake and gives it a caramelized apple flavor that deepens the cake beyond honey and spice. FOR THE GLAZE
1-1/2 cups powdered sugar
3 tablespoons apple cider
3/4 teaspoon pumpkin pie spice

Steps:

  • 1. Empty the contents of the boxed cake mix and pumpkin puree into a large bowl. Using a hand-mixer or stand mixer beat until well incorporated. The batter will be very thick, but will come together nicely. Pour batter into a greased 7 x 11 X 2 pan. This is the small, rectangular-sized pan from your Pyrex set. You know, the set you had to have when you got married and rarely ever used all the pieces. Finally, you have a use for it. Bake at 350 degrees for 28 minutes or until a toothpick inserted in the center comes out clean. Do not overbake. Let cool for 5-10 minutes in the pan, then flip onto a platter. Make the glaze while you're waiting. Combine powdered sugar, apple cider and pumpkin pie spice. Glaze should be thick but pourable. Add more sugar or cider if needed. Pour over the cake while still warm. Reserve some to pour over each slice when served.

Instead of using butterscotch pudding mix I used my coveted Jell-O pumpkin spice instant pudding mix...It added just the right amount of spice to the cake...And the apple...

1/4 c vegetable oil
1/4 c water
2 c canned pumpkin (not pie mix)
FOR APPLE CIDER GLAZE---
2 c powdered sugar
1/4 tsp pumpkin pie spice
3-6 Tbsp apple cider
**SUBSTITUTION (IF PUMPKIN SPICE PUDDING MIX ISN'T AVAILABLE)
I'VE TRIED SEVERAL COMBINATIONS FOR SUBSTITUTS FOR THE PUMPKIN SPICE JELLO AND THE BEST IS USING 1 BOX OF YELLOW CAKE MIX, 1 BOX OF VANILLA INSTANT PUDDING MIX, AND 2 1/2 TEASPOONS OF PUMPKIN PIE SPICES

Steps:

  • 1. Preheat oven to 350*. Grease with shortening & flour a 12 inch tube/bundt cake pan.
  • 2. mix pkg of the dry cake mix with the pkg of dry pudding mix together in large bowl & set aside.
  • 3. in another large bowl lightly beat the 4 eggs with the oil, water, & pumpkin.
  • 4. add the dry ingredients to the wet mixing until there are no large lumps. (be careful not to over mix)
  • 5. Carefully fill pan with batter. Bake at 350* for 45-50 min. (ovens vary so check at 45 min..insert a toothpick, if it comes out clean cake is done)
  • 6. Remove to wire rack to cool. While cooling make glaze by mixing the powdered sugar, 1/4 tsp of pumpkin pie spice with the apple cider. This should be thick but pourable.
  • 7. When cake has cooled for about 15 minutes, leave on wire rack and place both cake & rack on a tray or sheet of waxed paper (for easy clean up). Pour the glaze on the slightly cooled cake. When glaze has stopped dripping transfer to a serving plate.

8 oz canola oil
298 g pure cane sugar
3 lg eggs
1 C honey, good quality wildflower or blackberry
471 g unbleached all-purpose flour
1 T bakng powder
1 tsp baking soda
1/2 tsp salt
1 T + 1 tsp ground cinnamon
1/8 tsp ground clove
1/2 tsp freshly ground nutmeg
4 fl oz freshly squeezed orange juice
4 fl oz ginger ale, good quality
4 fl oz decaf espresso
2 fl oz rum
1 tsp pure vanilla extract
For the apple pie filling:
3 med apples
50 g pure cane sugar
2 T unbleached, all-purpose flour
1/2 tsp ground cinnamon
1/4 tsp freshly ground nutmeg
pinch of groung ginger
pinch of ground clove
pinch of kosher salt
1 T unsalted butter
For the caramel apple cider glaze:
1 C brown sugar
4 oz unsalted butter
4 fl oz heavy cream

Steps:

  • For the cake: Creaming method. Spray and line with parchment paper, 2 - 8" pans. One, 1/3 (1# 1.2oz) full, the other 2/3rds (2# 2.4oz) full. Bake in 350 degree (F) oven until toothpick comes out clean, around 45 minutes for the 2/3 full pan. Cool the cake layers and cut one into two equal layers. Wrap in plastic wrap separately and place in frige until ready to assemble. For the filling: peel, core and slice the apples (whatever thickness you desire). Place them in a bowl of cold water until ready to use. Combine dry ingredients. Strain the apples and place them in a saute pan with the tablespoon of butter. Sprinkle the dry ingredients over and saute until the apples are tender. You may add a little water if the filling begins to dry out before the apples are tender. For the glaze: place ingredients in a large sauce pot, bring to a boil, reduce to a simmer and cook for 2-3 minutes. Swirl the pan to combine ingredients if necesary. Let sit to thicken for approximately 30 minutes. To assemble: place one cake layer on a cake stand or plate, cover with 1/2 of the filling, place another cake round centered on top and repeat with remaining cake filling. After placing the last cake round centered on top, pour over warm (slightly cooled and thickend) caramel apple cider glaze. Enjoy.

  • Coat molds with cooking spray.

CAKE:
1 yellow cake mix
1 (15-ounce) can pumpkin puree
GLAZE:
1 1/2 cups powdered sugar
3 tablespoons apple cider
3/4 teaspoon pumpkin pie spice

Steps:

  • Empty the contents of the boxed cake mix and pumpkin puree into a large bowl. Using a hand-mixer or stand mixer beat until well incorporated. The batter will be very thick, but will come together nicely. Pour batter into a greased 7- x 11- X 2-inch pan. This is the small, rectangular-sized pan from your Pyrex set. Bake at 350°F for 28 minutes or until a toothpick inserted in the center comes out clean. Do not over bake. Let cool for 5 to 10 minutes in the pan, then flip onto a platter. Make the glaze while you're waiting. Combine powdered sugar, apple cider and pumpkin pie spice. Glaze should be thick but pourable. Add more sugar or cider if needed. GLAZE
1 1/2 c powdered sugar
3 Tbsp apple cider
3/4 tsp pumpkin pie spice

Steps:

  • 1. Preheat oven to 350^. Spray a 7x11-inch glass cake dish.Cover bottom with piece of parchment paper and spray it too. --- Cake: Combine cake mix dry with the solid pumpkin in a large mixer bowl. Beat until mixed well. Batter will be thick. Pour into prepared cake dish. Bake 28-30 minutes. Test with toothpick for doneness. Let cool 10 minutes. flip onto platter.

Steps:

  • Heat oven to 350 degrees; coat a 10-inch tube pan with removable tube insert with nonstick spray.

18 oz 70% chocolate
6 eggs
2 yolks

3 eggs yolks
1/2 cup apple cider
1/2 cup sugar
1 vanilla bean, scraped
1/2 cup whipping cream

  • Cake: Melt chocolate over a water bath. Dissolve the sugar in one cup of water. Add vanilla and bring to a simmer. Bring off the heat and let cool slightly. You could also serve with a dollop of creme fraiche or even a fruit coulis. Yummy!
