COUNTRY-STYLE PORK RIBS WITH BOURBON AND COKE BBQ SAUCE

Country-Style Pork Ribs with Bourbon and Coke BBQ Sauce image

Country-style ribs are not actually ribs. This cut of meat comes from the shoulder of the pig, where it is sliced in half under the blade bone and then cut into long strips to resemble ribs. As a result, much like other tough cuts of meat, country-style ribs benefit from any type of low and slow cooking. Tender, tangy, and accented with just a hint of bourbon, these ribs are a messy, saucy affair. Bone-in country-style ribs are recommended for this recipe since it's the bones that are packed with the most flavor (you can use boneless ribs, but they may require less cooking time).

Yield 6-8 servings

Number Of Ingredients 15

4 to 5 pounds bone-in pork country-style ribs
Kosher salt and freshly ground black pepper
1 tablespoon vegetable oil
1 1/2 cups ketchup
1/2 cup cola (not diet)
3 tablespoons tomato paste
2 cloves garlic, minced
2 tablespoons brown sugar
2 tablespoons American spicy ketchup-based sauce (such as Heinz brand chili sauce) or homemade chili sauce
2 tablespoons good-quality bourbon
2 tablespoons cider vinegar
1 tablespoon sorghum syrup or light molasses
1 teaspoon Worcestershire sauce
1 teaspoon chili powder
1/4 teaspoon cayenne pepper

Steps:

  • Trim any excess fat from the ribs and cut into approximately 5-inch-long pieces. Lightly season the ribs with salt and pepper.
  • Heat a large sauté pan on the stovetop over medium-high heat. Add the oil, then the ribs, and brown well on all sides. (To avoid overcrowding the pan, you may have to do this in batches.)
  • While the ribs are searing, spray the inside of the slow cooker with cooking spray. Add the ketchup, cola, tomato paste, garlic, brown sugar, chili sauce, bourbon, cider vinegar, sorghum syrup, Worcestershire sauce, chili powder, and cayenne. Stir well. Add the ribs to the slow cooker, layering the larger, fattier ribs on the bottom. Make sure all the ribs are covered in sauce. Cover and cook on low for at least 8 hours and up to 9 hours, until the meat is fall-off-the-bone tender.
  • Transfer the ribs to a platter and keep warm. Pour the leftover sauce into a small saucepan and cook over medium heat for 10 to 15 minutes, until it is reduced and slightly thickened. Skim off any visible fat, season with salt and pepper, and serve the sauce over the ribs.

Country-style pork ribs are the best cut for slow cooking because they are meaty, tender and flavorful. These ribs are cut from the pork shoulder, so they have more meat and less bone than other cuts, making them perfect for slow cooking.
2. Brown the ribs before slow cooking
To give your apple bourbon country-style pork ribs a delicious crust and add a depth of flavor, it is recommended to brown the ribs before slow cooking them. This is an extra step that may seem time-consuming, but it will be worth your effort in the end. To brown the ribs, heat a skillet with some oil and season the ribs with salt, pepper. Brown them for a few minutes on each side, then transfer them to the slow cooker.
3. Use apple juice or apple cider for flavor
One of the main ingredients in apple bourbon country-style pork ribs is apple juice or apple cider. It adds a sweet flavor to the ribs, which complements the bourbon perfectly. It is best to use unsweetened apple juice or cider as the recipe already includes brown sugar.
4. Add the right amount of bourbon
When making apple bourbon country-style pork ribs using slow cooker recipes, it is crucial to add the right amount of bourbon in the recipe. Too much bourbon can overpower the flavor of the pork, while too little can miss the desired taste. It is recommended to use 1/3 to 1/2 cup of bourbon.
5. Season the recipe correctly
Seasonings are an essential part of apple bourbon country-style pork ribs slow cooker recipes. The recipe requires a mix of spices and herbs such as garlic, onion, salt and pepper, paprika, cayenne pepper, and dried thyme. 6. Trim off the excess fat on the ribs
Too much fat on the ribs will make the dish unhealthy, and it may also retain a greasy texture. To make the ribs as healthy as possible, trim off excess fat using a knife or kitchen shears.
7. Cook the ribs on low heat setting

If you have too much meat for the size of the crockpot, it may not cook evenly, and this could lead to inconsistent results. On the other hand, If you have too much space in the crockpot, it may not heat evenly and could lead to uneven cooking.
9. Use a meat thermometer to check doneness
One of the most crucial factors of cooking apple bourbon country-style pork ribs is knowing when the meat is cooked to perfection. Instead of checking the timing, which may vary based on the size, it is best to use a meat thermometer. Insert the thermometer into the thickest section of the ribs, and if the temperature reaches 165°F, it means the ribs are cooked and ready to be served.
10. Let the cooked ribs rest for a few minutes before serving
Once the ribs are cooked, it is crucial to let them rest for a few minutes before serving. Resting the meat enhances its flavor, texture and helps to redistribute the juices evenly throughout the ribs.
