BUTTERSCOTCH DEEP DISH APPLE PIE

Butterscotch Deep Dish Apple Pie image

This is a special apple pie that Grandma liked very much. Her recipe is an old one used by many family members. She always made her crust from scratch but I often take the shortcut of using refrigerated pie pastry. This pie is especially delicious served warm with ice cream. Be sure to use a deep dish pie plate.

Time 1h5m

Number Of Ingredients 11

6 c thinly sliced peeled baking apples
1 c brown sugar, firmly packed
1/4 c water
1 Tbsp lemon juice
1/4 c all purpose flour
2 Tbsp sugar
1/2 tsp salt
1 tsp vanilla extract
3 Tbsp butter
unbaked pastry for 2 crust deep dish pie
1 Tbsp each brown sugar and white sugar

Steps:

  • 1. Preheat oven to 425 degrees. Combine apples, 1 cup brown sugar, water, and lemon juice in a saucepan. Cover and cook about 5 minutes or until apples are beginning to become tender. Mix flour, 1 cup white sugar, and salt. Stir into apples. Cook for about 2 more minutes until sauce thickens. Remove from heat and stir in vanilla and butter. Pour filling into pastry lined deep dish pie plate and cover with top crust. Cut 2 or 3 slits in pastry. Mix 1 tablespoon each brown sugar and white sugar. Sprinkle over pie crust. Bake 40-45 minutes. Cover with aluminum foil if crust starts to brown too much during last 15 minutes of baking.

BUTTERSCOTCH APPLE PIE

Butterscotch Apple Pie image

I'm pretty sure my grandmother got this recipe off the back of a bag of butterscotch chips, probably in the late 60's. I remember it was a big hit and we'd request it from her. She was a great pie maker and taught me how to make and roll out crust, a talent I'm glad she shared with me but when she died in 1975, we couldn't find...

Time 1h40m

Number Of Ingredients 8

9 in unbaked pie shell
5 c peeled and sliced apples
6 oz bag of butterscotch morsels (chips)
cinnamon
1/2 c sugar
1/2 c flour
2 tsp salt
1 c light cream

Steps:

  • 1. Combine apples and butterscotch chips and put in pastry shell. Sprinkle generously with cinnamon
  • 2. Mix sugar, flour and salt. Then add cream, about 1/3 first and stir to make a paste like mixture to get out the lumps first and then add the remaining cream and mix well. Drizzle over the apples trying to coat as many as you can.
  • 3. Place the pie in a large brown paper bag (grocery size) and put in pre-heated over at 375 degrees about 70 minutes. I always use a baking sheet to get it in and out of the oven easier.

Tips and Tricks

  • Make sure to use tart apples for this recipe. Granny Smith apples are an excellent choice because they are firm and tart. Other options include Honeycrisp, Braeburn, or Pink Lady.
  • If you prefer a thicker crust, you can use two store-bought pie crusts or double the homemade crust recipe.
  • If you want to save time, you can use pre-made butterscotch sauce instead of making your own.
  • You can add a tablespoon of bourbon to the filling for a boozy twist.
  • This tart is best served warm but can be stored in the refrigerator for up to 3 days.

Apple butterscotch tart is a delectable dessert that is perfect for fall baking or any time of the year. The combination of tart apples and rich butterscotch creates a balance of flavors that everyone will love. Apple butterscotch tart is the perfect dessert for any occasion. It’s a delicious, comforting treat that combines the tartness of apples with the sweetness of butterscotch. Making a tart can be challenging, but with the right tips, anyone can master this dessert. Here are some valuable tips to make the perfect apple butterscotch tart.

Tip 1: Choosing Apples

The first and most important tip for making an apple butterscotch tart is choosing the right apples. Apples with a firm texture that hold their shape when cooked are ideal for tart recipes. Granny Smith apples are the most popular choice for apple tarts because they are tart and have a firm texture. However, other varieties, such as Honeycrisp, Jonagold, and Braeburn, are also a great choice. The best way to determine which apple is best for your tart is to taste them for sweetness and texture.

Tip 2: Preparing the Apples

Once you have chosen your apples, the next step is to prepare them. Start by washing your apples, then peel and core them. Cut them into thin, even slices using a sharp knife or a mandolin slicer. To prevent the apples from browning, you can toss them in lemon juice.

Tip 3: Making the Butterscotch Sauce

The butterscotch sauce is the star of the apple butterscotch tart, so it’s important to get it right. To make the sauce, you will need butter, brown sugar, heavy cream, and salt. Melt the butter in a saucepan over medium heat, then add the brown sugar and stir until it dissolves. Stir in the heavy cream and salt and bring to a boil. Reduce the heat to low and stir occasionally until the sauce thickens, which should take about 5 minutes.

Tip 4: Preparing the Tart Dough

To prepare the tart dough, you will need flour, butter, sugar, and salt. Combine the flour, sugar, and salt in a mixing bowl, then add cold butter pieces. Use your fingers or a pastry cutter to work the butter into the dry ingredients until the mixture resembles coarse sand. Add a tablespoon of ice water at a time and mix until the dough comes together. Be careful not to overwork the dough, or it will become tough.

Tip 5: Rolling Out the Dough

Roll out the tart dough on a floured surface until it’s about ¼ inch thick. Use a rolling pin to transfer the dough to a 9-inch tart pan with a removable bottom. Gently press the dough into the bottom and sides of the pan, then trim off the excess dough with a sharp knife.

Tip 6: Pre-Baking the Tart Shell

Before adding the filling, pre-bake the tart shell to ensure it stays crisp. To do this, preheat the oven to 375°F, then line the tart shell with parchment paper and fill it with pie weights or dried beans. Bake the tart shell for 15 minutes, then remove the paper and weights and bake for an additional 5 minutes until golden brown.

Tip 7: Arranging the Apple Slices

Arrange the apple slices in the pre-baked tart shell by overlapping them slightly in a circular pattern. Pour the butterscotch sauce over the apples, making sure it spreads evenly. Bake the tart in the oven at 375°F for 30-40 minutes or until the apples are tender and the sauce is bubbly.

Tip 8: Serving the Tart

Once the tart is done baking, let it cool for a few minutes before removing it from the pan. Dust the tart with powdered sugar or serve it with a dollop of whipped cream. This tart is best served warm but can also be enjoyed at room temperature.

Conclusion

Making the perfect apple butterscotch tart is all about choosing the right apples, preparing them properly, making a delicious butterscotch sauce, preparing the tart dough, rolling it out, pre-baking the shell, arranging the apple slices, and serving it with a dusting of powdered sugar or whipped cream. With these valuable tips, anyone can make a delicious apple butterscotch tart that’s sure to impress.
