APPLE BUTTER BLUEBERRY MUFFINS (WHOLE WHEAT!)

APPLE BUTTER BLUEBERRY MUFFINS (WHOLE WHEAT!) image

Categories     Berry     Breakfast     Bake     Quick & Easy     Muffin     Healthy

Yield 12 muffins

Number Of Ingredients 15

Wet mix:
1/2 stick of butter (softened or melted)
1 cup brown sugar
1/4 cup of apple butter (or more if you like)
1/2 cup of milk (I used 2% and added a splash of cream)
1/2 tsp vanilla extract
Dry mix:
1 cup whole wheat flour
1/2 cup all purpose flour
1/4 cup flax meal (I think you should grind your own in your food processor or coffee grinder - I use a magic bullet, don't buy it ground or grind too much in advance as it goes rancid quickly)
1 1/2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
Mix in:
1 1/2 cup of blueberries (frozen or fresh)

Steps:

  • Position your oven rack to the middle notch and preheat to 400 degrees. Spray or line your muffin tins. Mix butter and brown sugar together. Add remaining wet ingrediants and mix well. In a separate bowl, combine dry ingrediants and mix well. Add wet mix to the dry mix and hand-mix, just until combined. Fold in the blueberries. Spoon into muffin tins. I like to toss a little bit of something on the tops- nine grain cereal, or steel cut oats (you might soak them in apple juice or something first so they're not so crunchy), even some plain old oats would look nice. Bake for 25 minutes (or until toothpick comes out clean) at 400 degrees on middle rack.

Apple butter muffins are a delightful treat that can be enjoyed any time of day. They are perfect for breakfast, as a snack or even as a dessert. Apple butter adds a rich flavor to the muffins and makes them moist and dense. Making apple butter muffins is an easy task, and there are many variations to the classic recipe that can make the muffins even more delicious.

Tip 1: Use high-quality ingredients

When it comes to baking, the quality of the ingredients makes a huge difference. The taste and texture of the muffins can vary greatly depending on the quality of the ingredients used. It is essential to use high-quality flour, baking powder, and sugar for the muffins to rise and be fluffy. Similarly, using fresh eggs, good quality butter, and pure vanilla extract will enhance the flavor of the muffins.
Types of flour to use:
  • All-purpose flour: This is the most commonly used flour for baking muffins.
  • Whole Wheat flour: Using whole wheat flour can make the muffins healthier and add a nutty flavor to the muffins.
  • Almond flour: If you want to make gluten-free muffins, use almond flour instead of wheat flour.
Quality of butter:
Using good quality butter can make a huge difference in the texture and flavor of the muffins. Unsalted butter is preferred as it allows you to control the salt content in the recipe.
Types of Sugar:
  • White sugar: This is the most commonly used sugar for baking, and it adds a sweet taste to the muffins.
  • Brown sugar: Brown sugar adds a rich, molasses flavor to the muffins and makes them moist and chewy.
  • Muscovado Sugar: This type of sugar is the closest to unrefined sugar and adds a deep caramel flavor to the muffins.

Tip 2: Add spices

Apple butter muffins taste even better with the addition of spices such as cinnamon, nutmeg, and ginger. Cinnamon is a classic addition and adds a warm flavor to the muffins. Nutmeg adds a slightly sweet and aromatic flavor, while ginger adds a slightly tangy taste to the muffins. Using these spices in the right proportions will result in a delicious apple butter muffin that is aromatic and has a mouth-watering flavor.
Some other spices to try:
  • Allspice: Allspice has a warm, slightly sweet taste with notes of cloves and cinnamon.
  • Cardamom: Cardamom has a slight lemony flavor and pairs well with apples and cinnamon.
  • Cloves: Cloves have a strong flavor and should be used in moderation. It pairs well with cinnamon and nutmeg.

Tip 3: Mix-ins and toppings

Mix-ins such as chopped nuts, raisins, or chocolate chips can add an extra dimension of flavor and texture to the muffins. Chopped walnuts or pecans add a nutty flavor, while raisins provide a chewy texture. Chocolate chips add a sweet and decadent taste to the muffins. Similarly, toppings can add an extra layer of flavor and make the muffins look more appetizing. A dusting of cinnamon and sugar on top of the muffins or a sprinkle of nuts adds a crunchy texture to the muffins.
Some other mix-ins to try:
  • Dried Cranberries: Dried cranberries have a tart flavor and add a chewy texture to the muffins.
  • Chopped Apples: Chopped apples add an extra layer of apple flavor and a crunchy texture to the muffins.
  • Shredded Coconut: Shredded coconut adds a sweet, tropical flavor to the muffins.

Tip 4: Do not overmix the batter

The key to making soft and fluffy muffins is to avoid overmixing the batter. Overmixing the batter can result in tough and dense muffins. Mix the ingredients until they are just incorporated, leaving some lumps and streaks in the batter is absolutely fine.
Some things to keep in mind:
  • Use a spatula or a wooden spoon to mix the ingredients together, avoid using an electric mixer.
  • Mix the wet ingredients in one bowl and the dry ingredients in another bowl before combining them. This method ensures that the ingredients are evenly distributed.
  • Gently fold in any mix-ins to the batter to avoid overmixing it.

Tip 5: Bake at the right temperature

Baking apple butter muffins at the right temperature is crucial. A temperature that is too high can result in a burnt exterior and an undercooked interior, while a temperature that is too low can result in flat and soggy muffins.
Some guidelines to follow:
  • Preheat the oven to the temperature specified in the recipe before baking the muffins.
  • Muffins are typically baked at 375°F for 15-20 minutes, depending on the size of the muffins.
  • Check the muffins with a toothpick before taking them out of the oven. If the toothpick comes out clean, the muffins are ready.

Conclusion

Apple butter muffins are a delicious and easy treat to make. The tips mentioned above will help you make perfect apple butter muffins every time. From using high-quality ingredients to adding spices, mix-ins and toppings, these tips will enhance the flavor and texture of the muffins. Remember to mix the ingredients gently, and bake at the right temperature to get soft, fluffy and aromatic muffins that are bursting with flavor.
