12 oz French or other firm bread, cut into 1/2-inch slices, then cut into 1 1/2-inch pieces (10 cups)
2 tablespoons butter or margarine, melted
2 tablespoons granulated sugar
1/2 teaspoon ground cinnamon
1/2 cup butter or margarine
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup half-and-half

Steps:

  • Heat oven to 325°F. Spray bottom and sides of 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In large bowl, beat 4 whole eggs, 1 egg yolk and 3/4 cup granulated sugar with wire whisk until well blended. Beat in milk, whipping cream, vanilla and 1 teaspoon cinnamon until well blended. Stir in apples and 7 cups of the bread pieces. Let stand 20 minutes.
  • Pour apple mixture into baking dish. Lightly press remaining 3 cups bread pieces on top of mixture in baking dish. Brush top of bread with melted butter. In small bowl, mix 2 tablespoons granulated sugar and 1/2 teaspoon cinnamon; sprinkle over top.
  • Bake 55 to 65 minutes or until top is puffed and light golden brown (center will jiggle slightly). Cool 30 minutes.
  • In 1-quart saucepan, heat sauce ingredients to boiling over high heat, stirring constantly, just until butter is melted and sauce is hot. Serve warm bread pudding with sauce.

Just in time for autumn and Halloween - this delicious pudding is a real winner, with the subtle taste of toffee and apples all cooked together in a bread and butter pudding! I found this recipe in a cookery leaflet promoting English apples, and it is now one of our favourite puddings for the cooler months. I have given a variety of breads/yeast cakes to use; although I have made this with all of the choices on offer, my favourite still remains the brioche - I am sure croissants would work very well too.

6 ounces unsalted butter
6 tablespoons golden syrup
6 ounces dark muscovado sugar
4 apples, peeled, cored and cut into small pieces
2 eggs, beaten
7 ounces milk
7 ounces double cream
1 lb sliced white bread, crusts removed or 1 lb panettone, cut into thick slices

Steps:

  • Preheat the oven to 190 C (gas mark 5, 375 F).
  • Melt the butter in a pan with the golden syrup and muscovado sugar. Let it bubble for 5 to 10 minutes, stirring all the time. Add the apple pieces and cook for a further 5 to 10 minutes more, until softened.
  • In a bowl, mix together the beaten eggs, milk and cream. Cut the brioche, bread or panettone slices into strips (like bread "soldiers") and dip each one in the egg, milk and cream mixture.
  • Arrange half of them in a 1.2 litre (2 pint) buttered ovenproof dish, then pour over half the apple mixture.

This Pumpkin Bread Pudding with Apple Cider Butter Sauce will be right at home on your kitchen table on a crisp, fall day ... and can be served either as a dessert or a brunch dish. You get to decide if you'd like to serve it warm or cold ... many have preferences on this usually based on how it was served to them growing up. NOTE: The recipe calls for 3 whole eggs and 2 yolks. Use the amount called for if you like bread pudding pretty "custardy." If you like it a little firmer and dryer, use 1 less whole egg.

3/4 cup canned pumpkin puree
1/2 cup whole milk
1 cup heavy cream
3 whole eggs
2 egg yolks
1/2 cup brown sugar

Heat - stirring continuously - until sauce is smooth and the sugar is completely dissolved. Once smooth, additional confectioner's sugar or apple cider can be added, as needed, if your sauce is too thin or thick for your preference.
  • While bread pudding is still warm (about 15 minutes after removing from oven), drizzle half of the sauce over the top. Reserve the remaining sauce for serving.
  • NOTE: I've found that the leftovers are best if used up by the following day. After that, the bread pudding can get quite soggy. I have reheated individual pieces on a foil-lined baking sheet in a 350 degree oven for about 10 - 15 minutes. This will crisp the pieces up a bit. Also, if you have sauce leftover, it can be stored in the fridge. It will harden, but can be reheated until it returns to a pourable consistency.

1 cup apple butter
6 croissants, split
CUSTARD:
8 large eggs
3 cups 2% milk
1-1/2 cups sugar

1/2 cup all-purpose flour
1/2 cup packed brown sugar
1/4 teaspoon salt
1/4 cup cold butter

Steps:

  • Place raisins in a small bowl. Cover with boiling water; let stand for 5 minutes. Drain and set aside., Combine apple butter and raisins. Spread over croissant bottoms; replace tops. Cut each croissant into 3 pieces; place in a greased 13x9-in. baking dish., In a large bowl, combine the eggs, milk, sugar, vanilla and salt. 3 red dessert apples
juice 1/2 lemon
4 tbsp golden caster sugar
397g can caramel (we used Carnation)
6 brioche finger rolls, sliced into rounds
3 eggs
400ml full-fat milk
200ml double cream
1 tsp vanilla extract
ice cream , to serve (optional)

Steps:

  • Core the apples, then slice into rings about as thick as a 50p piece. Toss through the lemon juice and 2 tbsp sugar. Spread about 2 /3 of the caramel over the base of a large baking dish (ours was 20 x 30cm).
  • Layer the brioche and apple rings in the dish in overlapping lines. Dot spoonfuls of the leftover caramel here and there, leaving bits of apple poking out.In a jug, whisk the eggs, milk, cream, vanilla extract and 1 tbsp sugar. Pour the mixture over the brioche and apples, making sure it's all well covered, then wrap in cling film. Set aside for at least 30 mins, or overnight, in the fridge.
  • Heat oven to 170C/150C fan/gas 3. Uncover the pudding and scatter with the remaining 1 tbsp sugar. Bake for 45-50 mins until the top is golden and the custard has set. The caramel should be bubbling around the edges and the pudding puffed up. Serve with vanilla ice cream, if you like.

  • Make banana bread first by preheating oven to 350 degrees and beating butter and sugar together til fluffy. Add bananas and vanilla to butter and beat together til blended fully. In seperate bowl, mix flour, soda and cinnamon. Sift flour mix into banana mix and beat on low til blended. Use spatula to scrape bottom of bowl and mix ingredients fully. Pour into greased 9x5 loaf pan and bake for 50-60 mins. Let loaf cool for about 30 mins. Once cooled, tear banana bread into small pieces and put in large bowl. Mix eggs, cream, and vanilla in seperate bowl, then pour over bread pieces. Cover and let soak for 10 mins. Pour bread mixture into a greased 8x8 pan and cook at 350 degrees for 45-55 mins. When bread pudding done, make apple butter cream sauce by bringing cream and sugar to gentle boil in small saucepan, reduce heat to a simmer. Mix baking soda and milk til no clumping, then whisk into simmering cream until thickened. Remove from heat and stir in apple butter. Once sauce has thickened, pour over bread pudding.
