1 1/2 tablespoons vegetable oil
1/4 teaspoon salt

2 1/4 cups chopped pink lady apples or 2 1/4 cups other sweet apples
1 (12 ounce) package broccoli coleslaw mix
1 (3 ounce) package dried tart cherries
2 tablespoons unsalted sunflower seeds

Steps:

  • Vinaigrette: combine first 5 ingredients in a small bowl, stirring well with a whisk.
  • Slaw: combine apple, broccoli slaw and dried cherries; drizzle with vinaigrette, toss well to combine.
  • Sprinkle with sunflower seeds; chill up to 3 hours.

If not, you will have to make very thin matchsticks of broccoli stems, about 2-3 inches long. Don't use the crowns at all. You will need to add in 5% shredded carrot and 5% shredded red cabbage to the broccoli matchsticks. Then continue with the recipe. I just noticed that the review on this recipe exactly mirrors my review of her chicken divan recipe 6 months ago. Sad.

4 tablespoons mayonnaise
1 tablespoon apple cider vinegar

3 broccoli stalks, peeled and julienned (about 1 1/2 cups)

1 carrot, peeled and julienned
1/2 tart apple, peeled, cored, and julienned
2 tablespoons chopped fresh parsley

Steps:

  • Preheat oven to 400 degrees.
  • Cut 4 pieces of parchment paper to 12 by 16 inches and arrange one fish fillet in the center of each. Season with salt and pepper and top with lemon slices and shallot. Drizzle with olive oil. To fold parchment, join long sides together and make a few 1/4-inch folds to seal. Fold ends like you're wrapping a gift and tuck underneath.
